2017 was a later and cooler year in the Yarra Valley. January and February brought perfect ripening conditions, with temperatures in the mid to high 20’s, and cool nights during allowing for retention of acid and fine flavor development. Yields were 7 tonnes per hectare. Site selection The fruit was picked from various blocks with vines aged between 21 and 33 years old, grown on high north facing slopes to maximize sunshine hours. Northerly winds from Long Gully provide good air flow and favourable micro-climates across the Estate.

Chile's unique geographical and climatic conditions offer it many advantages for wine production.The country is very long and thin - some 4500 km, yet it is only on average 150km wide, with the land sandwiched between the high, snow-capped Ands Mountain range and cold Pacific Ocean. The water temperature of Pacific is kept significantly colder by the Humbolt Current that flows up the Chilean coastline from Antarctica.The climate and soil conditions are almost perfect for grape growing;the influence and close proximity of cold air from the Andes and cool sea breezes cannot be overemphasised. Rainfall is restricted predominantly to the winter months, and snow-melt from the Andes provides unlimited pure water for the vineyard irrigation. These benign conditions and absence of phylloxera prevent many vine diseases.Because of the temperate climate and sharp day-night temperature variations, the ripening season may be several weeks longer than normal, allowing grapes to ripen more evenly and with greater fruit concentration and skin pigmentation - often resulting in higher level of antioxidants.Now Chile has become one of the world's prime resources of varietal wine. Winemaking

The fruit was harvested in the cool of night to retain maximum fruit flavour. The juice was cool fermented on skins then pressed into stainless steel to optimise colour and flavour. The wine was further matured in a light level of French oak to add roundness and retain freshness. Vintage The vintage 2019 growing season was one of the driest on record. Controlled winter watering and careful monitoring of vine stress levels was key to a successful crop. Temperatures tended to be cooler in spring and early summer which caused a slower start to the season, as temperatures began to rise in late Jan early Feb ripening moved along a little quicker and the team were grateful the vines had sufficient canopies to protect the fruit through to maturity. The reds from this vintage show excellent depth of colour and fabulous tannins, whilst the whites display a rich array of aromatics and bright fresh fruit flavours. (270811-4)

Riposte The Sabre Pinot Noir 2016 (12 x 750mL), Adelaide Hills, SA.

The grapes for The Sabre are from some of the oldest and best sited Pinot Noir vineyards in the high cool climate Lenswood and Piccadilly sub-regions of the Adelaide Hills. We work with our growers to produce moderate yields of fruit, well exposed to sunlight to maximise colour and ripe flavours.2016 was another early vintage due to an unusually warm spring, although the ripening period was relatively cool. Picking dates were from 27th February to 10th March.This was a shorter picking window than 2015 although starting two days later. As usual growers were requested to leaf pluck the morning (eastern side) of the Pinot vines soon after fruit set to give the optimum fruit exposure and aid the development of colour, tannins and ripe flavours. Again the newer clones (777, 114 and 115) ripened first, reinforcing our belief that they are best suited to the coolest sites.

Hubert de Castella's passion for the Yarra Valley saw him establish St Huberts in 1862.By the late 1800s it had grown to be the largest estate in the area. The wines enjoyed immediate and on-going success at wine shows both domestically and abroad. The onset of the Great Depression, the increasing popularity of fortified wine and the emerging profitability of dairy farming saw the vineyard revert to grazing in the 1920s. It wasn't until the 1960s that the Yarra Valley again rose to prominence as a wine region and St Huberts was once again one of the pioneers. After the success and cult following achieved by our St Huberts Stag Yarra Valley Pinot, we decided more people need to drink Pinot Noir, and we needed to venture out of the Yarra! 2017 was the first vintage of our Stag Victorian Pinot Noir. Fruit for the 2018 was harvested from selected sites, mainly around Yea, with some Mornington Peninsular and others in the mix. The wine underwent indigenous malolactic fermentation. The maturation period was 10 months in French oak barriques (8% new) and large format foudre. The wine was bottled without fining and with minimal filtration.

Situated in the picturesque Yarra Valley east of Melbourne, the steep close planted vineyards of Coldstream Hills have become a signature of the region. Sourced from low yielding vineyards in the Lower and Upper Yarra Valley, all fruit is selectively picked prior to its delivery into the winery. Save our Souls Pinot Noir 2019 (12 x 750mL), Yarra Valley, VIC.

Four parcels of fruit from came from 3 vineyards across the top of the peninsula. Clones MV6, 114 and G5 were harvested. Two the 3 sites are side by side in Tuerong, and provided 70% of the fruit, with the 3rd being on the border of Tuerong and Hastings. This Bittern vineyard is reasonably flat whilst the Tuerong sites are on a gentle hillside, both are roughly the same latitude and sit on sandy/clay loam. All fruit was hand harvested in the second and third week of March.All parcels were fully destemmed into open fermenters and chilled for approximately 48 hours. The must was given some more light cap work in the form of pumping over whilst natural fermentation kicked off. The cap was monitored daily to determine any pumping over. This was to avoid over extraction yet still maintain good CO2 and moisture level. After 4 to 6 weeks maceration the must was drained, pressed and the filled to neutral oak for 12 months.All barrels were racked and blended and a small addition of 40ppm SO2 was added, prior to bottling. This was the only Sulphur added during the entire process.

Louis Max, of Russian origin, founded his wine house in Nuits-Saint-Georges in 1859. During the first half of the 20th century, the house of Louis Max enjoyed widespread acclaim and recognition for outstanding quality in the range of wines produced. The house has always retained a family structure and today, Laurent Max, great-grandson of founder Louis Max, together with a motivated team, has doted itself with all the means of success. The house owns or operates over eighty-seven hectare, or two hundred and fifty acres of Burgundy vineyard. The eccentric Laurent Max has invested heavily in the vinification facilities in Nuits-Saint-Georges, and, more importantly has installed the young and passionate Brigitte Putzu as head winemaker at Louis Max. Brigitte has spent over sixteen years at Louis Max, formerly as assistant winemaker, and has a long relationship with the 87 hectares of vineyards and clos that Louis Max controls. Brigitte’s wines illustrate her meticulousness in their ripeness, purity and balance. Since the 1996 harvest, Brigitte has had complete control of vineyard management and vinification for Louis Max. Winemakers Notes

The 2016 Nautilus Pinot Noir is dark ruby in colour. The nose reveals lifted floral aromas, ripe wild blackberries, cherries and spices. The palate is medium bodied with good structure. Refined and balanced, this elegant wine shows good intensity and a lengthy finish. Vintage Prior to Christmas all the talk was about drought. Fruit set was good but would we have enough water to get through the season and what effect would this have on bunch size. Certainly the river was low. But of course Mother Nature intervened and a couple of timely rains in January during the critical phase when the berries size up meant that a crop that was looking average at best ended up above average in size. A key feature this year was lower acidity (by normal Marlborough standards), bright fruit flavours and a nice mineral texture across all the wines. Winemaking To make this wine, fruit from Pinot Noir clones 114, 115, 5, 667, 777 and Abel was hand harvested and de-stemmed without crushing to allow a portion of whole berries in the ferment. A small amount of whole bunch fruit was also included in some ferments (average 18% whole bunch).The grapes were fermented with indigenous yeast in open top fermenters after a 6-8 day ‘cold soak’. Careful cap management, using our pneumatic punch down device, has resulted in extraction of only the soft ripe tannins. After pressing the wine was racked directly to a mixture of new and older French oak Barriques, where it remained undisturbed until filtration and bottling in March 2017.
