Viticulture

- Trained onto two wire vertical trellises with both wires mechanically pruned back to 2 buds. The canopy is managed through reduced water to restrict its vigour and increase both colour and flavour intensity. Vinification - After night harvesting the Merlot grapes were crushed into static fermenters and inoculated with AWRI yeast. Controlled fermentation occurred over six days, commencing at 24°C reducing to 20°C. Gentle Pump-overs occurred four times daily to maximise the extraction of colour whilst still retaining a soft juicy palate structure. Pump-overs were reduced to twice daily towards the end of fermentation to minimise seed tannin extraction. To avoid any harsh tannins and bitterness only free run and first pressings were used in this blend. After pressing the wines were settled before racking onto French oak for 3 months. (271633-3)

WINEMAKING

Premium parcels of Merlot fruit were fermented in rotary and static fermenters. Following fermentation on skins for seven to ten days, they were gently pressed. The wine was matured in French oak for 6 months before blending and bottling, the resulting wine has excellent depth of colour, richness and complexity. VINTAGE A mild spring followed by a classic warm and dry summer lead to outstanding quality across all varieties in Vintage 2018. These mild and dry conditions, whilst shaping exceptional fruit, saw a slight reduction in volume crushed than in previous years. Our vineyard and winemaking teams have worked passionately throughout Vintage 2018 to craft amazing wines with great colour, and flavour intensity that will enrich life’s everyday moments. Vintage Conditions

Weather conditions were mild during summer, with a few short periods of hot weather. Generally, conditions during the majority of the ripening period were ideal, with mild day time temperatures and cold nights, all conducive to excellent flavour development and the retention of natural acidity in the fruit. A great vintage! Winemaking Picked in the cool of the morning and open top fermented. Hand plunged 3-4 times a day to extract rich colour and a complex mid-palate. Matured for 18 months in a combination of French and American oak. Penthouse Wines is a collaboration between John Crossland of the Central Coast of California, and Randal Tomich of South Australia. Their winemaking partnership is world class. All wines are made in the vineyard. Windy Peak wines are made at De Bortoli's Dixon's Creek winery from carefully selected fruit grown in the Yarra Valley, King Valley and other regions. The wines are generous in flavour with fine grained texture, perfect for bringing out the best in food. Fruit is sourced from carefully selected parcels of Shiraz grown on the red volcanic soils of Northern Heathcote. Fruit is harvested at 14.0-14.5 baume to achieve a balance of fruit ripeness and balanced acidity. Grapes are destemmed and crushed into both static and rotary fermenters. The resultant wine is then fermented for up to two weeks on skins prior to pressing and racking. A third of the blend is matured for 5 months in older casks and the remainder stays in tank for freshness and brightness.

The grapes were fermented at cool temperatures for a period of 5-7 days. This allows the fruit flavours to be nurtured and entables retention of varietal characteristics. In the not so distant past inland Australia once shimmered in the scorching midday sun. Vast tracts of land were covered with a sea of grey-green foliage from the many types of saltbush plants. Saltbush derives its name from the salt that the plant retains in its leaves. Much of that land is now cleared for agricultural and horticulture including vineyards.The beauty of saltbush is that the plant is incredibly salt tolerant. They live for years and survive through all seasons throughout the year and it doesn't matter whether you get 50 points of rain in January or July, they will thrive.Herds of wild herbivores would move into a stand of saltbush and defoliate the plants as they consumed the leaves, then they moved on. In more recent times saltbush sustained the herds of introduced cattle and sheep in particular. The sheep has become an Australian icon and indeed the country, for a time, rode on the sheep’s back. Images spring to mind of Australia’s historic pastoral characters such as “Saltbush Bill” come into mind and the legend of Sir Sydney Kidman. (270745-10)

Situated on the banks of the Murray River, the Oxford Landing vineyard produces grapes perfect for fresh and varietal wines. The Oxford Landing Merlot vines have been strategically planted on well drained sites to produce vines with low vigour. Careful irrigation control and management of the vineyard promotes well balanced vine canopies, thereby maximising fruit quality. Winemaking/Viticulture Fermentation was carried out in a combination of static and rotary fermenters under warm temperature conditions for a period of 6 days. This creates balance between extracting the appropriate tannins for wine structure, and retaining fruit drive and aromatics in the final blend. The wine is stored at 6°C post fermentation to retain natural colour and aromatics of the variety.Winemaker’s Comments Growing conditions remained warm and dry and along with controlled irrigation of the vines, this has allowed the healthy crop of grapes to ripen slowly and evenly. The Merlot harvest commenced in the last week of February, which is right on average, and proceeded for the next month in almost perfect conditions.

The growing season was one of the wettest on record, replenishing the soil moisture content and setting the vines up very well. The wet conditions were capped off by a cooler than average spring and early summer. Temperatures normalized at the start of February, with the ensuing long, cool ripening period resulting in lovely fruit flavours and natural acidity. Viticulture/ Winemaking Our Smith’s vineyard is home to some of the most exciting clones of Merlot in Australia; the Argentinean sourced 8R and Italian Q45-14. Planted in 2003 we are starting to see the fruit mature beautifully. The use of these clones combined with carefully considered viticulture and winemaking practices are the foundation of this special wine. A large portion of this wine is created by fermenting “berries in the barrel”. Three tonnes of handpicked Merlot was destemmed into French barriques without crushing the berries. Understandably some excitement surrounding the release of this wine. Scooping the pool at the 2015 Hunter Valley Wine Show with 5 trophies is a massive achievement. Tasting the wine it is easy to see why. A wine of great poise and is it as good as the 1998 and 1986? Time will tell but it is a very, very good Shiraz.Chief Winemaker Iain Riggs made the comment during vintage 2014 that he thought in 32 years there were no more surprises left. Except of course starting to pick Semillon on the 8th of January and Shiraz one month later.Once upon a time, before the private irrigation scheme, some Shiraz was picked in late January but Semillon was always early February. Not so any more. The winter and the spring of 2013 were very dry, in fact 207mm in the last 5 months of the year. Lower crop and low foliage equals earlypicking except vintage 2014 which was not too dissimilar to 2000, except 2014 had perfectly ripe tannins at much lower sugar levels. An effortless high quality vintage for the winemakers.

In the not so distant past inland Australia once shimmered in the scorching midday sun. Vast tracts of land were covered with a sea of grey-green foliage from the many types of saltbush plants. Saltbush derives its name from the salt that the plant retains in its leaves. Much of that land is now cleared for agricultural and horticulture including vineyards.The beauty of saltbush is that the plant is incredibly salt tolerant. They live for years and survive through all seasons throughout the year and it doesn't matter whether you get 50 points of rain in January or July, they will thrive.Herds of wild herbivores would move into a stand of saltbush and defoliate the plants as they consumed the leaves, then they moved on. In more recent times saltbush sustained the herds of introduced cattle and sheep in particular. The sheep has become an Australian icon and indeed the country, for a time, rode on the sheep’s back. Images spring to mind of Australia’s historic pastoral characters such as “Saltbush Bill” come into mind and the legend of Sir Sydney Kidman. (270745-7)

OENOLOGY - SHIRAZEstate Grown – Single Vineyard“The best wines are grown in the vineyard”We live by that adage.No fruit is introduced from outside our own Estate.The grapes are harvested at night under optimum conditions and is in the winery before the sun comes up..The fruit was crushed and de-stemmed in a roller crusher and all stalks removed.We do not add SO2 prior to fermentation. Acid, if necessary, is adjusted by addition of Tartaric Acid.A neutral but vigorous yeast is introduced to initiate the fermentation process.An open fermentation system is utilized.Fermentation takes place in stainless steel static fermenters where the must is pumped over twice per day and the temperature controlled to achieve a fermentation rate of 1.5 to 2 Baume per day.When fermentation reaches 1.5 Baume the ferment is pressed and transferred to American Oak Hogsheads (300l) where primary fermentation is completed.The wine is then racked and returned to French and American Oak Hogsheads to undergo malolactic fermentation naturally. This gives it good length and a more integrated palate.Post malolactic fermentation SO2 is added at a rate of 40 ppm. The wine is then allowed to mature for approximately 12 months on oak prior to final blending, filtering and bottling. We use only 10 to 15% new oak each year, predominantly American with some French, re-using them for 4-5 years, so that oak does not dominate the varietal soft fruit Shiraz flavours.Further maturation occurs post-bottling (272759-1)
