The fruit was harvested at night when the temperature was coolest to retain maximum fruit flavour. The juice was cool fermented in stainless steel with aomatic yeast strains with a small portion fermented on skins to add colour, intensity and zest. The wine was then aged on yeast lees for three months to add softness and retian freshness. The wine was bottles early to retian fresh fruit characters.A mild spring followed by a classic warmm and dry summer lead to outstanding quality across all varieties in Vintage 2018. These mild and dry condition, whilst shaping exceptional fruit, saw a slight reduction in volume crushed than in orevious years. Our vineyard and winemaking teams have worked passionately throught Vintage 2018 to craft amazing wines with great colour, and flavour intensity that will enrich lifes everyday moments. (268157-4)

In the not so distant past inland Australia once shimmered in the scorching midday sun. Vast tracts of land were covered with a sea of grey-green foliage from the many types of saltbush plants. Saltbush derives its name from the salt that the plant retains in its leaves. Much of that land is now cleared for agricultural and horticulture including vineyards.The beauty of saltbush is that the plant is incredibly salt tolerant. They live for years and survive through all seasons throughout the year and it doesn't matter whether you get 50 points of rain in January or July, they will thrive.Herds of wild herbivores would move into a stand of saltbush and defoliate the plants as they consumed the leaves, then they moved on. In more recent times saltbush sustained the herds of introduced cattle and sheep in particular. The sheep has become an Australian icon and indeed the country, for a time, rode on the sheep’s back. Images spring to mind of Australia’s historic pastoral characters such as “Saltbush Bill” come into mind and the legend of Sir Sydney Kidman. (267920-9)

Viticulture

Sourced from our vineyard further south on The Peninsula, these vines were spur pruned and shoot thinned to24 shoots per vine on VSP. A reasonable canopy was maintained through summer as we intended these grapes more ‘hang-time’ for a more fruity, luscious Gris style . The vines were grown 'dry' to increase root activity & search for deeper tannins. Vinification The fruit was top-loaded to the press without crushing or destemming to avoid extraction of harsh phenolics orflavours and then pressed gently to tank. It underwent a 24 hour settling before being racked for fermentation ina combination of tank and older French oak barriques. Natural indigenous yeasts were allowed to commencethe ferment in the barrels, while selected yeasts were used for the tank fermentation. Some of the ferments'stalled', which we decided to allow leaving some residual sugars. (268619-1)

Viticulture

- Trained onto two wire vertical trellises with both wires mechanically pruned back to 2 buds. The canopy is managed through reduced water to restrict its vigour and therefore decrease berry size increasing flavour intensity Vinification - After night harvesting (in order to retain freshness and varietal flavour) the grapes were crushed into airbag presses and gently pressed in top two fractions, free run and –pressings. Both fractions are fined to minimise any phenolic bitterness before being clarified. The free run is then inoculated with an aromatic yeast strain designed to enhance the varietal characters of the fruit. Controlled fermentation occurred over 10-12 days, commencing at 16°C and increasing toward the end of ferment to approximately 20°C. Post ferment the wine is stirred on lees to create texture and mid palate mouth feel. Once the palate of the wine is balanced between fresh acidity and texture the wine is clarified and stabilised. A percentage of Colombard is then blended in before the wine is filtered and bottled. (265704-5)

- Fruit selected from the Adelaide Hills region was night harvested to retain maximum fruit and gently pressed to avoid the transfer of any harsh tannins. A portion of the wine was fermented in oak to add spice and complexity; this was further matured in contact with the yeast lees to build structure and layers of interest. Vintage - The higher than average rainfall during the winter months and a cooler spring delayed budburst and resulting in vintage being 3-4 weeks late. Conditions during fruit ripening were quite dry and favoured full development of both and colour. (264965-8)

Our cultural operations in the vineyard and practices in the winery endeavour to articulate these unique characteristics diligently, respectfully and without artifice.VintageFollowing a wet Winter, budburst commenced relatively late in mid-September. The Winter rainfall set up the vineyards well for Spring with overall temperatures during Spring slightly higher than average accompanied by below average rainfall. Flowering commenced mid late November with ideal weather conditions, resulting in one of the best fruit sets in many years. The mild to warm conditions continued throughout Summer andveraison commenced in mid-January. Harvest delivered fruitful crop loads matched with very stable weather conditions, ensuring vine performance and good ripeness. Picking commenced late February and the viticultural team worked steadily until the beginning of April delivering outstanding fruit. The white winesdisplay excellent acidity, depth and intense fruit flavours. The red wines look poised and elegant with powerful aromatics and a great balance between tannin and acid.
