With almost ideal weather conditions for whites exceptional fruit has been produced showing intense varietal flavours that are typical Margaret River. Aromatic varieties were outstanding with fresh citrus, lemon blossom and stone fruit on the nose and palate balanced off by crisp acidity. The temperature cooled off toward the end of February providing ideal weather conditions for the red varietals to fully ripen their flavour profiles and tannins. Once again there was a huge amount of Marri blossom leading into vintage therefore Silvereye bird damage was minimal. Flavour intensity was further benefited by the fact that cropping levels were reduced by around 30% across the region due to storms in early spring.

Vintage

Following several years of early vintages and the exceptionally late 2017, it was very nice to have a 'normal' season again. Excellent budburst across all varieties was followed by a beautifully warm November, which provided ideal conditions for flowering and very good fruit set. Summer proved to be quite mild with just a few hot days, particularly in December, which was also one of the wettest recorded. Cool, dry conditions in the lead-up to harvest enabled fruit to ripen slowly, accumulating intense varietal flavours whilst retaining natural acidity and our whites were all harvested in excellent condition. The warmer March weather saw the reds ripen beautifully and they were harvested under clear, sunny skies through March and early April with ripe, concentrated flavours and excellent fine-grained powdery tannins. Vineyard The two key Shiraz vineyards which contributed to this wine are planted to different clones. Ullingers Block 8 is planted to 12SBVRC clone and gives earthy, savoury notes to the wine while Weightmans Block 3, planted to the PT15 clone, offers a brighter, fresh berry component. A small percentage of Merlot is also utilised for its fresh berry and dried herb characters as well as Sauvignon Blanc, which provides fresh aromatic lift. All these Estate vineyards are planted on the classic gravelly, stony soils for which the region is famous - producing balanced vines with moderate yields. (270471-3)

VINTAGE: What a long, and strange vintage 2017 was. Every vintage is different; lessons learned from the previous year don’t always help the following year.2017 vintage started late, two to three weeks later than the preceding couple of years. The reason for this was the mild, cool spring weather experienced all across the southern part of the state. During the middle and latter part of March the South-West region including Margaret River experienced a very unusual amount of rain and very cool weather, ripening over this period was very slow. The first suggestions of worry started to appear in growers eyes. Of recent history Margaret River has experienced very dry conditions in March and early April with the season breaking mid to late April, not a problem with all the grapes picked. But this year the concern was that if the season broke in mid April all the red grapes would be still on the vine. However anyone that lived though the late April and early May in the South-West of Western Australia will testify that never had we had a better, warmer early autumn. It was simply perfect; cool crisp mornings and evenings but beautiful warm and sunny days; not too hot, textbook conditions for great ripening especially for the red varietiesThe Hay Shed Hill Vineyard Series showcase the character of the fruit grown on this classic vineyard site with distinctive and expressive wines. Bouches-du-Rhone

is the IGP title for wines made in the administrative department of the same name on the southern coast of France. Bouches-du-Rhone lies within the Provence wine region, and is also home to the more-famous AOC regions Coteaux Aix-en-Provence and Les Baux de Provence. Because of the AOC’s restrictive laws and fierce loyalty to the traditional grape varieties, many of the IGP wines – which are made from a wider pool of grape varieties – are considered among the department’s best.The boundaries of Bouches-du-Rhone are mostly geographical: the Durance river delimits the north, while the Rhone river (flowing south from the Rhone Valley wine region) makes up a portion of the western border. A swampy wetland area known as the Carmargue lies in the very southwestern corner of the department, on the western side of the river. The Mediterranean makes up the southern border.The combination of climate and geography makes Bouches-du-Rhone well suited to viticulture and grapes have been grown here for thousands of years. While there is an array of different landscapes, from rocky limestone hills to vast plains, soils tend to be poor, free draining, and made up of anything from limestone clay to gravel and sandstone. The first vines in Chateauneuf du Pape were planted by the ancient Romans. Historic ancient Roman ruins are easy to find in the Southern Rhone Valley. In fact, one of the best preserved, ancient amphitheaters built by the Romans in all of Europe is in Orange, not far from Chateauneuf.Chateauneuf du Pape takes its name from the time when the Pope moved to Avignon in 1309. The move was due to issues between the King of France and the Papacy. 8 different Popes served in Avignon as the Papacy remained in Chateauneuf du Pape until 1378.The first Pope to move to Avignon was Pope Clement V, who was an avid wine lover. Pope Clement V also spent time in Bordeaux at what is now called Chateau Pape Clement in Pessac Leognan. Côteaux du Lyonnais is a relatively small appellation created in 1984 for red, white and rosé wines from the hillsides west of Lyon. Though the town lies on the Rhône river, both Lyon and the vines lay beyond the northern boundaries of the official Rhône wine territory.The region borders the southernmost Beaujolais vineyards to the north. But administratively the AOP lies outside any broader region.These wines are of a lighter style than those produced in the Rhône region, and are closer in style to those produced in Beaujolais. The red wines, in fact, are produced from the Gamay grape variety using carbonic maceration. This is the same combination which creates the distinctive wines of Beaujolais.A small amount of white wine is made under the appellation, from Chardonnay and Aligoté. Occasionally some Pinot Blanc is added to the blend. These are traditionally dry, floral styles, some of which are matured in oak barrels for up to a year to produce a slightly more structured, weighty version.Despite its small geographical area, the region is split into three areas; the Mont d'Or to the north, the Arbresle valley in the center, and a southern area around the hills just outside Vienne. The Beaujolais region begins on the northern outskirts of the commune of L'Arbresle.The co-operative Saint-Bel is responsible for the production of about half of all Coteaux du Lyonnais wines, the majority of which are consumed within France and are rarely export. The Rhone Valley is the second largest vineyard in France in terms of the volume of wine production and is also one of the oldest vineyards in France. The Rhodanian vineyard is a world apart. From terraces to steep flanks, it plays with the green hills. However, we can speak of Rhodanian vineyards as the Rhone Valley diversifies along the river. Following the northern coasts that extend from Vienna to Valencia on granite slopes, the main grape varieties are Syrah for red wines and for white wines viognier or roussanne and marsanne. As for the southern coasts stretching from Montélimar to Avignon, the vines take up all the space on rather limestone soils with a multiplicity of grape varieties, the grenache playing the role of the main grape variety for red wines, the clairette and the bourboulenc for white wines. The fruit is hand picked early in the morning to retain freshness, then placed into the cool-room to chill further overnight. The next morning, the whole bunches are tipped into the press. The free run juice is gently pressed off to a stainless steel holding tank and allowed to settle naturally overnight. The slightly cloudy juice is then racked to a mixture of new, second and third use French oak barrels.Fermentation occurs spontaneously and completed via wild fermentation. Semillon’s citrus and floral notes are complemented by the tropical passionfruit aromatics of Sauvignon Blanc. These varieties are picked at reasonably low baume, capturing fine high-note aromas, crisp primary fruit flavours and good acid structure. In 2019, 58% of the batches destined for Classic Dry White were fermented undercool conditions using specially selected yeasts to ensure the varietal characters were accentuated, while 42% were permitted to ferment wild in tank contributing a softer/fuller mouthfeel. This wine was made without the use of oak to preserve pure fruit expression.
