Sourced from our estate Malpas Road Vineyard, planted in 1991 on land which was originally referred to as ‘Bay of Biscay’. This is an obvious reference to the relatively infertile cracking, grey-black soil upon which our hand-tended Shiraz patch does its work. The fissures which occur as the black soil cracks apart, sever surplus root structure; a process which naturally lessens vigour and enhances ultimate grape quality. Other fruit parcels were sourced from the slightly higher elevated vines of the Penny’s Hill Vineyard. Detailed canopy management, judicious irrigation and passionate viticultural practices in both these high class vineyards contribute to this outstanding Shiraz.

Windy Peak wines are made at De Bortoli's Dixon's Creek winery from carefully selected fruit grown in the Yarra Valley, King Valley and other regions. The wines are generous in flavour with fine grained texture, perfect for bringing out the best in food. Fruit is sourced from carefully selected parcels of Shiraz grown on the red volcanic soils of Northern Heathcote. Fruit is harvested at 14.0-14.5 baume to achieve a balance of fruit ripeness and balanced acidity. Grapes are destemmed and crushed into both static and rotary fermenters. The resultant wine is then fermented for up to two weeks on skins prior to pressing and racking. A third of the blend is matured for 5 months in older casks and the remainder stays in tank for freshness and brightness.

With almost ideal weather conditions for whites exceptional fruit has been produced showing intense varietal flavours that are typical Margaret River. Aromatic varieties were outstanding with fresh citrus, lemon blossom and stone fruit on the nose and palate balanced off by crisp acidity. The temperature cooled off toward the end of February providing ideal weather conditions for the red varietals to fully ripen their flavour profiles and tannins. Once again there was a huge amount of Marri blossom leading into vintage therefore Silvereye bird damage was minimal. Flavour intensity was further benefited by the fact that cropping levels were reduced by around 30% across the region due to storms in early spring.

Situated on the banks of the Murray River, the Oxford Landing vineyard produces grapes perfect for fresh and varietal wines. The Oxford Landing Merlot vines have been strategically planted on well drained sites to produce vines with low vigour. Careful irrigation control and management of the vineyard promotes well balanced vine canopies, thereby maximising fruit quality. Winemaking/Viticulture Fermentation was carried out in a combination of static and rotary fermenters under warm temperature conditions for a period of 6 days. This creates balance between extracting the appropriate tannins for wine structure, and retaining fruit drive and aromatics in the final blend. The wine is stored at 6°C post fermentation to retain natural colour and aromatics of the variety.Winemaker’s Comments Growing conditions remained warm and dry and along with controlled irrigation of the vines, this has allowed the healthy crop of grapes to ripen slowly and evenly. The Merlot harvest commenced in the last week of February, which is right on average, and proceeded for the next month in almost perfect conditions.

Bodega Catena have long believed that every wine begins in the vineyard, pioneering a research project into the microclimates of Mendoza. Through the planting of select clones on various blocks, Bodega Catena were able to identify the ideal locations. Sites which are just a few kilometers apart can have vast differences in altitude and possess markedly different microclimates. The same varietal and even the same clone, can exhibit distinct aromatic and flavour profiles. All vines are all managed by hand and are trained to produce extremely low yields. This wines are made in very limited quantities, fruit is micro fermented in new French oak barriques and treated to an extended ageing in new French oak.

Vintage Conditions

The growing season was one of the wettest on record, replenishing the soil moisture content and setting the vines up very well. The wet conditions were capped off by a cooler than average spring and early summer. Temperatures normalized at the start of February, with the ensuing long, cool ripening period resulting in lovely fruit flavours and natural acidity. Viticulture/ Winemaking Our Smith’s vineyard is home to some of the most exciting clones of Merlot in Australia; the Argentinean sourced 8R and Italian Q45-14. Planted in 2003 we are starting to see the fruit mature beautifully. The use of these clones combined with carefully considered viticulture and winemaking practices are the foundation of this special wine. A large portion of this wine is created by fermenting “berries in the barrel”. Three tonnes of handpicked Merlot was destemmed into French barriques without crushing the berries. Whole berry fermentation minimises the tannin extraction and creates a style of Merlot that is powerful yet generous and flavoursome without harsh tannins.Ancient and secluded, Wrattonbully is one of Australia’s most exciting viticultural discoveries of recent times. Blessed with the celebrated soil profile of terra rossa over limestone, the region is rapidly establishing a high class reputation for wines of depth and elegance. 2017 was a later and cooler year in the Yarra Valley. Selected Cabernet Sauvignon and Merlot parcels of fruit were chosen to complement each other for this wine, with Cabernet Sauvignon selected on the basis of structure and length, Merlot to give fruit weight and softness across the mid palate. Fermentation took place for between 10 – 14 days with temperatures ranging from 18 - 28°C. During fermentation, regular assessment of colour and tannin extraction ensured parcels were soft and fruit has driven in style. Vintage Conditions

- Winter rainfall was light yet consistent, leading in to a warm, dry spring, with good flowering and fruit set allowing for even berry development. Summer was relatively cool, with January rains providing vines with a much needed drink. Fine, mild conditions ensured long, cool ripening, resulting in fleshy, aromatic and fruit-filled wines. Maturation - 14% was matured with French oak to enhance structure and complexity, while maintaining fruit character and vibrancy. In his heyday, Wolfgang Blass was confident and charismatic – just like his wines. He pushed winemaking boundaries, revolutionising the way Australians enjoyed wine. Vintage Conditions

- Temperatures through spring, summer and into autumn were warmer thanaverage. These dry and warm conditions produced lighter weighted Shiraz crops with much smaller bunches and berries. These lighter crops were, however, concentrated and full of flavour. Winemaking/ Viticulture - Select parcels of Shiraz grapes are fermented with a small percentage ofViognier grapes, whilst some other parcels are fermented with Viognier juice, and the remainder is fermented on its own. Utilising these different fermentation options has enabled us to blend a soft and stylish wine showing subtle Viognier aromatics combined with the medium weight and finer tannin structure of Shiraz.Eden Valley has been home to Yalumba and its Shiraz since 1849. Taking the name from Yalumba’s oldest surviving centennial Shiraz vineyard, and grapes from a handful of our most loved vineyards, the Triangle Block pays testament to this history. There is great diversity across the Eden Valley; from vineyards that exhibit quite subtle fragrant aromatics and a much finer, more elegant palate to those that are more dense in style with darker brooding aromatics and palate richness. What links them all together is an underlying finesse andpurity, the hallmark of Eden Valley Shiraz. With a hint of Viognier, this wine embodies Eden Valley. (263487-1)

February was hot with daytime temperatures 3-4 degrees above average causing rapid ripening; March was quite mild allowing good ripening conditions for the balance of the vintage.The WinemakingThe fruit was crushed and de-stemmed, before being fermentation in stainless steel tanks for seven days.
