Viticulture

- The grapes were sourced from Our premium vineyards, Picked in March in the early morning, thc picking date is carefully chosen to ensure optimal maturity while retaining the natural fruit sweetness. Winemaking - The grapes Were cold soaked for 24 hours and placed in a Stainless-steel tank for fermentation at on average temperature of 25 0 C until dry. During the fermentation process, the wine was plunged daily to optimize the fluvours, colour and tannin structure. After fermentation, Wine pressed Of the Wine Was Stored in mix Of French and American oak barrels, and 40% of the wine was stored in stainless steel tank to maintain freshness. After maturation, the wine was blended, fined, clarified and filtered for bottling. (259968-1)

Fruit was harvested in the cool of the night.

Winemaking Notes

Fruit is sorted and destemmed. Once crushed, the must is transferred to red fermenters where pump-overs can occur up to 3 times per day. The fruit is drained and pressed once the winemakers are happy with flavour extraction and profile. Fermentation is completed in oak barrels. The wine is blended after oak aging and prepared for bottling. (255891-1)

Elegant, hand crafted wines that reflect the unique characters of the De Bortoli Winery Estate, Dixons Creek, Yarra Valley. Mature vines, minimal handling, thoughtful winemaking. Exceptional quality with a distinct sense of place. The Estate Vineyard replaces Estate Grown.2014 was a very low cropping year and was relatively warm. The wines are bright and plump and have quite a lot of hidden power.Fruit is destemmed, crushed and tipped into 14 tonne vats. The fruit is macerated for 15-30 days, then pressed and settled for a week. The wine is then racked to new and used casks where it matures for 14 months. The individual batches are racked from cask, aerated and returned every three to four months before blending and bottling.

Actual bottle design/Label design may differ to that which is advertised.Portee Station has a long history, as one of the earliest areas of settlement in South Australia, outside of the city of Adelaide. Situated in outback country, the magnificent homestead was built in 1873 on a floodplain near the River.The FruitThe 2016 vintage saw cool winter with average rainfall, very dry warm spring followed by a cooler than average December/January which helped maintain fruit quality and acid retention. February was hot with daytime temperatures 3-4 degrees above average causing rapid ripening; March was quite mild allowing good ripening conditions for the balance of the vintage.The WinemakingThe fruit was crushed and de-stemmed, before being fermentation in stainless steel tanks for seven days. To ensure good colour and full flavour, the wine was carefully pumped over three times a day.

Hardly anyone was planting Cabernet in the Barossa when the Angas family was establishing their vineyards in the 1960s, so it’s no surprise it took until the late 1990s for the variety to find its way onto Hutton Vale Farm. Whilst it may have been a late starter, the quality of the fruit grown there suggests it has a long future in this part of the world.The Cabernet block is about 5 acres, planted in 1998 on a sloping five acre site where the lean and tough environment dictates low yields – even by Hutton Vale Farm standards…frequently less than a tonne to the acre. Growing and harvest conditions in 2012 were close to ideal and the fruit was handpicked in perfect conditions in mid March. The fruit was destemmed and fermented on skins for 6 days in small open fermenters with twice daily pump overs, before maturation in an even split of new and seasoned French hogsheads for 24 months.

1838 was the year Walter Thomson, with wife Jane, arrived in Australia and established a winemaking tradition. Faithful to his approach, our estate grown parcels are carefully tended by our vignerons to create wines of great intensity.Set in the northern range of the cool and picturesque Clare Valley, the high altitude of provides finesse and delicate power to our mature vines.Grown in our Clare Valley estate vineyards, and selected from our 11.1 hectares of Cabernet Sauvignon plantings, specifically from the Blights block near the Clare racecourse. A consistent variety in the region for 2015 vintage, Cabernet Sauvignon is soft elegant style. The richness of the fruit in its natural state is protected and nurtured through minimal intervention in the winery. Careful use of French oak provides a support and complexity to fruit richness and regional expression.
