Sixty Spokes Cabernet Merlot 2016 (12 x 750mL) Central Ranges

Fruit crushed with open rollers and inoculated directly within 6-12hrs. Temperature controlled at 24-28C, with minimum 2 pump overs per day whilst fermenting. Fruit pressed off skins before becoming dry (low baume), onto oak (mainly French) for minimum of 6 months. Wine is racked and returned during oak maturation, allowing a small bit of air to freshen the wine, and allow it to soften. After oak maturation, wine is blended, fined and ready for filtration prior to bottling.Each Sixty Spokes wine draws its sophistication from the complex fruit flavours generated by the cool climate growing conditions. Made from low yielding grapevines grown in our ancient volcanic soils at an elevation of 550 metres in the rolling hills of the Central Ranges of New South Wales. Hutton Vale Cabernet Sauvignon 2013 (6 x 750mL), Eden Valley. SA.

Hardly anyone was planting Cabernet in the Barossa when the Angas family was establishing their vineyards in the 1960s, so it’s no surprise it took until the late 1990s for the variety to find its way onto Hutton Vale Farm. Whilst it may have been a late starter, the quality of the fruit grown there suggests it has a long future in this part of the world.The Cabernet block is about 5 acres, planted in 1998 on a sloping five acre site where the lean and tough environment dictates low yields – even by Hutton Vale Farm standards…frequently less than a tonne to the acre. Growing and harvest conditions in 2012 were close to ideal and the fruit was handpicked in perfect conditions in mid March. The fruit was destemmed and fermented on skins for 6 days in small open fermenters with twice daily pump overs, before maturation in an even split of new and seasoned French hogsheads for 24 months.

Tyrrell's `Stevens Single Vineyard` Shiraz 2016 (6 x 750mL) Hunter Valley

This wine region is made up of the upper Hunter and lower Hunter, and is linked by the Hunter River. Settlement commenced in the Hunter Valley region in 1826. In the 20th century, expansion occurred slowly until the boom period of the 1960s and 1970s. The majority of the vineyards in the lower Hunter are situated on the extreme southern side of what is a broad and relatively flat valley nestled into the foothills of the Brokenback Range.The terrain is gently to markedly undulating, bordered to the north, west and south-west by the Great Dividing Range. The summer climate in the Hunter is humid, with high cloud cover and high rainfall. A break in the Great Dividing Range allows summer sea breezes to penetrate the valley. Rainfall is often highest just prior to and during harvest in February.The vintage period is one of the earliest and shortest in Australia with harvest commencing in late January in the lower Hunter. Yields are generally low so grape quality is good, and there is an inexplicable affinity between the terroir and the semillon and shiraz grapes for which the area is justly renowned.With our first plantings in 1879, Pokolbin remains the home of Tyrrell’s vineyards and has become recognised as some of the Hunter Valley’s finest vineyard land and the basis for development of our premium wines.
