Quartz Reef Pinot Noir 2016 (6 x 750mL), Central Otago, NZ.

Hand-picked on the 23rd March and 4th April. Each clone was small batch vinified with a small percentage of whole cluster per ferment. Cold Soaked for up to 7 days before indigenous yeast fermentation kicked in. Gentleplunging each day, followed by post maceration of up to 11 days to ensure optimum fruit and tannin balance. Total time on skin; 23 days. Drained directly into selected French oak barriques (28% new) where the wine aged for 12 months during which wild malolactic fermentation occurs.The winemaking was very much in keeping with the traditional practices of the Old World. The winemaker, Rudi Bauer, has combined these techniques, and his own personal understanding, to create this wine. (260156-1)

Background of the WENDOUREE Shiraz

Tony and Lita Brady’s spectacularly individual Wendouree Shiraz has remained true to its origins since Alfred Percy Birks planted vines in 1893. It is considered by many as one of Australia’s greatest Shirazes. The vineyard is tiny, with low-yielding, beautifully formed old vines, many from the original plantings. Low input viticulture, laissez faire winemaking and maturation in about 1/3 new oak allows the wine to speak of place. These are dense, strongly flavoured wines with beautifully intense varietal fruit, massive concentration and a hallmark muscular sinewy tannin structure. The overall mass of fruit sweetness complements the toughness of the wine. A longer than usual vintage attributed to cool conditions during ripening which was welcomed by winemakers who reported the production of red as being extremely high quality. Shiraz reached full flavour ripeness, achieved excellent colour and tannin with wines exhibiting great varietal flavours and aromas. Vineyard The grapes come from the Willunga district of McLaren Vale, where the heavy grey loam soils over sandstone, intermixed with black Biscay clay, combined with the maritime climate, contribute to an even ripening period and the development of rich fruit flavours and ripe tannins. Yield is around 4 tons an acre. Vinification Each parcel of fruit for Jester is fermented on skins for 5 to 6 days at a cool temperature to enhance the pure berry fruit. The wine is then pressed and undergoes partial barrel fermentation. A natural malolactic fermentation is completed before the wine is racked. Background The family owned Mitolo Wines was established in 1999 by Frank and Simone Mitolo. Vintage

A dry winter, followed by heavy rains in spring, resulted in vines with healthy, balanced canopies on moist soils. A mild, early summer leading into a warmer period of veraison stopped vegetative growth, allowing vines to channel energy into the fruit. Hot weather conditions caused some stress in late summer, with balanced vines showing great resilience and high potential. Winemakers and growers did however observe crops to be 20-30% lower than the 2005 vintage. Reds were very fragrant with good acidity and length. Shiraz showed excellent quality. Vintage reports courtesy of the Phylloxera and Grape Industry Board of South Australia. Vineyard The vineyards are located in the Willunga district at the Southern end of McLaren Vale. The heavy grey loam soils over loam stone, intermixed with the black Biscay clay, combined with a maritime climate, contribute to an even ripening period and the development of rich fruit flavours and ripe tannins. Yield is around 4 tonnes an acre (70hl/ha). Vinification The fruit was fermented on skins at cool temperatures in order to capture and enhance the bright, pure berry fruit. The wine was then pressed and underwent partial barrel fermentation with natural malolactic fermentation occurring before the wine was racked. Style

Bright, lush and juicy, Jester Cabernet Sauvignon shows a full bodied palate and mouth filling richness. 20% of the fruit has been handled in the Amarone manner- this technique of drying fruit adds complexity and fullness and produces soft juicy tannins. Jester Cabernet is upfront and approachable for early appreciation, delivering excellent quality for the price.The vineyards are in the Willunga district in the southern end of McLaren Vale. The heavy grey loam soil over sandstone, intermixed with black Biscay clay, combined with a maritime climate, contribute to an even ripening period and the development of rich fruit flavours and ripe tannins. Vintage A thirteen day heat wave in late January and early February saw the 2009 Vintage begin in first week of February. Cool, dry conditions during berry ripening in most of the district were conducive to excellent flavour, colour and phenolic development. In general, the timing of the heatwave affected vineyards with lighter canopies and crop loads and those on thin or highly reflective soils and crops in the earlier ripening areas. Due to the early start to vintage, there were some difficulties handling both reds and whites through the wineries and this resulted in overall volume in the region being below average. Cabernet Sauvignon excelled, showing strong varietal characters, full bodied, balanced palate weight and an amazing perfume. Winemaking 20% of the grapes were left on 10kg drying racks for 5 weeks and 3 days, in the traditional Amarone manner, to concentrate flavour. The fruit for Jester was fermented on skins for 6 days, at cool and warm temperatures, to enhance pure berry fruit. The wine was then pressed and underwent partial barrel fermentation. Origin

A lot of love goes into our wines, and our Jester Shiraz is no exception. We affectionately refer to our Jester Shiraz as our ‘baby G.A.M.’ - reusing the same oak barrels in which our G.A.M. Shiraz was previously aged. The vineyards for the Jester Shiraz are located at the southern end of McLaren Vale, close to the seaside town of Aldinga. The combination of cool sea breezes and gully winds provide ideal conditions for growing fruit ofintensity and balance. The vines sit in heavy clay, which gives the wine powerful fruit flavours. In 2012 ideal conditions over the growing season produced a fantastic wine that speaks of its origin. The wine is full flavoured, with dark fruits and savoury black olive characters, and soft, silky tannins. Creation The 2013 vintage was a great one for us in McLaren Vale, producing deeply flavoured wines with greatenergy. The Shiraz fruit for our Jester wine is crushed immediately after being delivered to us at the winery. We allow the skin and juice mix to warm naturally over a period of several days, after which it begins fermentation. The ferment is held cool, to retain the bright primary fruit characters which appear in the resulting wine. Following ferment we carefully press the wine to separate it from the skins. The wine is then transferred into oak barrels (10% new for this vintage) where it stays for eighteen months before it hits the bottle, and then our family and friends tables.All of our Jester wines are named after Jesters of the 15th and 16th Century. For this wine, we chose a Jester who, like the wine, is often a favourite amongst its peers. Richard Tarlton drew significant attention as a favourite amongst the Jesters of Queen Elizabeth 1. Tarlton, the first to achieve national celebrity as a comedian, also boasted a successful career in the theatre as a leading member of the Queen’s Players. Hedabbled as a writer, and published a number of popular ballads and plays. The talented Jester was a complex and colourful character, much like our Jester wine. (265762-6)

The water temperature of Pacific is kept significantly colder by the Humbolt Current that flows up the Chilean coastline from Antarctica.The climate and soil conditions are almost perfect for grape growing;the influence and close proximity of cold air from the Andes and cool sea breezes cannot be overemphasised. Rainfall is restricted predominantly to the winter months, and snow-melt from the Andes provides unlimited pure water for the vineyard irrigation. Unprecedented seasonal conditions have reduced yields to a 30 year low. e 2007 harvest commenced six weeks early. e major seasonal influence on the 2007 crop was the severe drought conditions experienced across much of the country however an episode of rain in mid January improved the situation for many growers by refreshing the vines. Winemakers report that many red varieties bunch numbers were near average, however there were fewer berries per bunch than usual and the berries were small. Quality is thought to be good to excellent. Absence of disease is a primary factor in this outcome. Conditions appear to be more favourable to reds with smaller red berry size traditionally associated with higher quality through intensification of flavour and colour. Origin

A lot of love goes into our wines, and our Jester Shiraz is no exception. We affectionately refer to our Jester Shiraz as our ‘baby G.A.M.’ - reusing the same oak barrels in which our G.A.M. Shiraz was previously aged. The vineyards for the Jester Shiraz are located at the southern end of McLaren Vale, close to the seaside town of Aldinga. The combination of cool sea breezes and gully winds provide ideal conditions for growing fruit ofintensity and balance. The vines sit in heavy clay, which gives the wine powerful fruit flavours. In 2012 ideal conditions over the growing season produced a fantastic wine that speaks of its origin. The wine is full flavoured, with dark fruits and savoury black olive characters, and soft, silky tannins. Creation The 2013 vintage was a great one for us in McLaren Vale, producing deeply flavoured wines with greatenergy. The Shiraz fruit for our Jester wine is crushed immediately after being delivered to us at the winery. We allow the skin and juice mix to warm naturally over a period of several days, after which it begins fermentation. The ferment is held cool, to retain the bright primary fruit characters which appear in the resulting wine. Following ferment we carefully press the wine to separate it from the skins. The wine is then transferred into oak barrels (10% new for this vintage) where it stays for eighteen months before it hits the bottle, and then our family and friends tables.All of our Jester wines are named after Jesters of the 15th and 16th Century. For this wine, we chose a Jester who, like the wine, is often a favourite amongst its peers. Richard Tarlton drew significant attention as a favourite amongst the Jesters of Queen Elizabeth 1. Tarlton, the first to achieve national celebrity as a comedian, also boasted a successful career in the theatre as a leading member of the Queen’s Players. Hedabbled as a writer, and published a number of popular ballads and plays. The talented Jester was a complex and colourful character, much like our Jester wine. (265762-7)

The Montepulciano fruit has been sourced from two different vineyards in the Adelaide region; Amadio vineyard, between Kersbrook and Williamstown in the Adelaide Hills, located at 300m altitude, it is alsorelatively low vigour and on grey-brown loam and Pollux vineyard located in McLaren Vale, at 175m altitude on clay loam. STYLEThe 2012 Jester Cabernet is bright and deeply flavoured with concentrated varietal character. We use the north eastern Italian technique of air drying twenty percent of the grapes for six weeks prior to fermentation. This concentrates flavour and adds a lovely fine grain tannin structure. Jester Cabernet is made for early appreciation, delivering excellent quality for the price.VINEYARDOur Jester Cabernet vineyards are located at the southern end of McLaren Vale, close to the town of Willunga. The soil here is mostly black Biscay clay and sits above ancient Gnaltinga formation bedrock. This clay topsoil holds water in winter and spring leading to strong growth. In summer it becomes very dry, so dry it cracks up stressing the vines which leads to intense flavour. A combination of cool sea breezes and gully winds help to temper the warm summer days giving ideal conditions for growing fruit of intensity and balance.2012 VINTAGE2012 was a fantastic vintage for McLaren Vale, producing deeply flavoured wines with poise and balance. Budburst was early and some inclement weather in flowering led to poor fruit set which resulted in low yields at harvest. Summer saw average temperatures but no heat spikes, and was quite dry. In combination with the low yields this led to harvest being four weeks earlier than the cooler, wetter 2011. Cabernet fruit ripened quickly in February, but a significant rainfall event at the end of the month provided the vines with a much needed drink and freshened the grapes perfectly for harvest at the end of March.WINEMAKINGApproximately twenty percent of the grapes used in the Jester Cabernet are dried for six weeks prior to fermentation. The drying process concentrates the flavour and provides a fine tannin structure to the wine. This technique is borrowed from the Valpolicella region of north eastern Italy where it is used to make Amarone wine. The remaining grapes are fermented on skins for six to ten days, at cool temperatures, to enhance pure berry fruit. The wine is stored in old oak barrels, mainly French, for ten months before the blend is assembled and the wine bottled with minimal fining or filtration. (265762-14)

Vintage

A dry winter, followed by heavy rains in spring, resulted in vines with healthy, balanced canopies on moist soils. A mild, early summer leading into a warmer period of veraison stopped vegetative growth, allowing vines to channel energy into the fruit. Hot weather conditions caused some stress in late summer, with balanced vines showing great resilience and high potential. Winemakers and growers did however observe crops to be 20-30% lower than the 2005 vintage. Reds were very fragrant with good acidity and length. Shiraz showed excellent quality. Vintage reports courtesy of the Phylloxera and Grape Industry Board of South Australia. Vineyard The vineyards are located in the Willunga district at the Southern end of McLaren Vale. The heavy grey loam soils over loam stone, intermixed with the black Biscay clay, combined with a maritime climate, contribute to an even ripening period and the development of rich fruit flavours and ripe tannins. Yield is around 4 tonnes an acre (70hl/ha). Vinification 20% of the grapes were left to dry on 10 kg drying racks for 6 weeks and 5 days in the traditional Amarone manner to concentrate flavour. The fruit for Jester was fermented on skins for 6 days at cool temperatures to enhance the pure fruit berry fruit. The wine was then pressed and underwent partial barrel fermentation. Natural malolactic fermentation occurred before the wine was racked. Background Mitolo Wines is a family owned business, established in 1999. It is borne of and led by the founder and owner Frank Mitolo’s vision: to create a range of wines of individuality, integrity and utmost quality.
