Marlborough is renowned as one of the world’s top regions for sauvignon blanc. The Ten Sisters vineyard is in the Southern Valleys subregion, known for its tropical fruit characteristics. The Southern Valleys are closer to the mountains, creating a cooler climate that leads to later ripening and more vibrant flavors. The soil of the Southern Valleys is primarily loess, or fine windblown soil derived from glacial deposits, and has more clay than other subregions. After being pressed to tank, then left to settle and clear, the juice was racked and inoculated with selected yeast strains known to enhance desirable varietal characteristics. The wine remained on yeast lees for two months, before racking to fine lees for another two months. (266741-1)

Winemaking

The fruit was harvested at night from premium Marlborough vineyards and gently pressed. The juices was then cold settled and cool fermented with yeast strains selected to enhance the natural varietal aromas. Following fermentation the wine was left to sit on lees before blending and bottling to build texture. Vintage he 2017/18 growing season in Marlborough was characterised by a warmer than average January followed by the wettest February on record. Despite th unusual ripening conditions the fruit maintained its natural acidity and achieved flavour ripeness at low baume, resulting in less alcoholic wines with great structure and flavour. Winemaking

Sauvignon Blanc: Vinified from two separate parcels, picked from two different vineyard blocks for diversity of flavours. Semillon: Picked when fully flavour ripe, so slightly later than the Sauvignon Blanc blocks. Juices were clarified following pressing and cool fermented separately with several different strains of aromatic yeast.Post ferment the wines were racked off lees and the individual parcels were then blended together, stabilised and prepared for bottling.Our range of wines are crafted from 5 different grape varieties that blend together in perfect harmony, much like the close and lifelong interaction between you and your closest five friends. Vinification

The fruit was crushed, chilled and pressed immediately. Neutral yeasts were used for the fermentation, bottled in July. No oak and no malolactic ferment, only stainless steel. Winemaker Comments Cool year aromatics and fine boned here. One of our favourite blends and the proportion here is 84% Sauvignon Blanc and 16% Semillon. The fruit was machine harvested at night and trucked to the Hunter Valley immediately. Crushed, pressed and stainless steel fermentation followed. (266663-1)

Grape Variety: 100% Sauvignon Blanc Tasting Notes: The crystalline and dazzling pale straw-gold colour of the 2011 is like a reflection of its purity. The nose offers white peaches and green apples above herbs and flowers with lemon hints blended with tropical touches. Smooth spices, a subtle hint of crème anglaise and mineral dashes complete the personality. The mouth combines volume and precision, resulting in a great balance. The texture is dense but always moves with grace, thanks to the natural freshness. The mineral structure backs up the barrel ageing, providing more deepness until a tight finish made of fresh fruits and herbs, soft spicy accents and mineral background.Vineyard: Tamaya Vineyard, Limarí Valley - ChileAge of the Vineyard: Vines planted in 1999Time of Harvest: 16th FebruaryAltitude: 240 metres above sea levelHarvest Method: Early morning manual harvested in small 12kg containers with a selection of bunches in the vineyardWinemaking: Second selection at the winery just before entering the press, without destemming, under gas protection. The press time is around three hours, with low pressure and few rotations to obtain the cleanest and clearer juice as possible. The rape is decanted, and once clean, it is fermented with selected yeasts. Temperatures are totally controlled, between 14°-16°C, to preserve all the potential of the wine. When fermentation is well advanced, with '5f of sugars consumed, one quarter of the juice goes to old 400 litre French oak barrels, to keep on fermenting while the rest is fermented in steel tanks. From fermentation until the end of the process, wine is in contact with its fine lees, removing them twice a week to get better volume and character. The barrels are checked every week, until finding the perfect balance between fruit and wood. Then, the wine in barrels goes back to the tank and the barrels are newly filled with the “fresh” wine coming from the tank. The purpose of this “loop” is to avoid an oaky character that is too heavy and to preserve all the personality. Vinification

The fruit was crushed, chilled and pressed immediately. Neutral yeasts were used for the fermentation, bottled in July. No oak and no malolactic ferment, only stainless steel. Winemaker Comments Cool year aromatics and fine boned here. One of our favourite blends and the proportion here is 84% Sauvignon Blanc and 16% Semillon. The fruit was machine harvested at night and trucked to the Hunter Valley immediately. Crushed, pressed and stainless steel fermentation followed. (266663-1)
