Sourced from our estate Malpas Road Vineyard, planted in 1991 on land which was originally referred to as ‘Bay of Biscay’. This is an obvious reference to the relatively infertile cracking, grey-black soil upon which our hand-tended Shiraz patch does its work. The fissures which occur as the black soil cracks apart, sever surplus root structure; a process which naturally lessens vigour and enhances ultimate grape quality. Other fruit parcels were sourced from the slightly higher elevated vines of the Penny’s Hill Vineyard. Detailed canopy management, judicious irrigation and passionate viticultural practices in both these high class vineyards contribute to this outstanding Shiraz.

With almost ideal weather conditions for whites exceptional fruit has been produced showing intense varietal flavours that are typical Margaret River. Aromatic varieties were outstanding with fresh citrus, lemon blossom and stone fruit on the nose and palate balanced off by crisp acidity. The temperature cooled off toward the end of February providing ideal weather conditions for the red varietals to fully ripen their flavour profiles and tannins. Once again there was a huge amount of Marri blossom leading into vintage therefore Silvereye bird damage was minimal. Flavour intensity was further benefited by the fact that cropping levels were reduced by around 30% across the region due to storms in early spring.

Winemaking

- Premium parcels of Merlot fruit were fermented in rotary and static fermenters. Followingfermentation on skins for seven to ten days, they were gently pressed. The wine was matured on French oak for 6 months before blending and bottling, the resulting wine has excellent depth of colour, richness and complexity. Vintage - The wet spring followed by a mild summer lead to a later and compressed harvest for all varieties this year. Our vineyard and winemaking teams worked tirelessly during vintage 2017 to ensureall varieties were harvested at optimal flavour development, producing elegant wines with lower alcohol levels which we are sure will delight our consumers. Windy Peak wines are made at De Bortoli's Dixon's Creek winery from carefully selected fruit grown in the Yarra Valley, King Valley and other regions. The wines are generous in flavour with fine grained texture, perfect for bringing out the best in food. Fruit is sourced from carefully selected parcels of Shiraz grown on the red volcanic soils of Northern Heathcote. Fruit is harvested at 14.0-14.5 baume to achieve a balance of fruit ripeness and balanced acidity. Grapes are destemmed and crushed into both static and rotary fermenters. The resultant wine is then fermented for up to two weeks on skins prior to pressing and racking. A third of the blend is matured for 5 months in older casks and the remainder stays in tank for freshness and brightness.

Viticulture

- Trained onto two wire vertical trellises with both wires mechanically pruned back to 2 buds. The canopy is managed through reduced water to restrict its vigour and increase both colour and flavour intensity. Vinification - After night harvesting the Merlot grapes were crushed into static fermenters and inoculated with AWRI yeast. Controlled fermentation occurred over six days, commencing at 24°C reducing to 20°C. Gentle Pump-overs occurred four times daily to maximise the extraction of colour whilst still retaining a soft juicy palate structure. Pump-overs were reduced to twice daily towards the end of fermentation to minimise seed tannin extraction. To avoid any harsh tannins and bitterness only free run and first pressings were used in this blend. After pressing the wines were settled before racking onto French oak for 3 months. (262470-3)

Overall the Great Southern saw an excellent growing season and 2014 harvest. The season was characterised initially by unseasonally strong winds leading to some slight inflorescence damage. These conditions subsided in the two weeks prior to flowering however and much of the Great Southern saw good fruit set. Moderate rainfall during the early growing season was welcome on the whole but excess moisture did provide a small amount of disease pressure. Later in the season however, the region saw particularly dry conditions with very little rainfall in the two months leading in to harvest and presenting some challenges in particular for dry grown vineyards. A typical strong diurnal effect was observed, with cold nights and warm days leading to a long,uniform slow ripening period.

The BARD range celebrates the work of Australia’s best known lyric poet John Shaw Neilson who was raised in the cottage on the Hollick Neilson’s Block vineyard. Revered by his peers in the world of literature, Neilson was born in Penola in 1872, and it is thought that much of the imagery in his poetry was conjured up during his childhood experiences in the bush and wetlands around Coonawarra.The long mild growing season in the Limestone Coast provides an ideal climate for Shiraz. The spring of 2013 saw a very cool start with regular rain until late December. The warm days and cool nights experienced in Coonawarra during summer and autumn of 2014, slowed the ripening process and allowed for maximum flavour development.The fruit was picked at optimum ripeness and carefully handled to retain the flavours achieved in the vineyard. The combination of the luscious fruit flavours from Wrattonbully shiraz combined with the more restrained berry flavours of Coonawarra fruit along with the spiciness typical of the variety, has produced an elegant wine so in keeping with the Hollick Bard style. After primary fermentation the wines were soft pressed andunderwent malolactic fermentation. Aged on French oak for a further six months before being blended and filtered prior to bottling.The mild weather conditions during the lead up to harvest together with warm January temperatures were the perfect conditions for optimal flavour development across the white varieties. The odd burst of extreme heat resulted in an early start to vintage but as the harvest progressed these conditions moderated, extending the ripening period for the reds ensuring they too reached maturity with an ideal balance of sugar, acid, colour and flavour. Red Claw Shiraz 2014 (6 x 750mL), Heathcote, VIC.

Good soaking rains during winter and early spring provided ample soil moisture for the start of the growing season. Spring was relatively cool with below average temperatures for the months of October and November. A heavy downpour of rain during flowering led to reduced berry number per bunch in the Grenache particularly, leading to lower yields but intense flavours. However, the rain and cool weather was short lived, with a return to below average rain from October to February and above average temperatures in December through to March. The prolonged warmer temperatures resulted in a significantly slower veraison this season, but the vines coped well under the conditions and welcomed some cooler weather late in the ripening period. Berry sizes were smaller across the vineyard and show promising fruit concentration. As always, the vineyard was entirely hand picked with each parcel of fruit carefully selected.
