This wine is produced from a unique vineyard in Main Ridge, the prime of the Mornington Peninsula wine growing area. Grown at our Roberts Road Vineyard, the Pinot Gris grape produces intense aromatics of golden delicious apple, meyer lemon with a powerful mineral palate of citrus sorbet and a long clean acid finish. The grapes are carefully hand-picked, quickly transferred to the winery for whole-bunch pressing to tank and neutral French oak barrique. A warm ferment with indigenous yeast is followed by 6 months on lees to develop a complex texture. After careful blending the wine is filtered and bottled. Cellaring - Gris is best consumed when it is young, we recommend within 5 years of vintage time. (256389-1)

- The fruit was harvested at night when the temperature was coolest to retain maximum fruit flavour. The juice was cool fermented in stainless steel with aromatic yeast strains with a small portionfermented on skins to add colour, intensity and zest. The wine was then aged on yeast lees for three months to add softness and retain freshness. The wine was bottled early to retain fresh fruit characters. Vintage - The wet spring followed by a mild summer lead to a later and compressed harvest for all varieties this year. Our vineyard and winemaking teams worked tirelessly during vintage 2017 to ensure allvarieties were harvested at optimal flavour development, producing elegant wines with lower alcohol levels which we are sure will delight our consumers. Viticulture

- Trained onto two wire vertical trellises with both wires mechanically pruned back to 2 buds. The canopy is managed through reduced water to restrict its vigour and therefore decrease berry size increasing flavour intensity Vinification - After night harvesting (in order to retain freshness and varietal flavour) the grapes were crushed into airbag presses and gently pressed in top two fractions, free run and –pressings. Both fractions are fined to minimise any phenolic bitterness before being clarified. The free run is then inoculated with an aromatic yeast strain designed to enhance the varietal characters of the fruit. Controlled fermentation occurred over 10-12 days, commencing at 16°C and increasing toward the end of ferment to approximately 20°C. Post ferment the wine is stirred on lees to create texture and mid palate mouth feel. Once the palate of the wine is balanced between fresh acidity and texture the wine is clarified and stabilised. A percentage of Colombard is then blended in before the wine is filtered and bottled. (262470-5)

- Fruit selected from the Adelaide Hills region was night harvested to retain maximum fruit and gently pressed to avoid the transfer of any harsh tannins. A portion of the wine was fermented in oak to add spice and complexity; this was further matured in contact with the yeast lees to build structure and layers of interest. Vintage - The higher than average rainfall during the winter months and a cooler spring delayed budburst and resulting in vintage being 3-4 weeks late. Fruit was harvested early in the morning at the coolest part of the day and delivered straight to the winery for pressing. Following pressing the juice was clarified & then fermented at cool temperatures, with a small parcel of juice having some oak contact at ferment. Post ferment the wine was left on yeast lees and stirred fortnightly for 6 months resulting in the creamy, full mouth-feel of the wine. Once this process was complete, the wine was blended, then clarified and stabilised for bottling.Each Sixty Spokes wine draws its sophistication from the complex fruit flavours generated by the cool climate growing conditions. Made from low yielding grapevines grown in our ancient volcanic soils at an elevation of 550 metres in the rolling hills of the Central Ranges of New South Wales. This elevation and the long cool ripening period produce wines with complexity, elegance and finesse. Due to our cool climate winemaking the Sixty Spokes wines make the perfect food match. Fruit

- This Chardonnay was grown on mature vines with an average of 40 years on limestone soils. The result is a wine with lively fruit intensity and good acid balance. The 2017 vintage was wetter than usual and picked in three distinctly different parcels of ripeness. Layered complexity of green apple/citrus, peach and tropical diversity are in a refreshing and vibrant style. Winemaking - The richness of the fruit in its natural state meant that minimal intervention was required in the winery. Separate parcels were left on skins for some time in order to develop the keen tannin structure, then fermented in stainless steel with some French oak influence. 1838 was the year Walter Thomson, with wife Jane, arrived in Australia and established a winemaking tradition. Faithful to his approach, our estate grown parcels are carefully tended by our vignerons to create wines of great intensity. Glorious vantage lookouts along the cliffs of the beautiful River Murray can be enjoyed near our mature vineyards. (260990-1)

Made in a Pinot Grigio style, grapes are selected when flavour is optimal and natural acidity remains high. This parcel was harvested in the cool of the evening and immediately crushed at the winery to minimise colour pick up from the pink grape skins. Juice was cold settled then racked with light solids for fermentation. Post ferment the wine was lees stirred in tank to encourage mouthfeel and complexity.

The Pinot Grigio fruit for this wine was picked early in order to retain the crisp fruit flavours & bright, natural acidity of the grapes. Post harvest, the fruit was transferred directly to the press & only lightly pressed to avoid colour pick up from the naturally dark skins of this variety. Post pressing, the juice was clarified and then cool fermented in tank. Post ferment the wine was racked straight off yeast lees to retain the fresh bright fruit characters, then stabilised and filtered in preparation for bottling.Each Sixty Spokes wine draws its sophistication from the complex fruit flavours generated by the cool climate growing conditions. Made from low yielding grapevines grown in our ancient volcanic soils at an elevation of 550 metres in the rolling hills of the Central Ranges of New South Wales. This elevation and the long cool ripening period produce wines with complexity, elegance and finesse. Due to our cool climate winemaking the Sixty Spokes wines make the perfect food match.
