De Bortoli `Windy Peak` Shiraz 2017 (6 x 750mL), Heathcote, VIC.

Windy Peak wines are made at De Bortoli's Dixon's Creek winery from carefully selected fruit grown in the Yarra Valley, King Valley and other regions. The wines are generous in flavour with fine grained texture, perfect for bringing out the best in food. Fruit is sourced from carefully selected parcels of Shiraz grown on the red volcanic soils of Northern Heathcote. Fruit is harvested at 14.0-14.5 baume to achieve a balance of fruit ripeness and balanced acidity. Grapes are destemmed and crushed into both static and rotary fermenters. The resultant wine is then fermented for up to two weeks on skins prior to pressing and racking. A third of the blend is matured for 5 months in older casks and the remainder stays in tank for freshness and brightness.

This full flavoured Shiraz was sourced from premium vineyards within the renowned winemaking region of the Barossa Valley, South Australia. This region is a warm growing season with cool nights and minimal rain. These conditions allow the fruit to obtain maximum ripeness and flavour development. Winemaking The fruit for this wine was picked at optimal ripeness in the cool of the night before being destemmed, crushed and fermented in at cool temperatures for around 10 days. This aids in fruit retention. Once fermented the wine is allowed to go through malo-lactic fermentation and then transferred to new and old French and American Hogshead barrels to mature for 18 months prior to bottling. Understandably some excitement surrounding the release of this wine. Scooping the pool at the 2015 Hunter Valley Wine Show with 5 trophies is a massive achievement. Tasting the wine it is easy to see why. A wine of great poise and is it as good as the 1998 and 1986? Time will tell but it is a very, very good Shiraz.Chief Winemaker Iain Riggs made the comment during vintage 2014 that he thought in 32 years there were no more surprises left. Except of course starting to pick Semillon on the 8th of January and Shiraz one month later.Once upon a time, before the private irrigation scheme, some Shiraz was picked in late January but Semillon was always early February. Not so any more. The winter and the spring of 2013 were very dry, in fact 207mm in the last 5 months of the year. Lower crop and low foliage equals earlypicking except vintage 2014 which was not too dissimilar to 2000, except 2014 had perfectly ripe tannins at much lower sugar levels. An effortless high quality vintage for the winemakers.

In the not so distant past inland Australia once shimmered in the scorching midday sun. Vast tracts of land were covered with a sea of grey-green foliage from the many types of saltbush plants. Saltbush derives its name from the salt that the plant retains in its leaves. Much of that land is now cleared for agricultural and horticulture including vineyards.The beauty of saltbush is that the plant is incredibly salt tolerant. They live for years and survive through all seasons throughout the year and it doesn't matter whether you get 50 points of rain in January or July, they will thrive.Herds of wild herbivores would move into a stand of saltbush and defoliate the plants as they consumed the leaves, then they moved on. In more recent times saltbush sustained the herds of introduced cattle and sheep in particular. The sheep has become an Australian icon and indeed the country, for a time, rode on the sheep’s back. Images spring to mind of Australia’s historic pastoral characters such as “Saltbush Bill” come into mind and the legend of Sir Sydney Kidman. (270745-7)

History

The “S” depicted on the front label represents the colours of vibrant and fertile soil found in South Australia’s Langhorne Creek wine region. Famous around the world, South Australia produces superb red wines and our Sheppards Lane Shiraz is no exception. Region Langhorne Creek has a cool maritime climate, notably cooler than McLaren Vale and the Barossa. This is due to a wind known as the Lake Doctor coming off Lake Alexandrina travelling across the Antarctic and Southern Ocean to the Langhorne Creek vines. Soil throughout the region is predominantly deep, alluvial sandy loams, with patches of black, self-mulching clays. Vintage The 2017 Langhorne Creek vintage was reasonably long and slow. The season had high winter and spring rainfall, which led to the extended, cool ripening phase. Harvest for reds began nearly a month later than the previous vintage. Fruit quality was excellent, with Shiraz being one of the highlights of the vintage. (268368-4)

VINEYARD INFORMATION

Like the G.A.M. Shiraz, the fruit for Savitar comes from the Lopresti vineyard, and more specifically the Chinese Block, which is located at the southern end of McLaren Vale, about 4km east of the coastal town of Port Willunga. The Savitar grapes come from one tiny section of this block: a particularly unforgiving, rocky patch of soil in the north eastern corner. Here, the vines are naturally pushed very hard, producing low yields of fruit. The berries are tiny but well-structured and packed full of flavour. WINEMAKING Each parcel of fruit for Savitar is fermented on skins for fifteen days. This slightly longer time on skins ensures a tighter overall structure setting up the framework for a wine built for ageing. Following fermentation, the wine is pressed, and transferred to oak barrels where it remains on light lees for approximately 18 months before it is carefully selected for the final blend. OENOLOGY - SHIRAZEstate Grown – Single Vineyard“The best wines are grown in the vineyard”We live by that adage.No fruit is introduced from outside our own Estate.The grapes are harvested at night under optimum conditions and is in the winery before the sun comes up..The fruit was crushed and de-stemmed in a roller crusher and all stalks removed.We do not add SO2 prior to fermentation. Acid, if necessary, is adjusted by addition of Tartaric Acid.A neutral but vigorous yeast is introduced to initiate the fermentation process.An open fermentation system is utilized.Fermentation takes place in stainless steel static fermenters where the must is pumped over twice per day and the temperature controlled to achieve a fermentation rate of 1.5 to 2 Baume per day.When fermentation reaches 1.5 Baume the ferment is pressed and transferred to American Oak Hogsheads (300l) where primary fermentation is completed.The wine is then racked and returned to French and American Oak Hogsheads to undergo malolactic fermentation naturally. This gives it good length and a more integrated palate.Post malolactic fermentation SO2 is added at a rate of 40 ppm. The wine is then allowed to mature for approximately 12 months on oak prior to final blending, filtering and bottling. We use only 10 to 15% new oak each year, predominantly American with some French, re-using them for 4-5 years, so that oak does not dominate the varietal soft fruit Shiraz flavours.Further maturation occurs post-bottling (272759-1)

Winemaking

Shiraz grapes from selected vineyards were fermented in temperature controlled, stainless steel tanks for around 5-7 days, to maximise colour and flavour extraction. After primary fermentation, the wines were membrane pressed and underwent malolactic fermentation in French oak, before blending filtering and bottling. Vintage The vintage 2019 growing season was one of the driest on record. Controlled winter watering and careful monitoring of vine stress levels was key to a successful crop. Temperatures tended to be cooler in Spring and early summer which caused a slower start to the season, as temperatures began to rise in late Jan early Feb ripening moved along a little quicker and the team were grateful the vines had sufficient canopies to protect the fruit through to maturity. The reds from this vintage show excellent depth of colour and fabulous tannins, whilst the whites display a rich array of aromatics and bright fresh fruit flavours.The Fibonacci sequence reflects the growth spirals found in nature, just like the new tendrils on a grape vine that unravel each spring. The notion being ‘what you start with determines the end result’ which is of course the foundation of all great wines. The right combination of soil and climate with grow quality grapes, the best grapes will then give you a fabulous wine. (273183-3)
