Vinification - After a brief cryomaceration (24 hours at 5°C) on the skins, the must ferments in steel at a controlled temperature of 16°C. In a very small valley in the middle of the DO Monterrei, we produce a unique Godello with a 20% of Treixadura with a powerful and intense aromacy. From vines with an average of 25-30 year-old located in sandy soils, inmediatly after the harvest and the destemmed there is a cold maceration for 8-10 hours in order to extract all the aromatic potential from the skins. The wine is aged 4 months on its lees which finishes his rounding and keep its organoleptic features. As a result we are proud to achieve a clean, fruity, intense and floral white wine which is equilibrated, fresh, untuous and with a long and pleasant aftertaste.Autochthonous from Galicia (NW Spain) Godello is the most aromatic potential grape of the Iberian peninsula. This is the Riesling Zeitgeist. Grandma drank sweet "Riesling" from a box… now real riesling is back! From the pristine Eden Valley, home of Australia's finest Riesling. The goal with this wine is to show off the virtues of classic Eden Valley Riesling to fanatical Riesling lovers and the Riesling uninitiated. It demonstrates our preferred dry and zesty style of Riesling with fruit and acidity in perfect balance. Viticulture - Michael Noack's vineyard is just outside of the township of Springton in the southern Eden Valley. The Riesling vines were planted in 1973 on an ideal east-facing aspect that benefits from the prevailing breeze that helps to keep this vineyard fresh and disease free. The vineyard is planted in low-nutrient well-draining soils largely composed of quartz gravel. This geology in the southern end of the Eden Valley lends itself to the tell-tale Eden Valley Riesling steely minerality and delicate florals. Vineyard GPS coordinates: 34°42'06.5"S 139°05'03.4"E Vinification - Machine harvested for a few hours of intentional skin contact to build phenolic body. Cold fermented in a temperature controlled inox fermenter using a combination of indiginous and selected yeasts to develop and protect delicate aromas. This is our point-of-difference Riesling! In physics, the triple point is the thermodynamic conditions where a substance can exist in its solid, liquid and gaseous phases simultaneously. Our quest is for the oft-elusive triumvirate of Riesling, namely precision, texture and balance. - Three old vine Riesling vineyards feature here with two of them being dry grown. Vine age varies from 22 years to 60+ years. The vineyards are spread from the north (Moculta) to the central (Flaxman Valley) to the south (Springton) of the Eden Valley in order to incorporate all the key geological features of this long sub-region. Being dry grown and effectively organically managed, there is great diversity in terms of both ripeness levels and sun exposure at the time of picking, leading to this wine's tell-tale complexity and wonderful pattern of ageing. Vinification - The main distinction here is the hand-picking combined with a lengthy whole-bunch press cycle (9 hours) wherein gentle skin contact encourages phenolic body. Cold fermented on solids in a temperature controlled inox fermenter using a combination of indiginous and selected yeasts to develop and protect delicate aromas. The ferment is chilled prior to sugar dryness in order to maintain a small (4.4g/L) amount of residual grape sugar. As a stylistic choice, we do not use any fining throughout the winemaking process and only minimum SO2 is added prior to bottling. (255940-7)

Viticulture

- From the revered Fechner bros. vineyard in the Northern Eden Valley (the higher altitude sub-region of the Barossa). The three varieties are harvested progressively triggered by the bloom of florals and colour on the West-facing Gewürztraminer, which usually coincides with flavour ripeness on the East-facing Riesling and Kerner. The Fechner bros. have the only Kerner vineyard in Australia after they encountered the Riesling cross-breed during a visit to Germany in 2003. The vineyard is adjacent to a Limestone quarry. These vines are all growing through a layer of clay into Limestone bedrock, which underpins the aromatic impact of the germanic white varieties. A prevailing breeze here keeps the vineyard dry, which allows for a light-handed approach to weed/disease control. Vineyard GPS: 34° 28' 39" S 139° 4' 11" E Vinification - The three varieties are machine harvested to allow for modest skin contact, while the Gewürztraminer sees another 20-24 hours of skin contact after it is crushed and before pressing. Co-fermentation occurs in a temperature controlled inox fermenter using a combination of indiginous and selected yeasts to develop and protect delicate aromas. As a stylistic choice, we do not use any fining throughout the winemaking process and only minimal SO2 is added prior to bottling. (255940-6)

The King Valley is one of Australia’s most exciting, emerging wine regions. It is located in North East Victoria – approximately three hours North of Melbourne and seven hours South of Sydney. Home to the most picturesque and unspoilt valley in Australia, King Valley benefits from a cool climate with extremely varied terrain, that ranges from snow-capped Alps to sun baked fields.The growing season was a return to gentle, mild and cool conditions. Cool nights and mild days extended the growing season while retaining natural acidity. The fruit quantity was balanced and fruit quality was exceptional,producing vibrant aromas and intense flavours in the white varieties. Overall, a classic vintage producing excellent white and sparkling wines.The fruit for the 2017 Valley Blend was picked between 9th March and the 30th March at low baumé ripeness. The grapes were picked in the early morning, pressed off skins into tank for fermentation with high solids to provide complexity and texture while still retaining fresh flavours. Once in tank, fermentation with high solids content at a 14.0°C ferment temperature was completed slowly over 4 weeks. This allowed retainment of fresh aromas and flavours while providing creamy texture and mouthfeel. The wine was left on yeast lees with weekly stirring to protect the freshness of the wine and adding further layers of textural complexity. The wine was bottled under screw cap. (257737-1)

Located in the Broke Fordwich region in the picturesque Hunter Valley, surrounded by the Brokenback Ranges and iconic Yellow Rock is Parsons Creek Farm and home of Bilgavia Estate Wines. A family run vineyard, thoroughbred stud and working farm, Bilagavia is comprised of 19 hectares of Shiraz, Verdelho, Chardonnay and Semillon. In 2012 plantings of Tempranillo, Fiano, Merlot and Pinot Noir were also added to the vineyard. The name Bilgavia is taken from the original property on which vineyard plantings can be dated back to 1820. In subsequent years, two additional adjoining properties were merged to create the stunning Parsons Creek Farm, with Bilgavia being kept as the name of the wines in honour of its heritage. The family’s vision for the wines was to always make them true to style and place, but most of all approachable and uncomplicated. Wines they like to sit down with on a Sunday lunch around the table at the farm, to be enjoyed and not over thought. Wines to match with food without fear of being lost or talking over the flavours. Pale straw colour, citrus peel, lime zest, nettle, floral spice and lemongrass aromas offer a fresh uplifted clean fruit driven style Chardonnay. Sweet brioche and subtle vanilla extract from French Oak Barriques add complexity and nutty layers. On the palate, the wine is very structured and linear with fine acidity and cool climate elegance. White peach and mandarin flavours burst onto the palate. Lees stirring and partial secondary fermentation adds silky texture and creamy mouth feel. The palate is long and finishes with dry mineral edges making this wine perfect with most foods. Further bottle maturation for 3-5 years will encourage complexity and softness. (254453-1)

This Chardonnay was grown on mature vines with an average of 40 years This Chardonnay was grown on mature vines with an average of 40 years on limestone coast soils. The result is a wine with lively fruit intensity and good acid balance. The 2017 vintage was wetter than usual and picked in three distinctly different parcels of ripeness. Layered complexity of green apple/ citrus, peach and tropical diversity are in a refreshing and vibrant style. Winemaking The richness of the fruit in its natural state meant that minimal intervention was required in the winery. Separate parcels were left on skins for some time in order to develop the keen tannin structure, then fermented in stainless steel with some French oak influence. (257266-1)
