With almost ideal weather conditions for whites exceptional fruit has been produced showing intense varietal flavours that are typical Margaret River. Aromatic varieties were outstanding with fresh citrus, lemon blossom and stone fruit on the nose and palate balanced off by crisp acidity. The temperature cooled off toward the end of February providing ideal weather conditions for the red varietals to fully ripen their flavour profiles and tannins. Once again there was a huge amount of Marri blossom leading into vintage therefore Silvereye bird damage was minimal. Flavour intensity was further benefited by the fact that cropping levels were reduced by around 30% across the region due to storms in early spring.

Sourced from our estate Malpas Road Vineyard, planted in 1991 on land which was originally referred to as ‘Bay of Biscay’. This is an obvious reference to the relatively infertile cracking, grey-black soil upon which our hand-tended Shiraz patch does its work. The fissures which occur as the black soil cracks apart, sever surplus root structure; a process which naturally lessens vigour and enhances ultimate grape quality. Other fruit parcels were sourced from the slightly higher elevated vines of the Penny’s Hill Vineyard. Detailed canopy management, judicious irrigation and passionate viticultural practices in both these high class vineyards contribute to this outstanding Shiraz.

Windy Peak wines are made at De Bortoli's Dixon's Creek winery from carefully selected fruit grown in the Yarra Valley, King Valley and other regions. Fruit was harvested in the cool of the night.

Winemaking Notes

Fruit is sorted and destemmed. Once crushed, the must is transferred to red fermenters where pump-overs can occur up to 3 times per day. The fruit is drained and pressed once the winemakers are happy with flavour extraction and profile. Fermentation is completed in oak barrels. Grape varieties

- 93% Shiraz, 4% Cabernet Sauvignon, 2% Merlot Vinification - After night harvesting the Shiraz grapes were crushed into static fermenters. After crushing the must was inoculated with AWRI 796 yeast. Controlled fermentation occurred over seven days, commencing at 24°C reducing to 20°C. Gentle Pump-overs occurred six times daily to maximise the extraction of colour whilst still retaining a soft juicy palate structure. Pump-overs were reduced to twice daily towards the end of fermentation to minimise seed tannin extraction. To avoid any harsh tannins and bitterness only free run and first pressings were used in this blend. After pressing the wines were settled before racking onto American oak for 3 months. (259373-1)

Shiraz grapes from selected vineyards were fermented in temperature controlled stainless steel for around 7-10 days, to maximise colour and flavour extraction. After primary fermentation the wines were membrane pressed and underwent malolactic fermentation on French and American oak before being blended and filtered prior to bottling.The mild weather conditions during the lead up to harvest together with warm January temperatures were the perfect conditions for optimalflavour development across the white varieties. The odd burst of extreme heat resulted in an early start to vintage but as the harvest progressed these conditions moderated, extending the ripening period for the reds ensuring they too reached maturity with an ideal balance of sugar, acid, colour and flavour. Winemaking

- Vine-dried grapes from our estate block 46, were fermented into concentrated flavour and richness. The fruit started to bag and pucker, created integrated fruit sugars, acid and tannins,. It was thenpassed back over already fermented Shiraz. The result is full-bodied complexity, layered with intriguing characters for a well balanced and lingering palate.1838 was the year Walter Thomson, with wife Jane, arrived in Australia and established a winemaking tradition. Faithful to his approach, our estate grown parcels are carefully tended by our vignerons to create wines of greatintensity.Double Pass Shiraz is created in the blending of two parcels of estate grown fruit. Vine dried grapes, which have richly textured and powerful complexity are fermented and then blended with already fermented estateShiraz to create the Double Pass. The BARD range celebrates the work of Australia’s best known lyric poet John Shaw Neilson who was raised in the cottage on the Hollick Neilson’s Block vineyard. Revered by his peers in the world of literature, Neilson was born in Penola in 1872, and it is thought that much of the imagery in his poetry was conjured up during his childhood experiences in the bush and wetlands around Coonawarra.The long mild growing season in the Limestone Coast provides an ideal climate for Shiraz. The spring of 2013 saw a very cool start with regular rain until late December. The warm days and cool nights experienced in Coonawarra during summer and autumn of 2014, slowed the ripening process and allowed for maximum flavour development.The fruit was picked at optimum ripeness and carefully handled to retain the flavours achieved in the vineyard. The combination of the luscious fruit flavours from Wrattonbully shiraz combined with the more restrained berry flavours of Coonawarra fruit along with the spiciness typical of the variety, has produced an elegant wine so in keeping with the Hollick Bard style. House of Plantagenet `Lancaster` Shiraz 2015 (12 x 750mL), Mount Barker, WA

Overall the Great Southern saw an excellent growing season and 2014 harvest. The season was characterised initially by unseasonally strong winds leading to some slight inflorescence damage. These conditions subsided in the two weeks prior to flowering however and much of the Great Southern saw good fruit set. Moderate rainfall during the early growing season was welcome on the whole but excess moisture did provide a small amount of disease pressure. Later in the season however, the region saw particularly dry conditions with very little rainfall in the two months leading in to harvest and presenting some challenges in particular for dry grown vineyards. A typical strong diurnal effect was observed, with cold nights and warm days leading to a long,uniform slow ripening period.
