Winemaking

The fruit was harvested in the cool of the night to preserve freshness and quality. Individual batches were cool fermented in stainless steel on French oak followed by lees stirring to give length and roundness to the palate. The wine was blended, stabilised and filtered prior to bottling.vintage. Vintage The Vintage 2019 growing season was one of the driest on record. Controlled winter watering and careful monitoring of vine stress levels was key to a successful crop. Temperatures tended to be cooler in Spring and early Summer which caused a slower start to the season, as temperatures began to rise in late Jan early Feb ripening moved along a little quicker and the team were grateful the vines had sufficient canopies to protect the fruit through to maturity. The reds from this vintage show excellent depth of colour and fabulous tannins, whilst the whites display a rich array of aromatics and bright fresh fruit flavours.The Fibonacci sequence reflects the growth spirals found in nature, just like the new tendrils on a grape vine that unravel each spring. The notion being ‘what you start with determines the end result’ which is of course the foundation of all great wines. The right combination of soil and climate with grow quality grapes, the best grapes will then give you a fabulous wine.

Bleeding Heart Wine was borne from a shared passion in the wines and vineyards of Australia. The ancient soils and moderate climate create rich and full bodied wines that are incredibly satisfying. Few that experience the lifestyle of food and wine could argue that it is not better a bleeding heart than none at all. Vineyards Sourced from dry grown vineyards of the warmer and long established sites of broader South Australian and lower-cropping vineyards in the cooler climate Adelaide Hills wine region. The Central vineyards provide depth of flavour and a round mouthfeel whilst the Adelaide Hills provides elegance, length and soft natural acidity. Winemaking Fruit is harvested during the early morning hours to retain freshness and partially whole bunch pressed. The fruit is kept separate before a fast and precise vinification in stainless steel with minimal oxygen contact, maximising fruit expression and aromatics. A cool fermentation (15 to 18 degrees) is undertaken in stainless steel tanks before maturation on lees for four months. A portion of the Adelaide Hills fruit is aged in two and three year old French oak to increase complexity and mouthfeel. Vintage Careful vineyard management is always required at the best of times but particularly in 2018 as early November frosts caused a reduction in yield across much of South Australia. The timing and result was okay from a ripening perspective and with a consistent and even temperature of the subsequent few months the fruit that remained developed beautifully with great bright flavours and fine, fresh acidity. Indeed 2018 is looking very good across all of the State of South Australia.

Vintage Conditions

Good rain throughout winter and also in December. The trend for cooler summers continued with no maximum temperatures over 40 degrees. Reasonable rains during vintage which came in storms rather than daily misty showers which can cause problems with the grapes. Vineyard This year’s Vat 47 comes entirely from our Short Flat Vineyard, which has ideal sandy loam soils. The oldest blocks were planted in the late 1960s. Winemakers Notes The fruit was handpicked before immediately being 100% basket pressed. The juice was cold settled for two days before fermentation was initiated in stainless steel tanks, then the fermenting juice was transferred to French Oak barriques (20% new). The wine stayed in these barriques until October before it was blended and coarse filtered into bottle.

After fermenting entirely in tank, the Chardonnay was briefly matured with French oak, producing a wine with delicious fresh fruit flavours and complexed by the light oak characters.

The northern-most of the Tyrrell’s Hunter Valley vineyards and teh furthest from the Brokenback mountain range. Celebrating this unique vineyard, we are offering the award winning 2017 Belford Chardonnay, showcasing the characterful, premium wine this vineyard produces in outstanding vintages such as this.A complex nose of fruit, oak and a slight “solids” character. A powerful palate with the fruit characters being balanced well with the oak and mid palate grainy texture. The Y Series Chardonnay grapes were picked across the flavour spectrum, from lively citrus flavours such as lemons and limes to peach and tropical fruits. We picked in this way to ensure that when blended, the wine was balanced with flavour and natural acidity. Pressed straight to fermentation, the juice was managed using a “hands off” approach. Vineyard

Sourced from three sites on the Forest Hill Vineyard. Block 8 and Block 9 planted in 1985 and Highbury Fields. Combination of Gin Gin clone and Bernard 76, 95 and 96. Winemaking Mostly hand-picked, chilled further before some parcels are hand sorted, whole-bunch pressed (Block 8 and Bernard clones) and others crushed before pressing into French oak barriques, hogsheads and puncheons (20% new & retaining high juice solids). Fermentation takes place at cool temperatures with 100% natural yeast. Light Batonage post primary fermentation with partial (minor) malo-lactic fermentation. After 9 months barrel maturation to achieve balance, the wine is bottled. Vintage Notes The 2018 growing season began early and with strong vigor spurred on by very good soil moisture from winter rains. The last major rain event was in September with 137mm falling. Summer was dry although with moderate day time temperatures and very few days exceeding 30°C. Little disease pressure and cool night time temperatures helped maintain natural acidity. Harvest dates were early across most varieties.
