Winemaking

Vine-dried grapes from our estate block 46, were fermented into concentrated flavour and richness. The fruit started to bag and pucker, created integrated fruit sugars, acid and tannins,. It was thenpassed back over already fermented Shiraz. The result is full-bodied complexity, layered with intriguing characters for a well balanced and lingering palate.1838 was the year Walter Thomson, with wife Jane, arrived in Australia and established a winemaking tradition. Faithful to his approach, our estate grown parcels are carefully tended by our vignerons to create wines of greatintensity.Double Pass Shiraz is created in the blending of two parcels of estate grown fruit. Vine dried grapes, which have richly textured and powerful complexity are fermented and then blended with already fermented estateShiraz to create the Double Pass. WINEMAKING TECHNIQUES

Grapes are picked on both colour and flavour development. Picked at night to enable a cold onset to fermentation. Once crushed they are then fermented for 7-10 days at around 20 degrees, in small batches using neutral yeast, to allow varietal fruit expression. The ferment is then pressed using an airbag press. A soft pressing is used, so we do not extract the bitter tannin, producing a fruit driven style of wine. Once pressed the wine is allowed to go through natural malolactic fermentation. Following maturation the wine is blended and prepared for bottling. (269054-12)

In the not so distant past inland Australia once shimmered in the scorching midday sun. Vast tracts of land were covered with a sea of grey-green foliage from the many types of saltbush plants. Saltbush derives its name from the salt that the plant retains in its leaves. Much of that land is now cleared for agricultural and horticulture including vineyards.The beauty of saltbush is that the plant is incredibly salt tolerant. They live for years and survive through all seasons throughout the year and it doesn't matter whether you get 50 points of rain in January or July, they will thrive.Herds of wild herbivores would move into a stand of saltbush and defoliate the plants as they consumed the leaves, then they moved on. In more recent times saltbush sustained the herds of introduced cattle and sheep in particular. The sheep has become an Australian icon and indeed the country, for a time, rode on the sheep’s back. Images spring to mind of Australia’s historic pastoral characters such as “Saltbush Bill” come into mind and the legend of Sir Sydney Kidman. (273903-20)

Vintage 2018 in Clare was exceptional in quality with the warm, dry weather helping produce intense colour and flavours. With just over 18 hectares, or around 43 acres of Shiraz, our estate grown fruit shone in these conditions showing richness and concentration. Stored in aged French barrels, and bottled with minimal filtration, the result is a true expression of Shiraz from the Clare Valley region. In 1838 Walter Thomson, with wife Jane, arrived in Australia and established a winemaking tradition. Faithful to his approach, our estate grown parcels are carefully tended by our vignerons to create wines of great intensity. Grape varieties

- 93% Shiraz, 4% Cabernet Sauvignon, 2% Merlot Vinification - After night harvesting the Shiraz grapes were crushed into static fermenters. After crushing the must was inoculated with AWRI 796 yeast. Controlled fermentation occurred over seven days, commencing at 24°C reducing to 20°C. Gentle Pump-overs occurred six times daily to maximise the extraction of colour whilst still retaining a soft juicy palate structure. Pump-overs were reduced to twice daily towards the end of fermentation to minimise seed tannin extraction. To avoid any harsh tannins and bitterness only free run and first pressings were used in this blend. After pressing the wines were settled before racking onto American oak for 3 months. (273181-5)

The feature of these years is the previous year has a wet autumn, dry winter followed by a very hot summer. Another feature is the very high quality of Shiraz. We had 95% of our Shiraz picked before the extreme heat of the weekend 10th to 12th February 2018 that saw the temperature hit 44, 47 and 45C over the three-day period. Staff and vines survived and this is the first release of a wonderful collection of 2018 Hunter Valley Shiraz wines from Brokenwood. All are characterised by deep colour and lifted ripe fruit.
