Bodega Catena have long believed that every wine begins in the vineyard, pioneering a research project into the microclimates of Mendoza. Through the planting of select clones on various blocks, Bodega Catena were able to identify the ideal locations. Sites which are just a few kilometers apart can have vast differences in altitude and possess markedly different microclimates. The same varietal and even the same clone, can exhibit distinct aromatic and flavour profiles. All vines are all managed by hand and are trained to produce extremely low yields. This wines are made in very limited quantities, fruit is micro fermented in new French oak barriques and treated to an extended ageing in new French oak.

Viticulture

- Trained onto two wire vertical trellises with both wires mechanically pruned back to 2 buds. The canopy is managed through reduced water to restrict its vigour and increase both colour and flavour intensity. Vinification - After night harvesting the Merlot grapes were crushed into static fermenters and inoculated with AWRI yeast. Controlled fermentation occurred over six days, commencing at 24°C reducing to 20°C. Gentle Pump-overs occurred four times daily to maximise the extraction of colour whilst still retaining a soft juicy palate structure. Pump-overs were reduced to twice daily towards the end of fermentation to minimise seed tannin extraction. To avoid any harsh tannins and bitterness only free run and first pressings were used in this blend. After pressing the wines were settled before racking onto French oak for 3 months. (264168-3)

Grape varieties

- 93% Shiraz, 4% Cabernet Sauvignon, 2% Merlot Vinification - After night harvesting the Shiraz grapes were crushed into static fermenters. After crushing the must was inoculated with AWRI 796 yeast. - Selected batches of Shiraz fruit were crushed and co-fermented with Viognier. Following fermentation on skins for five to seven days, the ferments were membrane pressed and matured inFrench oak before blending and bottling. The resulting wine has excellent depth of colour, richness and complexity. Vintage - A mild spring followed by a classic warm and dry summer lead to outstanding quality across all varieties in Vintage 2018. These mild and dry conditions, whilst shaping exceptional fruit, saw a slight reduction in volume crushed than in previous years. Our vineyard and winemaking teams have worked passionately throughout Vintage 2018 to craft amazing wines with great colour, and flavour intensity that will enrich life’s everyday moments.
