WINEMAKING

Shiraz from selected Barossa vineyards was fermented in temperature controlled stainless steel for at least 7-10 days, to maximise colour, tannin and flavour extraction. After primary fermentation the wines were membrane pressed and underwent malolactic fermentation before racking on to French oak for around 12 months. VINTAGE The growing season started off well, with the winter months experiencing slightly higher than average rainfall. January and February were warm and dry, whilst March and early April had average temperatures, without extremes, which was a perfect finish to vintage. Yields were slightly down due to the drier conditions over the summer months, however the slow ripening from the mild temperatures has allowed for great colour and flavour development. (271213-5)

2017 was an incredible year in terms of weather, quantity and quality of all types of fruit. Vintage threatened to finish early, before a cool damp spell gave way to an Indian summer, which extended the season and improved the quality and flavour of the subsequent wine. Vineyards Sourced from selected premium Shiraz vineyards located throughout the Barossa Valley. Winemaking Fruit was fermented on skins for seven days. Following pressing, clarification and blending, the wine was matured in French and American oak hogsheads for 12 months prior to bottling.Brimming with excitement and head thrown back with joy, those boisterous, happy moments are what lasting memories are made of with Boisterous Wine. Grenache makes up 55% of this wine, delivering a Grenache-centric GSM, with elegant Syrah (33%) and spicy Mourvèdre (12%) adding tell-tale definition and structure. The majority of the Grenache is from an old cool Williamstown vineyard, on the border of the Adelaide Hills, which is blended with Grenache from a special Krondorf Road parcel. Early harvest Syrah is from a 69 year old Ebenezer vineyard and from the Heinrich vineyard in the Lyndoch foothills, which unites with the lovely blue-fruit characters of Syrah from a small Northern Eden Valley vineyard on the outskirts of Angaston. The remainder of the blend is powerful, spicy Mourvèdre. This is definitely a Grenache-driven GSM! Subtle seasoned oak and caramel lead to a deep-fruited, dark cherry and strawberry palate with supple fine-grain tannin. Our wines represent decades of experience, blending the fruit of our old vine gardens with the finest traditions of artisan winemaking.At the end of our old vine garden path there is a historic ‘Menagerie’ of three grape varieties, adjoining blocks of Grenache, Shiraz and Mataro at Gomersal in the Barossa. After hand picking selected bunches of our Menagerie field blend on the 22nd of March our winemaker Elena Brooks let the whole bunches ferment together in open top fermenters with ambient or ‘other people’s’ yeasts for 14 days, before basket pressing in old French Oak barriques. The wines was then matured for a further 12 months in the same oak, before bottling without fining or filtration to capture the essence of our vinous Menagerie of the Barossa.This vintage of our Menagerie of the Barossa has a high level of natural acidity, a pH 3.49 and is bone dry. It is ménage à trois that makes wine truly of its time and place, a wish come true and a looking glass, if you will, and although ready to drink immediately it will also reward cellaring and decanting. Harvest commenced in early March 2016. All parcels of fruit were harvested within a six week period and fermented in 8T parcels. On average parcels we kept on skins for 10 days prior to pressing. The wine wasmatured in 3 year old and older French oak barriques for 9 to 12 months (depending on the parcel). Minimalfiltration was used in the production of this wine. This wine has been crafted to be enjoyed upon release but will reward careful cellaring up to and possibly beyond 2024.

A typical cold Barossa winter flowed into a wet spring and cool growing season. In response, the harvest of Shiraz grapes across our Barossa vineyards was about two to four weeks later than we had experienced over the last decade or so. Fine and clear weather during the harvest period and a certain degree of patience made for excellent flavour and tannin accumulation in our Shiraz grapes, as seen in this outstanding wine. Winemaking The vineyards for the Galway Vintage Shiraz are sourced from our loyal family grower base in the Barossa. The grapes were fermented in static potter and rotary fermenters. Warm temperatures at the onset of fermentation and also 3 to 5 days post fermentation has helped extract soft fleshy tannins and build wine structure.

Terroir & Site

The majority of the Cabernet Sauvignon components were sourced from five vineyards in the Barossa Valley, as well as one vineyard in Eden Valley. The diversity of our vineyard selection provides the rich lifted Cabernet Sauvignon aromatics and palate structure for which The Signature is renowned. The Shiraz components include plantings of varying vine age, the oldest being 1925. These blocks are of sandy loam, featuring yellow sand and ochre clay over red clay. The combination of these Barossa blocks provides a Shiraz with sweetness, fullness, depth and layers of complexity. Vintage Conditions Consistent rainfall throughout winter was followed by a warmer and drier than average spring, reducing bunch and berry size, which has produced grapes of great aromatics and flavour. The long, mild summer had few heat spikes and cool nights, which helped retain acidity and pristine fruit flavours in our Cabernet Sauvignon and Shiraz. Viticulture & Winemaking 2015 produced some excellent aromatic and structured parcels of Barossa Cabernet Sauvignon and Shiraz. All parcels of fruit were fermented separately using wild yeasts. lentiful winter rains gave the vines a healthy start to the 2018 growing season. A warmer and drier than average spring hurried things along and early estimates indicated above average bunch numbers in most varieties. Late spring and early summer were relatively mild resulting in good flowering and fruit set. However, dry conditions continued and both berry size (lowering actual yield) and shoot length were somewhat diminished. Several heat spikes in late January and early February (it’s not a South Australian summer if you don’t have a couple!) interrupted veraison, with the picking of some of our earlier ripening vineyards delayed until the beginning of March (later than expected). Perfect, mild ripening weather followed to the end of April ensuring all Eden Valley parcels achieved full flavour ripeness slightly earlier than forecast. Despite a later than anticipated start and an earlier than usual finish, the compressed harvest produced wines of deep colour, flavour and balance across the board. Another ripper Barossa vintage!
