The fruit was selected from premium Yarra Valley vineyards, crushed and inoculated with a selected yeast strain prior to being transferred into French oak barriques for fermentation. The wine was battonaged ‘sur lie’ weekly to increase complexity and palate texture, before blending, stabilising and bottling. VINTAGE The 2018 growing season in the Yarra Valley was a vintage in 2 halves; a cool and wet winter and spring followed by dry summer which provided tremendous ripening conditions throughout February and March. Over all, the quality of the grapes produced in the region was exceptional, with Chardonnay showing an outstanding depth of flavor and intensity. (271213-2)

MATURATION

Oak maturation, malolactic fermentation and stirring on lees. WINEMAKERS NOTES The Silex vineyard is located at Kongorong, some 80 kilometres South of Coonawarra in the Mount Gambier geographical region. The district has been famous for quite some time for its cheddar cheese. It also has a small and very specialized grapegrowing community. Its proximity to the Southern Ocean and the cold afternoon/evening sea breezes that blow most days during the growing season make it one of the coolest places in Australia to grow grapes. This coolness results in a slow extended ripening period delivering high natural acidity and delicate fruit characters. Silex is a term used in Europe to describe flint or chert rock. The weathered limestone at this site has an extremely hard flint-like cap and only a shallow layer of red clay/loam soil for the vine roots to exploit. This and the weather make viticulture a real challenge.The use of oak and malolactic bacteria have given the wine complexity and richness. Oak adds extra aromas/flavours and malo also adds texture to the palate.Time in the bottle will see the current tight structure loosen and become even more flavoursome. Toasty bottle age will add complexity if you can resist the temptation for 3 to 5 years in the cellar. (270334-7)

BACKGROUND

The grapes are sourced exclusively from the Bellarmine vineyard in the high quality, cool climate region of Pemberton in South-Western Australia. The vineyard is at an altitude of 220 metres above sea level. Planted in 2000 by hand, the vines are trained to Vertical Shoot Positioning (VSP) to give optimum exposure of the fruit to sunshine during the ripening season which occurs from December to March. The soils are red gravel laterite soils which provide excellent drainage and give warmth to the vines' root systems at night from the sunshine the red gravel has absorbed during the daylight hours. This results in the Chardonnay being ready for harvest around March before too much rain comes in as Autumn progresses. Pemberton is renowned for Chardonnay vines that produce very high quality fruit in this cool climate region. WINEMAKING Harvested in the cool of the night at optimum flavour levels as determined by the wine- maker regularly tasting the grapes, the fruit is harvested at optimum ripeness. The free run and pressings fractions are kept separate from each other and then the pressings are fined prior to being blended back in with the free run juice. The juice is cold settled for 48 hours then the clear juice is racked to a new tank away from the solids (“lees”) and is innoculated with a yeast to ensure a steady fermentation occurs and to optimise the natural characters present in the fruit. The fermentation is conducted at a temperature of approximately 20 degrees. Fermentation and storage occur in stainless steel tank for most of the wine and 10-20% of the wine is barrel-fermented. The wine is stirred on yeast lees for many weeks to achieve a subtle creamy texture in the wine. (270277-6)

Winemaking

The 2019 vintage endured some extended heat and dryness which resulted in lower than average yields, concentrated flavour and minimal disease risk. Harvested in three different stages, destemmed and must chilled into bag presses to gently extract the fresh fruity flavours. Clarified and fermented under controlled temperatures between 12 to 18 c. Extended lees contact was conducted to achieve soft rich mouthfeel then oaked in both American and French barrels until bottling. FRUIT

This Chardonnay was grown on mature vines with an average of 40 years on limestone soils. The result is a wine with lively fruit intensity and good acid balance. The 2019 vintage was hotter and lower yielding than usual and picked in three distinctly different parcels of ripeness. Layered complexity of green apple/citrus, peach and tropical diversity are in a refreshing and vibrant style. WINEMAKING The richness of the fruit in its natural state meant that minimal intervention was required in the winery. Separate parcels were left on skins for some time in order to develop the keen tannin structure, then fermented in stainless steel with some French oak influence. 1838 was the year Walter Thomson, with wife Jane, arrived in Australia and established a winemaking tradition. Faithful to his approach, our estate grown parcels are carefully tended by our vignerons to create wines of great intensity. Glorious vantage lookouts along the cliffs of the beautiful River Murray can be enjoyed near our mature vineyards. (270176-8)

Winemaking

The 2018 weather conditions were mild and very dry. This allowed the fruit to mature evenly, providing perfect harvesting options with lower yields to the 2017 vintage. Picked in three tranches, this delivered three distinctly different parcels of ripeness and ultimately a layered complexity and acidity. The first pick is to produce a backbone of Citrus, tight crisp acid and length. The second pick is to deliver the stone fruit components as peach, nectarine and pear. The last pick is to smooth out the palate with a little more from the riper fruit. The third pick also adds the Honeydew and tropical fruit elements, especially on the palate. Selected French oak is introduced towards the end of vinification, to embrace and complete the total blend.Byrne Family Australia wines express our family’s dedication to the land and our vines. Viticulture

- Trained onto two wire vertical trellises with both wires mechanically pruned back to 2 buds. The canopy is managed through reduced water to restrict its vigour and increase flavour intensity. Vinification - After night harvesting (in order to retain freshness and varietal flavour) the grapes were crushed into airbag presses and gently pressed in top two fractions, free run and –pressings. Both fractions are fined to minimise any phenolic bitterness before being clarified. The free run is then inoculated with an aromatic yeast strain designed to enhance the varietal characters of the fruit as well as build texture in to the wine during fermentation. Controlled fermentation occurred over 10-12 days, commencing at 16°C and increasing toward the end of ferment to approximately 20°C. Post ferment the wine is stirred on lees to create texture and mid palate mouth feel. Once the palate of the wine is balanced between fresh acidity and texture the wine is clarified. Post clarification the wine was aged on French oak alternatives before being stabilised. The wine is then filtered and bottled. (271633-4)

Viticulture

- Trained onto two wire vertical trellises with both wires mechanically pruned back to 2 buds. The canopy is managed through reduced water to restrict its vigour and therefore decrease berry size increasing flavour intensity Vinification - After night harvesting (in order to retain freshness and varietal flavour) the grapes were crushed into airbag presses and gently pressed in top two fractions, free run and –pressings. Both fractions are fined to minimise any phenolic bitterness before being clarified. The free run is then inoculated with an aromatic yeast strain designed to enhance the varietal characters of the fruit. Controlled fermentation occurred over 10-12 days, commencing at 16°C and increasing toward the end of ferment to approximately 20°C. Post ferment the wine is stirred on lees to create texture and mid palate mouth feel. Once the palate of the wine is balanced between fresh acidity and texture the wine is clarified and stabilised. A percentage of Colombard is then blended in before the wine is filtered and bottled. (271633-5)

Region

The King Valley is one of Australia’s most exciting, emerging wine regions. It is located in North East Victoria – approximately three hours North of Melbourne and seven hours South of Sydney. Home to the most picturesque and unspoilt valley in Australia, King Valley benefits from a cool climate with extremely varied terrain, that ranges from snow-capped Alps to sun baked fields. The Season The growing season was a return to gentle, mild and cool conditions. Cool nights and mild days extended the growing season while retaining natural acidity. The fruit quantity was balanced and fruit quality was exceptional, producing vibrant aromas and intense flavours in the white varieties. Overall, a classic vintage producing excellent white and sparkling wines. Winemaking The fruit for the 2017 Pinot Grigio was picked on the 7th March at 10.9° baumé. The grapes were picked in the early morning, pressed off skins into tank for fermentation with some solids to provide complexity and texture while still retaining fresh flavours. Once in tank, fermentation with solids content at a 16.0°C ferment temperature was completed over 3 weeks. This allowed retainment of fresh aromas and flavours while providing creamy texture and mouthfeel. The wine was left on yeast lees with weekly stirring to protect the freshness of the wine and adding further complexity. The wine was bottled under screw cap. (271268-1)

Viticulture and Winemaking

The 2018 vintage will be remembered as one of the trickiest on record, with cool days in February and March and rain coming just before and during harvest. Sugar levels were down in the grapes which prolonged the ripening season and pushed harvest dates back by about seven days compared to normal. Fortunately, Toi Toi dodged the rain showers and harvested our grapes in the cool of the early morning, in very good conditions. We picked the grapes when the flavours were at optimum, to ensure we preserved the fruit flavours in the wine. We used a select de-stemmer harvester to softly handle the fruit. Once pressed off skins, the juice was then fermented at low temperatures in stainless steel tanks with selected yeast strains to preserve the inherent delicate fruit flavours. Following fermentation, the wine was aged on light yeast lees to increase palate weight and complexity before it was bottled for enjoyment. (271267-6)

MATURATION

Fermentation in stainless steel was preceded by 12 hrs of skin contact and followed by 4 weeks of stirring on yeast lees. WINEMAKERS NOTES The Silex vineyard is located at Kongorong, some 80 kilometres South of Coonawarra in the Mount Gambier geographical region. The district has been famous for quite some time for its cheddar cheese. It also has a small and very specialized grapegrowing community. Its proximity to the Southern Ocean and the cold afternoon/evening sea breezes that blow most days during the growing season make it one of the coolest places in Australia to grow grapes. This coolness results in a slow extended ripening period delivering high natural acidity and delicate fruit characters. Silex is a term used in Europe to describe flint or chert rock. The weathered limestone at this site has an extremely hard flint-like cap and only a shallow layer of red clay/loam soil for the vine roots to exploit. This and the weather make viticulture a real challenge.The 2018 vintage was very early but harvesting was delay just long enough to lower extremely high acid levels so that a balanced wine was achieved without a large amount of residual sugar being left in the wine. Typical cool climate delicate fruit characters were still captured.Time in the bottle will see the yeastiness fade more into the background and the pear/nashi characters will become more obvious. Toasty bottle age will add complexity if you can resist the temptation for 3 to 5 years in the cellar. (270334-6)
