The fruit was harvested in the cool of night to retain maximum fruit flavour. The juice was cool fermented on skins then pressed into stainless steel to optimise colour and flavour. The wine was further matured in a light level of French oak to add roundness and retain freshness. Vintage The vintage 2019 growing season was one of the driest on record. Controlled winter watering and careful monitoring of vine stress levels was key to a successful crop. Temperatures tended to be cooler in spring and early summer which caused a slower start to the season, as temperatures began to rise in late Jan early Feb ripening moved along a little quicker and the team were grateful the vines had sufficient canopies to protect the fruit through to maturity. The reds from this vintage show excellent depth of colour and fabulous tannins, whilst the whites display a rich array of aromatics and bright fresh fruit flavours. (270811-4)

Stone Cottage Vineyard is a small family owned operation situated at Woodstock near the town of Milton in the Shoalhaven District of NSW.The Vineyard was planted 9 years ago & covers about 2 acres in total. The vines are Chambourcin, a French grape similar to Pinot Noir in style.As the planting area is small, the resulting yield is also small, producing a quality wine, rich in colour that is ageing well.The soil is very rich Monzonite (weathered Granite) & is welled drained & produces a very lush crop which is prolific given the small area planted.The grapes are produced & harvested on site by hand & wine is made by local Winemaker Wally Cupitt.The Chambourcin wine that results is a light easy to drink Pinot Noir style red with a peppery nose & a light tannin finish, displaying various fruit flavours at the back of the pallet.Stone Cottage Vineyard takes its name from the rustic Granite Stone & Hardwood cottage that sits within the property. Hubert de Castella's passion for the Yarra Valley saw him establish St Huberts in 1862.By the late 1800s it had grown to be the largest estate in the area. The wines enjoyed immediate and on-going success at wine shows both domestically and abroad. The onset of the Great Depression, the increasing popularity of fortified wine and the emerging profitability of dairy farming saw the vineyard revert to grazing in the 1920s. It wasn't until the 1960s that the Yarra Valley again rose to prominence as a wine region and St Huberts was once again one of the pioneers. After the success and cult following achieved by our St Huberts Stag Yarra Valley Pinot, we decided more people need to drink Pinot Noir, and we needed to venture out of the Yarra! 2017 was the first vintage of our Stag Victorian Pinot Noir. Fruit for the 2018 was harvested from selected sites, mainly around Yea, with some Mornington Peninsular and others in the mix.
