Vintage

2017 vintage started late, two to three weeks later than the preceding couple of years. The reason for this was the mild, cool spring weather experienced all across the southern part of the state. During the middle and latter part of March the South-West region including Margaret River experienced a very unusual amount of rain and very cool weather, ripening over this period was very slow. The first suggestions of worry started to appear in growers eyes. Of recent history Margaret River has experienced very dry conditions in March and early April with the season breaking mid to late April, not a problem with all the grapes picked. But this year the concern was that if the season broke in mid April all the red grapes would be still on the vine. However anyone that lived though the late April and early May in the South-West of Western Australia will testify that never had we had a better, warmer early autumn. It was simply perfect; cool crisp mornings and evenings but beautiful warm and sunny days; not too hot, textbook conditions for great ripening especially for the red varieties. Winemaking Grapes were harvested at optium ripeness. Fermentation in open topped vessels with traditional pump over cap management has produced a wine with loads of fruit flavours and soft tannins providing structure without astringency. Maturation in French oak barriques for 10 months adds further complexity and structure without dominating the fruit. (265269-1)

Windy Peak wines are made at De Bortoli's Dixon's Creek winery from carefully selected fruit grown in the Yarra Valley, King Valley and other regions. The wines are generous in flavour with fine grained texture, perfect for bringing out the best in food. Fruit is sourced from carefully selected parcels of Shiraz grown on the red volcanic soils of Northern Heathcote. Fruit is harvested at 14.0-14.5 baume to achieve a balance of fruit ripeness and balanced acidity. Grapes are destemmed and crushed into both static and rotary fermenters. The resultant wine is then fermented for up to two weeks on skins prior to pressing and racking. A third of the blend is matured for 5 months in older casks and the remainder stays in tank for freshness and brightness.

Viticulture

- Trained onto two wire vertical trellises with both wires mechanically pruned back to 2 buds. The canopy is managed through reduced water to restrict its vigour and increase both colour and flavour intensity. Vinification - After night harvesting the Merlot grapes were crushed into static fermenters and inoculated with AWRI yeast. Controlled fermentation occurred over six days, commencing at 24°C reducing to 20°C. Gentle Pump-overs occurred four times daily to maximise the extraction of colour whilst still retaining a soft juicy palate structure. Pump-overs were reduced to twice daily towards the end of fermentation to minimise seed tannin extraction. To avoid any harsh tannins and bitterness only free run and first pressings were used in this blend. After pressing the wines were settled before racking onto French oak for 3 months. (264168-3)

Winemaking

- Premium parcels of Merlot fruit were fermented in rotary and static fermenters. Followingfermentation on skins for seven to ten days, they were gently pressed. The wine was matured on French oak for 6 months before blending and bottling, the resulting wine has excellent depth of colour, richness and complexity. Vintage - The wet spring followed by a mild summer lead to a later and compressed harvest for all varieties this year. Our vineyard and winemaking teams worked tirelessly during vintage 2017 to ensureall varieties were harvested at optimal flavour development, producing elegant wines with lower alcohol levels which we are sure will delight our consumers. Vanessa Altmann from Switch Organic Wine - Top 12 finalist in Young Gun of Wine 2017Grown in Langhorne Creek, South Australia this wine shows bright fruit characters of cherry and raspberry, with soft gentle tannins. The wine has a delicious texture that finishes with a hint of earth typical of the region, and while Merlot has often been used for blending this wine reminds me of some of the best Pinot’s I’ve tasted, an elegant example of Merlot as a varietal. Picked during March 2017 the bunches were de-stemmed and crushed to allow fermentation on skins for around seven days, following pressing the wine was steeped in a small amount of Cabernet Sauvignon skins for around four days to build complexity and palate weight, while still remaining true to Merlot style. With almost ideal weather conditions for whites exceptional fruit has been produced showing intense varietal flavours that are typical Margaret River. Aromatic varieties were outstanding with fresh citrus, lemon blossom and stone fruit on the nose and palate balanced off by crisp acidity. The temperature cooled off toward the end of February providing ideal weather conditions for the red varietals to fully ripen their flavour profiles and tannins. Once again there was a huge amount of Marri blossom leading into vintage therefore Silvereye bird damage was minimal. Flavour intensity was further benefited by the fact that cropping levels were reduced by around 30% across the region due to storms in early spring.

Situated on the banks of the Murray River, the Oxford Landing vineyard produces grapes perfect for fresh and varietal wines. The Oxford Landing Merlot vines have been strategically planted on well drained sites to produce vines with low vigour. Careful irrigation control and management of the vineyard promotes well balanced vine canopies, thereby maximising fruit quality. Winemaking/Viticulture Fermentation was carried out in a combination of static and rotary fermenters under warm temperature conditions for a period of 6 days. This creates balance between extracting the appropriate tannins for wine structure, and retaining fruit drive and aromatics in the final blend. The wine is stored at 6°C post fermentation to retain natural colour and aromatics of the variety.Winemaker’s Comments Growing conditions remained warm and dry and along with controlled irrigation of the vines, this has allowed the healthy crop of grapes to ripen slowly and evenly. Vintage Conditions

The growing season was one of the wettest on record, replenishing the soil moisture content and setting the vines up very well. The wet conditions were capped off by a cooler than average spring and early summer. Temperatures normalized at the start of February, with the ensuing long, cool ripening period resulting in lovely fruit flavours and natural acidity. Viticulture/ Winemaking Our Smith’s vineyard is home to some of the most exciting clones of Merlot in Australia; the Argentinean sourced 8R and Italian Q45-14. Planted in 2003 we are starting to see the fruit mature beautifully. The use of these clones combined with carefully considered viticulture and winemaking practices are the foundation of this special wine. A large portion of this wine is created by fermenting “berries in the barrel”. Three tonnes of handpicked Merlot was destemmed into French barriques without crushing the berries. Whole berry fermentation minimises the tannin extraction and creates a style of Merlot that is powerful yet generous and flavoursome without harsh tannins.Ancient and secluded, Wrattonbully is one of Australia’s most exciting viticultural discoveries of recent times. Overall the Great Southern saw an excellent growing season and 2014 harvest. The season was characterised initially by unseasonally strong winds leading to some slight inflorescence damage. These conditions subsided in the two weeks prior to flowering however and much of the Great Southern saw good fruit set. Moderate rainfall during the early growing season was welcome on the whole but excess moisture did provide a small amount of disease pressure. Later in the season however, the region saw particularly dry conditions with very little rainfall in the two months leading in to harvest and presenting some challenges in particular for dry grown vineyards. A typical strong diurnal effect was observed, with cold nights and warm days leading to a long,uniform slow ripening period.

This single vineyard has become one of Australia’s most respected cool climate Sauvignon Blanc and Chardonnay producers. Our parcels of fruit receive high input viticulture, hand-pruning, shoot thinning, leaf plucking, bunch thinning, multiple wire-lifts, low cropping levels and hand picking. The Vineyard is under the ownership of Matthew Hill-Smith and his daughter Christobel, representing seven generations of continuous Hill-Smith family winemaking since 1849. Point Eight refers to the total plantings of Shiraz on this single vineyard being .8 of a hectare. After hand picking, 90% of the fruit was destemmed and 10% left as whole bunches. The fruit was fermented in small open fermenters which were hand plunged daily before being basket pressed and matured in French Oak barrels for approximately 11 months. Marko’s second vintage of Shiraz is sourced from point eight of a hectare. The wine displays dark fruits of plum and rhubarb with an uncanny coffee and chocolate nose. (264158-1)
