These conditions are conducive to producing full bodied Barossa Shiraz that is world famous. The fruit was perfectly ripe when picked at 14.0° Baume. After crushing into open vats the wine was fermented on skins until dry. After 7 days on skins the must was pressed and then racked to barrels for maturation. Vintage Conditions

This full flavoured Shiraz was sourced from premium vineyards within the renowned winemaking region of the Barossa Valley, South Australia. This region is a warm growing season with cool nights and minimal rain. These conditions allow the fruit to obtain maximum ripeness and flavour development. Winemaking The fruit for this wine was picked at optimal ripeness in the cool of the night before being destemmed, crushed and fermented in at cool temperatures for around 10 days. This aids in fruit retention. Once fermented the wine is allowed to go through malo-lactic fermentation and then transferred to new and old French and American Hogshead barrels to mature for 18 months prior to bottling. VINTAGE CONDITIONS

The 2017 vintage was full of challenges: ever changing and cool weather conditions delayed ripening dates on all varieties. This resulted in a longer hang-time for fruit, which ensured the flavour and aroma concentrations were exceptional. Above average winter rainfall left the dams full and soil moisture levels were stable to ensure the best conditions for quality fruit and consistent moderate / cool weather conditions maintained optimum vine balance and excellent colour, flavours and aromas in the grapes. WINEMAKING Picked in the cool of the morning and open top fermented. Hand plunged 3-4 times a day to extract rich color and a complex mid-palate. Matured for 13 months in a combination of lightly toasted French and American barriques. Owner and viticulturalist Randal Tomich has crafted these premium wines made from grapes grown on family owned properties throughout South Australia. The vineyards consistently produce outstanding fruit with great concentration and purity, which shines through in each glass. (272875-6)

After primary fermentation the wines were membrane pressed and underwent malolactic fermentation before racking on to French oak for around 12 months. VINTAGE The growing season started off well, with the winter months experiencing slightly higher than average rainfall. January and February were warm and dry, whilst March and early April had average temperatures, without extremes, which was a perfect finish to vintage. Vintage

2018 vintage was labelled an amazing vintage, with superb conditions and fruit of outstanding quality was harvested. A cold winter delivered a good dormancy. The yields were moderate, and the slow cool ripening was very even, delivering fruit with fine tannins and strong varietal flavours. Grapes produced were of outstanding quality with good colour, balanced tannins and good fruit weight. Vineyards The Quarry Collection Shiraz is sourced from Shiraz blocks in Coonawarra surrounding the winery where our ripe grapes slowly ripen each season. Winemaking Fermented & macerated on skins for up to 10 days, with some partial barrel fermentation. Following pressing, clarification and blending, the wine was matured on American oak for 12 months prior to bottling. (271727-5)

A typical cold Barossa winter flowed into a wet spring and cool growing season. In response, the harvest of Shiraz grapes across our Barossa vineyards was about two to four weeks later than we had experienced over the last decade or so. Fine and clear weather during the harvest period and a certain degree of patience made for excellent flavour and tannin accumulation in our Shiraz grapes, as seen in this outstanding wine. Winemaking The vineyards for the Galway Vintage Shiraz are sourced from our loyal family grower base in the Barossa. The grapes were fermented in static potter and rotary fermenters. Warm temperatures at the onset of fermentation and also 3 to 5 days post fermentation has helped extract soft fleshy tannins and build wine structure.
