The King Valley is one of Australia’s most exciting, emerging wine regions. It is located in North East Victoria – approximately three hours North of Melbourne and seven hours South of Sydney. Home to the most picturesque and unspoilt valley in Australia, King Valley benefits from a cool climate with extremely varied terrain, that ranges from snow-capped Alps to sun baked fields. The Season The growing season was a return to gentle, mild and cool conditions. Cool nights and mild days extended the growing season while retaining natural acidity. The fruit quantity was balanced and fruit quality was exceptional, producing vibrant aromas and intense flavours in the white varieties. Overall, a classic vintage producing excellent white and sparkling wines. Winemaking The fruit for the 2017 Pinot Grigio was picked on the 7th March at 10.9° baumé. The grapes were picked in the early morning, pressed off skins into tank for fermentation with some solids to provide complexity and texture while still retaining fresh flavours. Once in tank, fermentation with solids content at a 16.0°C ferment temperature was completed over 3 weeks. This allowed retainment of fresh aromas and flavours while providing creamy texture and mouthfeel. The wine was left on yeast lees with weekly stirring to protect the freshness of the wine and adding further complexity. The wine was bottled under screw cap. (271268-1)

Gris means grey in French indicating that these grapes have a pink hue. The grapes are whole bunch pressed very gently to avoid picking up colour and any bitterness. The juice is fermented to dryness in a stainless steel tank and then bottled soon after it finishes settling.The good folk at Wood Park have minimal interference with the fruit in the wine making process, and use both traditional and modern techniques in producing the wine. The reds from this vintage show excellent depth of colour and fabulous tannins, whilst the whites display a rich array of aromatics and bright fresh fruit flavours.The Fibonacci sequence reflects the growth spirals found in nature, just like the new tendrils on a grape vine that unravel each spring. MATURATION

Fermentation in stainless steel was preceded by 12 hrs of skin contact and followed by 4 weeks of stirring on yeast lees. WINEMAKERS NOTES The Silex vineyard is located at Kongorong, some 80 kilometres South of Coonawarra in the Mount Gambier geographical region. The district has been famous for quite some time for its cheddar cheese. It also has a small and very specialized grapegrowing community. Its proximity to the Southern Ocean and the cold afternoon/evening sea breezes that blow most days during the growing season make it one of the coolest places in Australia to grow grapes. This coolness results in a slow extended ripening period delivering high natural acidity and delicate fruit characters. Silex is a term used in Europe to describe flint or chert rock. The weathered limestone at this site has an extremely hard flint-like cap and only a shallow layer of red clay/loam soil for the vine roots to exploit. This and the weather make viticulture a real challenge.The 2018 vintage was very early but harvesting was delay just long enough to lower extremely high acid levels so that a balanced wine was achieved without a large amount of residual sugar being left in the wine. Typical cool climate delicate fruit characters were still captured.Time in the bottle will see the yeastiness fade more into the background and the pear/nashi characters will become more obvious. Toasty bottle age will add complexity if you can resist the temptation for 3 to 5 years in the cellar. (270334-6)

In the not so distant past inland Australia once shimmered in the scorching midday sun. Vast tracts of land were covered with a sea of grey-green foliage from the many types of saltbush plants. Saltbush derives its name from the salt that the plant retains in its leaves. Much of that land is now cleared for agricultural and horticulture including vineyards.The beauty of saltbush is that the plant is incredibly salt tolerant. They live for years and survive through all seasons throughout the year and it doesn't matter whether you get 50 points of rain in January or July, they will thrive.Herds of wild herbivores would move into a stand of saltbush and defoliate the plants as they consumed the leaves, then they moved on. In more recent times saltbush sustained the herds of introduced cattle and sheep in particular. The sheep has become an Australian icon and indeed the country, for a time, rode on the sheep’s back. Images spring to mind of Australia’s historic pastoral characters such as “Saltbush Bill” come into mind and the legend of Sir Sydney Kidman. (269344-9)

Viticulture

- Trained onto two wire vertical trellises with both wires mechanically pruned back to 2 buds. The canopy is managed through reduced water to restrict its vigour and therefore decrease berry size increasing flavour intensity Vinification - After night harvesting (in order to retain freshness and varietal flavour) the grapes were crushed into airbag presses and gently pressed in top two fractions, free run and –pressings. Both fractions are fined to minimise any phenolic bitterness before being clarified. The free run is then inoculated with an aromatic yeast strain designed to enhance the varietal characters of the fruit. Controlled fermentation occurred over 10-12 days, commencing at 16°C and increasing toward the end of ferment to approximately 20°C. Post ferment the wine is stirred on lees to create texture and mid palate mouth feel. Once the palate of the wine is balanced between fresh acidity and texture the wine is clarified and stabilised. A percentage of Colombard is then blended in before the wine is filtered and bottled. (270195-4)

An ideal flowering proceeded the hottest January on record and was followed by the wettest February on record. Warm nights led to low acids and an early harvest but intense and delicious fruit flavours. This pinot gris was harvested in the early hours of the morning to preserve fruit purity and varietal character. After a cool, long fermentation, the wine was aged on fine yeast lees for 8 weeks to allow the natural texture of the wine to develop.
