Best shared with family and friends, this is a Cabernet with great personality and generosity. CREATION The 2014 vintage produced high quality wines with great colour, and bright, pure fruit flavours. Twenty per cent of the fruit is dried using the ancient Italian appassimento technique prior to fermentation, for approximately 7-8 weeks. The remaining grapes are fermented on skins for six to ten days, at cool temperatures to enhance pureberry fruit. History

The “S” depicted on the front label represents the colours of vibrant and fertile soil found in South Australia’s Langhorne Creek wine region. Famous around the world, South Australia produces superb red wines and our Sheppards Lane Cabernet Sauvignon is no exception. Region Langhorne Creek has a cool maritime climate, notably cooler than McLaren Vale and the Barossa. This is due to a wind known as the Lake Doctor coming off Lake Alexandrina travelling across the Antarctic and Southern Ocean to the Langhorne Creek vines. Soil throughout the region is predominantly deep, alluvial sandy loams, with patches of black, self-mulching clays. Vintage The 2018 Langhorne Creek vintage was excellent. Winter had above average rainfall, which reduced as the spring months wore on. Summer was reasonably dry and hot, with a couple of downpours helping canopy maintenance. Temperatures were warmer than average, however the summer breeze provided cool nights allowing flavour development. Cabernet Sauvignon was particularly strong, with moderate yields and excellent quality. (268368-5)

Grape varieties

- 92% Cabernet Sauvignon, 5% Petit Verdot, 2% Merlot Viticulture - Trained onto two wire vertical trellises with both wires mechanically pruned back to 2 buds. The canopy is managed through reduced water to restrict its vigour and increase both colour and flavour intensity. Vinification - After night harvesting the Cabernet Sauvignon grapes were crushed separately into static fermenters and inoculated with CSM yeast. Controlled fermentation occurred over seven days, commencing at 24°C reducing to 20°C. Gentle Pump-overs occurred three to four times daily to maximise the extraction of colour whilst still retaining a soft juicy palate structure. Pump-overs were reduced to twice daily towards the end of fermentation to minimise seed tannin extraction. To avoid any harsh tannins and bitterness only free run and first pressings were used in this blend. After pressing the wines were settled before racking onto French oak for 3 months. (268502-2)

Black / purple in colour, this elegant, medium weight wine displays an aroma of blackcurrant, violets, mint, red currant and guava notes. The palate exhibits briary blackberry, cranberry, quince and ripe red capsicum, with a tinge of mint chocolate, and cherries, all enhanced by firmly structured fine grain tannins, subtle nutty oak and a long lingering finish. Vintage Conditions

Sourced entirely from Company-owned vineyard estates, the condition of the Cabernet Sauvignon grapes received at the crusher was exceptional. Most notable were the array of flavours and mouth puckering fruit tannins. About This Wine The quality of the fruit lent itself to extended skin contact for optimum extraction of colour, so after crushing the fruit was fermented on skins in temperature-controlled stainless steel for between ten and twelve days. The depth of fruit flavour and bold tannin structure achieved meant that from the beginning this wine was built to last. Fermentation was completed in an assortment of oak and stainless steel, with French and American oak staves, hogshead and barriques used. Some individual parcels of wine remained in wood for up to 18 months, with some parcels aged with the judicious use of specially toasted oak staves. The winemaking process was completed with the assessment and grading of all the separate components before assemblage of the final blends. (267687-7)

In the not so distant past inland Australia once shimmered in the scorching midday sun. Vast tracts of land were covered with a sea of grey-green foliage from the many types of saltbush plants. Saltbush derives its name from the salt that the plant retains in its leaves. Much of that land is now cleared for agricultural and horticulture including vineyards.The beauty of saltbush is that the plant is incredibly salt tolerant. They live for years and survive through all seasons throughout the year and it doesn't matter whether you get 50 points of rain in January or July, they will thrive.Herds of wild herbivores would move into a stand of saltbush and defoliate the plants as they consumed the leaves, then they moved on. In more recent times saltbush sustained the herds of introduced cattle and sheep in particular. The sheep has become an Australian icon and indeed the country, for a time, rode on the sheep’s back. Images spring to mind of Australia’s historic pastoral characters such as “Saltbush Bill” come into mind and the legend of Sir Sydney Kidman. (267920-6)

Vintage

Following the driest July ever recorded in the South West, early spring conditions saw excellent budbreak and steady vine growth, as frequent rainfall events ensured good soil moisture prior to flowering. Late November brought thunderstorms and extreme winds to the region which resulted in reduced yields across most varieties - particularly Sauvignon Blanc and Cabernet Sauvignon which were reduced by around 30%. The summer was very warm and dry with some bursts of heat during late December which advanced the development of the fruit. With warm and dry conditions continuing into February, many blocks reached optimal flavour at the same time, resulting in a very compressed harvest period for the whites. Our first harvest of Chardonnay was on the 6th of February which is nearly 10 days earlier than our long term average. Our Cabernet Sauvignon and Merlot fruit was harvested during late March and early April which is quite typical for these varieties. All of the fruit was harvested in pristine condition with great vibrancy and excellent flavour profiles ensuring 2013 will produce another excellent crop of wines. Vineyard Voyager Estate Girt by Sea is produced primarily from Cabernet Sauvignon and Merlot grapes sourced from our North Block and Weightmans vineyards. The gentle rolling gravelly hills provide the perfect soils for growing vines with excellent natural balance and moderate yields. All of our vineyards are managed following a sustainable and natural approach to viticulture, with a focus on building a healthy and resilient vineyard through the use of natural products and the encouragement of bio diversity. There is also a component of Wilyabrup Cabernet Sauvignon and Merlot utilised in this blend from two premium selected vineyards. The Estate vineyards are planted to four different clones of Cabernet Sauvignon which contribute slightly different fruit profiles to the final wine. The vines are all meticulously trained to a vertical shoot positioned canopy and are hand pruned, shoot thinned and green thinned prior to harvest. (264940-3)

Fruit is hand-picked quite early (around 13° Baume) and placed onto 10kg drying crates. The grapes are left to dry in our temperature and humidity controlled sheds for approximately six weeks. This follows the traditional Amarone techniques, resulting in a 30% loss in bunch weight. After drying, the wine is fermented on skins for two weeks and then is left for a further three weeks before pressing. This extended time on skins actually helps to soften the wine as the small, aggressive tannins are bound up in the process leaving only larger, silky tannins in the wine. The wine is then stored in oak barrels for ten months before careful barrel selection precedes blending and bottling. (268555-20)

Winemaking

The Cabernet and Shiraz parcels were fermented warm and pumped over twice daily. They were pressed separately at the end of ferment and blended post malolactic ferment. The wine then had 9 months French oak maturation post ferment, prior to racking, light fining and bottling.Our range of wines are crafted from 5 different grape varieties that blend together in perfect harmony, much like the close and lifelong interaction between you and your closest five friends. The Five Friends relationship between our Semillon, Sauvignon Blanc, Chardonnay, Cabernet and Shiraz grapes is formed in the cool climate and abundant sunshine of our Vineyard Estate from vines that yield the ideal blend of generous flavour and supple texture.
