The King Valley is one of Australia’s most exciting, emerging wine regions. It is located in North East Victoria – approximately three hours North of Melbourne and seven hours South of Sydney. Home to the most picturesque and unspoilt valley in Australia, King Valley benefits from a cool climate with extremely varied terrain, that ranges from snow-capped Alps to sun baked fields. The Season The growing season was a return to gentle, mild and cool conditions. Cool nights and mild days extended the growing season while retaining natural acidity. The fruit quantity was balanced and fruit quality was exceptional, producing vibrant aromas and intense flavours in the white varieties. Overall, a classic vintage producing excellent white and sparkling wines. Winemaking The fruit for the 2017 Pinot Grigio was picked on the 7th March at 10.9° baumé. The grapes were picked in the early morning, pressed off skins into tank for fermentation with some solids to provide complexity and texture while still retaining fresh flavours. Once in tank, fermentation with solids content at a 16.0°C ferment temperature was completed over 3 weeks. This allowed retainment of fresh aromas and flavours while providing creamy texture and mouthfeel. The wine was left on yeast lees with weekly stirring to protect the freshness of the wine and adding further complexity. The wine was bottled under screw cap. (273549-1)

In the not so distant past inland Australia once shimmered in the scorching midday sun. Vast tracts of land were covered with a sea of grey-green foliage from the many types of saltbush plants. Saltbush derives its name from the salt that the plant retains in its leaves. Much of that land is now cleared for agricultural and horticulture including vineyards.The beauty of saltbush is that the plant is incredibly salt tolerant. They live for years and survive through all seasons throughout the year and it doesn't matter whether you get 50 points of rain in January or July, they will thrive.Herds of wild herbivores would move into a stand of saltbush and defoliate the plants as they consumed the leaves, then they moved on. In more recent times saltbush sustained the herds of introduced cattle and sheep in particular. The sheep has become an Australian icon and indeed the country, for a time, rode on the sheep’s back. Images spring to mind of Australia’s historic pastoral characters such as “Saltbush Bill” come into mind and the legend of Sir Sydney Kidman. (273181-14)

WINEMAKING

Fruit selected from the Adelaide Hills region was harvested at night and gently pressed in order to minimise phenolic extraction in the juice. The juice was then cold settled and cool fermented in stainless steel with yeast strains selected to enhance the natural varietal characters. A portion of the wine was fermented in oak to add spice and complexity, this was further matured in contact with the yeast lees to build structure and interest. VINTAGE The Adelaide Hills region managed to escape the influence of extreme heat which was seen across the rest of Australia, the yield produced in 2019 was about 50% of what was produced in the previous season. The region only experienced two short heatwaves of 4 days with cooler conditions between heat spikes, which allowed vines to fully recover; this, combined with a mild Autumn, resulted in good flavour and colour development, though with a small crop. Viticulture

- Trained onto two wire vertical trellises with both wires mechanically pruned back to 2 buds. The canopy is managed through reduced water to restrict its vigour and therefore decrease berry size increasing flavour intensity Vinification - After night harvesting (in order to retain freshness and varietal flavour) the grapes were crushed into airbag presses and gently pressed in top two fractions, free run and –pressings. Both fractions are fined to minimise any phenolic bitterness before being clarified. The free run is then inoculated with an aromatic yeast strain designed to enhance the varietal characters of the fruit. Controlled fermentation occurred over 10-12 days, commencing at 16°C and increasing toward the end of ferment to approximately 20°C. Post ferment the wine is stirred on lees to create texture and mid palate mouth feel. Once the palate of the wine is balanced between fresh acidity and texture the wine is clarified and stabilised. A percentage of Colombard is then blended in before the wine is filtered and bottled. (273181-4)

Viticulture

Sourced from our vineyard further south on The Peninsula, these vines were spur pruned and shoot thinned to24 shoots per vine on VSP. A reasonable canopy was maintained through summer as we intended these grapes more ‘hang-time’ for a more fruity, luscious Gris style . The vines were grown 'dry' to increase root activity & search for deeper tannins. Vinification The fruit was top-loaded to the press without crushing or destemming to avoid extraction of harsh phenolics orflavours and then pressed gently to tank. It underwent a 24 hour settling before being racked for fermentation ina combination of tank and older French oak barriques. Natural indigenous yeasts were allowed to commencethe ferment in the barrels, while selected yeasts were used for the tank fermentation. Some of the ferments'stalled', which we decided to allow leaving some residual sugars. (273506-1)

MATURATION

Fermentation in stainless steel was preceded by 12 hrs of skin contact and followed by 4 weeks of stirring on yeast lees. WINEMAKERS NOTES The Silex vineyard is located at Kongorong, some 80 kilometres South of Coonawarra in the Mount Gambier geographical region. The district has been famous for quite some time for its cheddar cheese. It also has a small and very specialized grapegrowing community. Its proximity to the Southern Ocean and the cold afternoon/evening sea breezes that blow most days during the growing season make it one of the coolest places in Australia to grow grapes. This coolness results in a slow extended ripening period delivering high natural acidity and delicate fruit characters. Silex is a term used in Europe to describe flint or chert rock. The weathered limestone at this site has an extremely hard flint-like cap and only a shallow layer of red clay/loam soil for the vine roots to exploit. This and the weather make viticulture a real challenge.The 2018 vintage was very early but harvesting was delay just long enough to lower extremely high acid levels so that a balanced wine was achieved without a large amount of residual sugar being left in the wine. Typical cool climate delicate fruit characters were still captured.Time in the bottle will see the yeastiness fade more into the background and the pear/nashi characters will become more obvious. Toasty bottle age will add complexity if you can resist the temptation for 3 to 5 years in the cellar. (270334-6)

Winemaking

The fruit was harvested at night when the temperature was coolest to retain maximum fruit flavour. The juice was cool fermented in stainless steel with aromatic yeast strains with a small portion of fermented on skins to add intensity and zest. The wine was then aged on yeast lees for two months to add roundness and retain freshness. The wine was bottled early to retain fresh fruit characters Vintage The Vintage 2019 growing season was one of the driest on record. Controlled winter watering and careful monitoring of vine stress levels was key to a successful crop. Temperatures tended to be cooler in Spring and early Summer which caused a slower start to the season, as temperatures began to rise in late Jan early Feb ripening moved along a little quicker and the team were grateful the vines had sufficient canopies to protect the fruit through to maturity. The reds from this vintage show excellent depth of colour and fabulous tannins, whilst the whites display a rich array of aromatics and bright fresh fruit flavours.The Fibonacci sequence reflects the growth spirals found in nature, just like the new tendrils on a grape vine that unravel each spring. The notion being ‘what you start with determines the end result’ which is of course the foundation of all great wines. The right combination of soil and climate with grow quality grapes, the best grapes will then give you a fabulous wine. (274391-4)
