Merlot 50%, Cabernet Sauvignon 42%, Cabernet Franc 6% Winemaking The grapes were harvested from the respective vineyards and transported to our Riverview winery were they were crushed to open topped stainless steel fermentation vessels and inoculated with a range of yeast strains. The ferments were pumped over several times per day until dry and then allowed from 2 to 5 days extended maceration. The wine was then pressed off the skins and some was put to barrel where it was aged for 12 months before blending with components which had been matured in stainless steel. The wine was then transported by road tanker to our Katikati winery for final blending and finishing. Bottling was in November2018. (266247-4)

Vietti Barolo Castiglione 2014 (6 x 750mL), Piedmont, Italy.

The grapes are selected from small vineyards spread in the Barolo region. The vines are between 7 and 40 years old, planted in a clay-limestone soil. Plants are trained with guyot method, with an average density of roughly 4500 units per hectare. All the different crus are vinified and aged separately with slightly different processes to underline the singular characteristics of each parcel and terroir. Fermentation occurs in stainless steel with daily cap submersion for extraction of flavor and color.

Cuttaway Hill Merlot 2014 (12 x 750mL),

A cool primary fermentation in stainless steel on skins for 10 days followed by full malolactic fermentation in selected medium toast French and American hogsheads for 16 months. Final blending with a light fining and filtering then sterile bottled under a screwcap finish.
