Viticulture

- Trained onto two wire vertical trellises with both wires mechanically pruned back to 2 buds. The canopy is managed through reduced water to restrict its vigour and therefore decrease berry size increasing flavour intensity Vinification - After night harvesting (in order to retain freshness and varietal flavour) the grapes were crushed into airbag presses and gently pressed in top two fractions, free run and –pressings. Both fractions are fined to minimise any phenolic bitterness before being clarified. The free run is then inoculated with an aromatic yeast strain designed to enhance the varietal characters of the fruit. Controlled fermentation occurred over 10-12 days, commencing at 16°C and increasing toward the end of ferment to approximately 20°C. Post ferment the wine is stirred on lees to create texture and mid palate mouth feel. Once the palate of the wine is balanced between fresh acidity and texture the wine is clarified and stabilised. A percentage of Colombard is then blended in before the wine is filtered and bottled. (262470-5)

Winemaking

- Fruit selected from the Adelaide Hills region was night harvested to retain maximum fruit and gently pressed to avoid the transfer of any harsh tannins. A portion of the wine was fermented in oak to add spice and complexity; this was further matured in contact with the yeast lees to build structure and layers of interest. Vintage - The higher than average rainfall during the winter months and a cooler spring delayed budburst and resulting in vintage being 3-4 weeks late. Conditions during fruit ripening were quite dry and favoured full development of both and colour. (261978-1)

Winemaking

- The fruit was harvested at night, when the temperature was coolest to retain maximum fruit flavour. Cool fermented in stainless steel with aromatic yeast strains, with a small portion fermented on skins to add intensity and zest. The wine was aged on yeast lees for a few months to add complexity and length, then bottled early to retain the fresh fruit characters. Vintage - A mild spring followed by a classic warm and dry summer lead to outstanding quality across all varieties in Vintage 2018. These mild and dry conditions, whilst shaping exceptional fruit, saw a slight reduction in volume crushed than in previous years. Our vineyard and winemaking teams have worked passionately throughout Vintage 2018 to craft amazing wines with great colour, and flavour intensity that will enrich life’s everyday moments. This Pinot Gris displays aromas and flavours of tropical fruit and pear with a hint of citrus. A well balanced, softly textured wine.ChileChile's unique geographical and climatic conditions offer it many advantages for wine production.The country is very long and thin - some 4500 km, yet it is only on average 150km wide, with the land sandwiched between the high, snow-capped Ands Mountain range and cold Pacific Ocean. The water temperature of Pacific is kept significantly colder by the Humbolt Current that flows up the Chilean coastline from Antarctica.The climate and soil conditions are almost perfect for grape growing;the influence and close proximity of cold air from the Andes and cool sea breezes cannot be overemphasised. Rainfall is restricted predominantly to the winter months, and snow-melt from the Andes provides unlimited pure water for the vineyard irrigation. These benign conditions and absence of phylloxera prevent many vine diseases.Because of the temperate climate and sharp day-night temperature variations, the ripening season may be several weeks longer than normal, allowing grapes to ripen more evenly and with greater fruit concentration and skin pigmentation - often resulting in higher level of antioxidants.Now Chile has become one of the world's prime resources of varietal wine. Regions

The King Valley is one of Australia’s most exciting and emerging wine regions. Home to the most picturesque and unspoilt valley in Australia, King Valley benefits from a cool climate with extremely varied terrain, that ranges from snow-capped Alps to sun baked fields. The Seaon The 2016 growing season was basically a dry, warm vintage. Yields were moderate with strong agreement on the vibrant aromas and intense flavours in white varieties. Time will define the standouts of the vintage, but the early indication is that the Pinot Grigio is displaying freshness and vibrancy coupled with a great acid backbone and intensity of flavour. Winemaking The fruit for the 2016 Pinot Grigio was picked in early February at 11.3° baumé. The grapes were picked in the early morning, pressed off skins into tank for fermentation with high solids to provide complexity and texture while still retaining fresh flavours. Once in tank, fermentation with high solids content at 14.0°C ferment temperature was completed slowly over 4 weeks. This allowed retainment of fresh aromas and flavours while providing creamy texture and mouthfeel. A small proportion was fermented with wild yeasts in older French oak barriques to add richness and extra layers of complexity. The tank and barriques wines was left on yeast lees with weekly stirring to protect the freshness of the wine and adding further complexity. The wine was bottled under screw cap. (264317-2)

The Pinot Grigio fruit for this wine was picked early in order to retain the crisp fruit flavours & bright, natural acidity of the grapes. Post harvest, the fruit was transferred directly to the press & only lightly pressed to avoid colour pick up from the naturally dark skins of this variety. Post pressing, the juice was clarified and then cool fermented in tank. Post ferment the wine was racked straight off yeast lees to retain the fresh bright fruit characters, then stabilised and filtered in preparation for bottling.Each Sixty Spokes wine draws its sophistication from the complex fruit flavours generated by the cool climate growing conditions. Made from low yielding grapevines grown in our ancient volcanic soils at an elevation of 550 metres in the rolling hills of the Central Ranges of New South Wales. This elevation and the long cool ripening period produce wines with complexity, elegance and finesse. Due to our cool climate winemaking the Sixty Spokes wines make the perfect food match. Post ferment, lees string 3 times per week for 10 weeks...this is what is driving the creamy, textured, moderate acid, nutty finish.
