Winemaking

Shiraz grapes from selected vineyards were fermented in temperature controlled, stainless steel tanks for around 5-7 days, to maximise colour and flavour extraction. After primary fermentation, the wines were membrane pressed and underwent malolactic fermentation in French oak, before blending filtering and bottling. Vintage The vintage 2019 growing season was one of the driest on record. Controlled winter watering and careful monitoring of vine stress levels was key to a successful crop. Temperatures tended to be cooler in Spring and early summer which caused a slower start to the season, as temperatures began to rise in late Jan early Feb ripening moved along a little quicker and the team were grateful the vines had sufficient canopies to protect the fruit through to maturity. The reds from this vintage show excellent depth of colour and fabulous tannins, whilst the whites display a rich array of aromatics and bright fresh fruit flavours.The Fibonacci sequence reflects the growth spirals found in nature, just like the new tendrils on a grape vine that unravel each spring. The notion being ‘what you start with determines the end result’ which is of course the foundation of all great wines. These mild and dry conditions, whilst shaping exceptional fruit, saw a slight reduction in volume crushed than in previous years. January and February were warm and dry, whilst March and early April had average temperatures, without extremes, which was a perfect finish to vintage. Fruit selected from the Adelaide Hills region was harvested at night and gently pressed in order to minimise phenolic extraction in the juice. The juice was then cold settled and cool fermented in stainless steel with yeast strains selected to enhance the natural varietal characters. A portion of the wine was fermented in oak to add spice and complexity, this was further matured in contact with the yeast lees to build structure and interest. VINTAGE The Adelaide Hills region managed to escape the influence of extreme heat which was seen across the rest of Australia, the yield produced in 2019 was about 50% of what was produced in the previous season. The region only experienced two short heatwaves of 4 days with cooler conditions between heat spikes, which allowed vines to fully recover; this, combined with a mild Autumn, resulted in good flavour and colour development, though with a small crop. Premium parcels of Cabernet Sauvignon fruit were fermented in rotary and static fermenters. Following fermentation on skins for seven to ten days they were gently pressed after which the wine was matured on French oak for 6 months before blending and bottling. A proportion of Merlot was included to add flesh and depth. The resulting wine has excellent depth of colour, richness and complexity VINTAGE The earlier than expected 2016 harvest delivered fruit with excellent varietal characters resulting in wine with an ideal balance of sugar, acid, colour and flavour.The mild weather conditions during spring were followed by warmer than usual February temperatures. The region only experienced two short heatwaves of 4 days with cooler conditions between heat spikes, which allowed vines to fully recover; this, combined with a mild Autumn, resulted in good flavour and colour development, though with a small crop. Parcels of Cabernet Sauvignon and Merlot grapes from selected vineyards were harvest at optimum maturity to maximise varietal fruit flavours and supple tannins.
