Composition

Merlot 50%, Cabernet Sauvignon 42%, Cabernet Franc 6% Winemaking The grapes were harvested from the respective vineyards and transported to our Riverview winery were they were crushed to open topped stainless steel fermentation vessels and inoculated with a range of yeast strains. The ferments were pumped over several times per day until dry and then allowed from 2 to 5 days extended maceration. The wine was then pressed off the skins and some was put to barrel where it was aged for 12 months before blending with components which had been matured in stainless steel. The wine was then transported by road tanker to our Katikati winery for final blending and finishing. Bottling was in November2018. (266247-4)

Winemaking

- Premium parcels of Merlot fruit were fermented in rotary and static fermenters. Followingfermentation on skins for seven to ten days, they were gently pressed. The wine was matured on French oak for 6 months before blending and bottling, the resulting wine has excellent depth of colour, richness and complexity. Vintage - The wet spring followed by a mild summer lead to a later and compressed harvest for all varieties this year. Our vineyard and winemaking teams worked tirelessly during vintage 2017 to ensureall varieties were harvested at optimal flavour development, producing elegant wines with lower alcohol levels which we are sure will delight our consumers. Vintage

2017 vintage started late, two to three weeks later than the preceding couple of years. The reason for this was the mild, cool spring weather experienced all across the southern part of the state. During the middle and latter part of March the South-West region including Margaret River experienced a very unusual amount of rain and very cool weather, ripening over this period was very slow. The first suggestions of worry started to appear in growers eyes. Of recent history Margaret River has experienced very dry conditions in March and early April with the season breaking mid to late April, not a problem with all the grapes picked. But this year the concern was that if the season broke in mid April all the red grapes would be still on the vine. However anyone that lived though the late April and early May in the South-West of Western Australia will testify that never had we had a better, warmer early autumn. It was simply perfect; cool crisp mornings and evenings but beautiful warm and sunny days; not too hot, textbook conditions for great ripening especially for the red varieties. Winemaking Grapes were harvested at optium ripeness. Fermentation in open topped vessels with traditional pump over cap management has produced a wine with loads of fruit flavours and soft tannins providing structure without astringency. Maturation in French oak barriques for 10 months adds further complexity and structure without dominating the fruit. (265269-1)

Vintage Conditions

Weather conditions were mild during summer, with a few short periods of hot weather. Generally, conditions during the majority of the ripening period were ideal, with mild day time temperatures and cold nights, all conducive to excellent flavour development and the retention of natural acidity in the fruit. A great vintage! Winemaking Picked in the cool of the morning and open top fermented. Hand plunged 3-4 times a day to extract rich colour and a complex mid-palate. Matured for 18 months in a combination of French and American oak. Penthouse Wines is a collaboration between John Crossland of the Central Coast of California, and Randal Tomich of South Australia. Their winemaking partnership is world class. All wines are made in the vineyard. Their vineyard management and vineyard construction techniques are unrivalled and employed by leading wineries such at Robert Mondavi, Silver Oak and Ta Kalon Vineyard Napa. (266642-1)

Viticulture

- Trained onto two wire vertical trellises with both wires mechanically pruned back to 2 buds. The canopy is managed through reduced water to restrict its vigour and increase both colour and flavour intensity. Vinification - After night harvesting the Merlot grapes were crushed into static fermenters and inoculated with AWRI yeast. Controlled fermentation occurred over six days, commencing at 24°C reducing to 20°C. Gentle Pump-overs occurred four times daily to maximise the extraction of colour whilst still retaining a soft juicy palate structure. Pump-overs were reduced to twice daily towards the end of fermentation to minimise seed tannin extraction. To avoid any harsh tannins and bitterness only free run and first pressings were used in this blend. After pressing the wines were settled before racking onto French oak for 3 months. (265704-3)

The growing season was one of the wettest on record, replenishing the soil moisture content and setting the vines up very well. The wet conditions were capped off by a cooler than average spring and early summer. Temperatures normalized at the start of February, with the ensuing long, cool ripening period resulting in lovely fruit flavours and natural acidity. Viticulture/ Winemaking Our Smith’s vineyard is home to some of the most exciting clones of Merlot in Australia; the Argentinean sourced 8R and Italian Q45-14. Planted in 2003 we are starting to see the fruit mature beautifully. STYLEThe 2012 Jester Cabernet is bright and deeply flavoured with concentrated varietal character. We use the north eastern Italian technique of air drying twenty percent of the grapes for six weeks prior to fermentation. This concentrates flavour and adds a lovely fine grain tannin structure. Jester Cabernet is made for early appreciation, delivering excellent quality for the price.VINEYARDOur Jester Cabernet vineyards are located at the southern end of McLaren Vale, close to the town of Willunga. The soil here is mostly black Biscay clay and sits above ancient Gnaltinga formation bedrock. This clay topsoil holds water in winter and spring leading to strong growth. In summer it becomes very dry, so dry it cracks up stressing the vines which leads to intense flavour. A combination of cool sea breezes and gully winds help to temper the warm summer days giving ideal conditions for growing fruit of intensity and balance.2012 VINTAGE2012 was a fantastic vintage for McLaren Vale, producing deeply flavoured wines with poise and balance. Budburst was early and some inclement weather in flowering led to poor fruit set which resulted in low yields at harvest. Summer saw average temperatures but no heat spikes, and was quite dry. In combination with the low yields this led to harvest being four weeks earlier than the cooler, wetter 2011. Cabernet fruit ripened quickly in February, but a significant rainfall event at the end of the month provided the vines with a much needed drink and freshened the grapes perfectly for harvest at the end of March.WINEMAKINGApproximately twenty percent of the grapes used in the Jester Cabernet are dried for six weeks prior to fermentation. The drying process concentrates the flavour and provides a fine tannin structure to the wine. This technique is borrowed from the Valpolicella region of north eastern Italy where it is used to make Amarone wine. The remaining grapes are fermented on skins for six to ten days, at cool temperatures, to enhance pure berry fruit. The wine is stored in old oak barrels, mainly French, for ten months before the blend is assembled and the wine bottled with minimal fining or filtration. (265762-14)
