Tempus Two `Pewter` Botrytis Semillon 2015 (6 x 250mL), NSW.

Botrytis Cinerea is known as the “noble” rot, a fungal infection which puts holes through the side of the grape causing dehydration of the grape and amongst other things, concentration of juice within the infected grape. The natural sugar levels therefore increase and the grapes are harvested late to fully capture the intensity of sweetness and complex flavours. The result is powerfully rich and opulent with flavours of dried apricots, citrus fruit marmalade and just a note of wild honey finishing with just a hint of refreshing citrus.

A very long and constant frost fighting season ensured the team were under pressure from the start. Port Phillip Estate Estate Chardonnay 2018 (6 x 750mL), Mornington Pen.
Port Phillip Estate Estate Chardonnay 2018 (6 x 750mL), Mornington Pen.

The Port Phillip Estate vineyard is located on the Mornington Peninsula at Red Hill, on Eocene volcanic soils. Our wines are made from domain grown, handpicked grapes and aim to manifest terroir: the integration of our geology and soils with the macroclimate of our region, the mesoclimates of the various sites within our vineyard and the weather of the annual grape growing season. Our cultural operations in the vineyard and practices in the winery endeavour to articulate these unique characteristics diligently, respectfully and without artifice.VintageFollowing a wet Winter, budburst commenced relatively late in mid-September. The Winter rainfall set up the vineyards well for Spring with overall temperatures during Spring slightly higher than average accompanied by below average rainfall. Flowering commenced mid late November with ideal weather conditions, resulting in one of the best fruit sets in many years. The mild to warm conditions continued throughout Summer andveraison commenced in mid-January. Harvest delivered fruitful crop loads matched with very stable weather conditions, ensuring vine performance and good ripeness. Picking commenced late February and the viticultural team worked steadily until the beginning of April delivering outstanding fruit. The white winesdisplay excellent acidity, depth and intense fruit flavours. The red wines look poised and elegant with powerful aromatics and a great balance between tannin and acid.

Gentle pressing allowed extraction of the prime juice, whilst still maintaining the delicacy and elegance. Fermentation proceeded in stainless steel tank with about half of the solids retained until about the mid-point of sugar conversion, when the juice was then filled to French oak Hogsheads to complete fermentation. Lees stirring was performed weekly for 3 months, and 30% of the wine underwent Malo-Lactic fermentation. The wine was matured in the same oak barrels for 8 months before filtration and bottling

1 REVIEW
Lot No: 0006-2476278

Viticulture

- Trained onto two wire vertical trellises with both wires mechanically pruned back to 2 buds. The canopy is managed through reduced water to restrict its vigour and increase flavour intensity. Vinification - After night harvesting (in order to retain freshness and varietal flavour) the grapes were crushed into airbag presses and gently pressed in top two fractions, free run and –pressings. Both fractions are fined to minimise any phenolic bitterness before being clarified. The free run is then inoculated with an aromatic yeast strain designed to enhance the varietal characters of the fruit as well as build texture in to the wine during fermentation. Controlled fermentation occurred over 10-12 days, commencing at 16°C and increasing toward the end of ferment to approximately 20°C. Post ferment the wine is stirred on lees to create texture and mid palate mouth feel. Once the palate of the wine is balanced between fresh acidity and texture the wine is clarified. Post clarification the wine was aged on French oak alternatives before being stabilised. The wine is then filtered and bottled. (264168-4)

Tertini International Chardonnay 2016 (6 x 750mL) Tumbarumba, NSW

Lot No: 0023-2476278

The fruit for this wine was grown especially for Tertini Wines in the Tumbarumba region of New South Wales. The vineyard is situated at an altitude of 650m and has basalt volcanic soils. This vineyard has a long slow ripening period from its cool nights to ensure our fruit is grown with the richness, aromatic development and balance that this region is renowned for. Vintage & Winemaking Notes - An early budburst and early strong growth was followed by warm temperatures through late Spring and early Summer resulting in an excellent flowering and fruit set. A wetter than usual Spring/Summer led onto a dry Autumn which was ideal to keep disease pressures low as the fruit ripened. The winter rains from 2015 ensured a healthy crop load with intense varietal character but with moderate acidity. (262854-2)
