With almost ideal weather conditions for whites exceptional fruit has been produced showing intense varietal flavours that are typical Margaret River. Aromatic varieties were outstanding with fresh citrus, lemon blossom and stone fruit on the nose and palate balanced off by crisp acidity. The temperature cooled off toward the end of February providing ideal weather conditions for the red varietals to fully ripen their flavour profiles and tannins. Once again there was a huge amount of Marri blossom leading into vintage therefore Silvereye bird damage was minimal. Flavour intensity was further benefited by the fact that cropping levels were reduced by around 30% across the region due to storms in early spring.

Windy Peak wines are made at De Bortoli's Dixon's Creek winery from carefully selected fruit grown in the Yarra Valley, King Valley and other regions. The wines are generous in flavour with fine grained texture, perfect for bringing out the best in food. Fruit is sourced from carefully selected parcels of Shiraz grown on the red volcanic soils of Northern Heathcote. Fruit is harvested at 14.0-14.5 baume to achieve a balance of fruit ripeness and balanced acidity. Grapes are destemmed and crushed into both static and rotary fermenters. Overall the Great Southern saw an excellent growing season and 2014 harvest. The season was characterised initially by unseasonally strong winds leading to some slight inflorescence damage. These conditions subsided in the two weeks prior to flowering however and much of the Great Southern saw good fruit set. Moderate rainfall during the early growing season was welcome on the whole but excess moisture did provide a small amount of disease pressure. Later in the season however, the region saw particularly dry conditions with very little rainfall in the two months leading in to harvest and presenting some challenges in particular for dry grown vineyards. A typical strong diurnal effect was observed, with cold nights and warm days leading to a long,uniform slow ripening period.

Winemaking

- Shiraz grapes from selected vineyards were fermented in temperature controlled, stainless steel tanks for around 7-10 days, to maximise colour and flavour extraction. After primary fermentation, the wines were membrane pressed and underwent malolactic fermentation in French oak, before blending filtering and bottling. Vintage - The wet spring followed by a mild summer lead to a later and compressed harvest for all varieties this year. Our vineyard and winemaking teams worked tirelessly during vintage 2017 to ensure all varieties were harvested at optimal flavour development, producing elegant wines with lower alcohol levels which we are sure will delight our consumers. Growing

- The grapes for this blend were selected from prime vineyards in two Regions. Langhorne Creek has a maritime influence which moderates the climate. The Shiraz wines from here are quite austere and tightly structured which age immaculately well into rich, intensely flavoured wines. The other region, Gundagai, lies in the foothills of the snowy mountains. The red wines from Gundagai show intense up front fruit and well-rounded mouth feel. Winemaking - Shiraz has been a focus for the winemaking team in recent years and our best batches of Shiraz were selected for this blend. We aimed for intense fruit flavours and soft supple tannins. These characteristics have been complemented by oak maturation, which has further increased the complexity of the wine. The grapes were fermented in overhead red fermenters with remontage to allow for colour and flavour extraction from the skins. This contributes to the apparent up front fruit aromas. Ageing - This wine is good to drink now but will age well for 10 years. (259645-1)

Grape varieties

- 93% Shiraz, 4% Cabernet Sauvignon, 2% Merlot Vinification - After night harvesting the Shiraz grapes were crushed into static fermenters. After crushing the must was inoculated with AWRI 796 yeast. Controlled fermentation occurred over seven days, commencing at 24°C reducing to 20°C. Gentle Pump-overs occurred six times daily to maximise the extraction of colour whilst still retaining a soft juicy palate structure. Pump-overs were reduced to twice daily towards the end of fermentation to minimise seed tannin extraction. To avoid any harsh tannins and bitterness only free run and first pressings were used in this blend. After pressing the wines were settled before racking onto American oak for 3 months. (259373-1)

The odd burst of extreme heat resulted in an early start to vintage but as the harvest progressed these conditions moderated, extending the ripening period for the reds ensuring they too reached maturity with an ideal balance of sugar, acid, colour and flavour. Vintage Conditions

- Winter rainfall was light yet consistent, leading in to a warm, dry spring, with good flowering and fruit set allowing for even berry development. Summer was relatively cool, with January rains providing vines with a much needed drink. Fine, mild conditions ensured long, cool ripening, resulting in fleshy, aromatic and fruit-filled wines. Maturation - 14% was matured with French oak to enhance structure and complexity, while maintaining fruit character and vibrancy. In his heyday, Wolfgang Blass was confident and charismatic – just like his wines. He pushed winemaking boundaries, revolutionising the way Australians enjoyed wine. Fifty years on the world has changed, but Wolf’s spirit hasn’t, continuing to motivate and encourage our next generation winemakers to uphold his legacy. The 2014 growing season was one of the wackiest in living memory! Following the low yielding 2013 vintage the season started well, but the first threat came from unseasonal late frosts. Summer was the hottest on record with 13 days recording a maximum of over 40ºC. During this period the devastating Eden Valley bushfire ignited on 17 January adjacent the Eden Valley Township, but thankfully (for us), the winds took it in an opposite direction. The hottest ever summer was followed by the wettest day since 1969 with more than 100 mm of rain falling on Valentine’s Day. Whilst some rain would have been welcome, too much of a good thing caused further loss of crop through splitting of fruit. Harvest was then on in earnest beginning with some Riesling blocks on 26 February and finishing earlier than usual with Cabernet and Shiraz on 6 April. A rollercoaster year that ultimately produced good fruit, but very low yields. (260473-1)

Spring was relatively cool with below average temperatures for the months of October and November. A heavy downpour of rain during flowering led to reduced berry number per bunch in the Grenache particularly, leading to lower yields but intense flavours. However, the rain and cool weather was short lived, with a return to below average rain from October to February and above average temperatures in December through to March. The prolonged warmer temperatures resulted in a significantly slower veraison this season, but the vines coped well under the conditions and welcomed some cooler weather late in the ripening period. Berry sizes were smaller across the vineyard and show promising fruit concentration. As always, the vineyard was entirely hand picked with each parcel of fruit carefully selected.
