In the not so distant past inland Australia once shimmered in the scorching midday sun. Vast tracts of land were covered with a sea of grey-green foliage from the many types of saltbush plants. Saltbush derives its name from the salt that the plant retains in its leaves. Much of that land is now cleared for agricultural and horticulture including vineyards.The beauty of saltbush is that the plant is incredibly salt tolerant. They live for years and survive through all seasons throughout the year and it doesn't matter whether you get 50 points of rain in January or July, they will thrive.Herds of wild herbivores would move into a stand of saltbush and defoliate the plants as they consumed the leaves, then they moved on. In more recent times saltbush sustained the herds of introduced cattle and sheep in particular. The sheep has become an Australian icon and indeed the country, for a time, rode on the sheep’s back. Images spring to mind of Australia’s historic pastoral characters such as “Saltbush Bill” come into mind and the legend of Sir Sydney Kidman. (267920-7)

Total tonnages were down for the season, however the drier conditions prevented excessive vigour or disease problems. Favourable ripening during February led to fruit in great condition at picking. Vinification Machine harvested, combination of open and roto fermenters. Not overly pumped over, as soft tannins are required. Oak maturation 100% French. (266663-2)

Grape varieties

- 93% Shiraz, 4% Cabernet Sauvignon, 2% Merlot Vinification - After night harvesting the Shiraz grapes were crushed into static fermenters. After crushing the must was inoculated with AWRI 796 yeast. Controlled fermentation occurred over seven days, commencing at 24°C reducing to 20°C. Gentle Pump-overs occurred six times daily to maximise the extraction of colour whilst still retaining a soft juicy palate structure. Pump-overs were reduced to twice daily towards the end of fermentation to minimise seed tannin extraction. To avoid any harsh tannins and bitterness only free run and first pressings were used in this blend. After pressing the wines were settled before racking onto American oak for 3 months. (265704-1)

Vine-dried grapes from our estate block 46, were fermented into concentrated flavour and richness. The fruit started to bag and pucker, created integrated fruit sugars, acid and tannins,. It was thenpassed back over already fermented Shiraz. The result is full-bodied complexity, layered with intriguing characters for a well balanced and lingering palate.1838 was the year Walter Thomson, with wife Jane, arrived in Australia and established a winemaking tradition. Faithful to his approach, our estate grown parcels are carefully tended by our vignerons to create wines of greatintensity.Double Pass Shiraz is created in the blending of two parcels of estate grown fruit. Vine dried grapes, which have richly textured and powerful complexity are fermented and then blended with already fermented estateShiraz to create the Double Pass. Ripe blackberry fruits and silky tannins are alive with richness. Best served with sauce-laden meats and dishes with abundant flavours. (267935-1)

The grapes were sourced from the Hilltops GI of NSW, a dry Southern inland area with cool nights and warm days making this an ideal cool climate Shiraz producing region. The fruit was picked in the cool of the night and processed without crushing the berries, this reduces the extraction of overt tannin, in favour of more fruit freshness and vibrancy. Maturation has been in older French oak puncheons (500lt) for 12 months, rounding out the wine without adding too much oak flavour.Beyond Broke Road Hilltops Shiraz is a rich Australian Shiraz balanced by bright fresh spicy cool climate aromatics and finish, at its core dark plum, mulberry and liquorice are held in check by fresh subtle pepper spice and flinty mineral notes.
