Windy Peak wines are made at De Bortoli's Dixon's Creek winery from carefully selected fruit grown in the Yarra Valley, King Valley and other regions. The wines are generous in flavour with fine grained texture, perfect for bringing out the best in food. Fruit is sourced from carefully selected parcels of Shiraz grown on the red volcanic soils of Northern Heathcote. Fruit is harvested at 14.0-14.5 baume to achieve a balance of fruit ripeness and balanced acidity. Grapes are destemmed and crushed into both static and rotary fermenters. The resultant wine is then fermented for up to two weeks on skins prior to pressing and racking. A third of the blend is matured for 5 months in older casks and the remainder stays in tank for freshness and brightness.

Sourced from our estate Malpas Road Vineyard, planted in 1991 on land which was originally referred to as ‘Bay of Biscay’. This is an obvious reference to the relatively infertile cracking, grey-black soil upon which our hand-tended Shiraz patch does its work. The fissures which occur as the black soil cracks apart, sever surplus root structure; a process which naturally lessens vigour and enhances ultimate grape quality. Other fruit parcels were sourced from the slightly higher elevated vines of the Penny’s Hill Vineyard. Detailed canopy management, judicious irrigation and passionate viticultural practices in both these high class vineyards contribute to this outstanding Shiraz.

Winemaking

- Premium parcels of Merlot fruit were fermented in rotary and static fermenters. Followingfermentation on skins for seven to ten days, they were gently pressed. The wine was matured on French oak for 6 months before blending and bottling, the resulting wine has excellent depth of colour, richness and complexity. Vintage - The wet spring followed by a mild summer lead to a later and compressed harvest for all varieties this year. Our vineyard and winemaking teams worked tirelessly during vintage 2017 to ensureall varieties were harvested at optimal flavour development, producing elegant wines with lower alcohol levels which we are sure will delight our consumers. Viticulture

- The Tempranillo (64%) comes from two vineyards: one on silty soil set next to the Tanunda golf course, the other in the richer clay and brown earth soils of Nuriootpa. The Grenache (22%) is from the famous sandy Vine Vale region and from the blue-chip foothills at the top of Krondorf Road with up to 70+ years of vine age. Finally the Graciano (14%) is from recently planted vines in the limestone-rich soils of the northern Eden Valley. Vinification - Fermentation takes place in open fermenters with 7 days of maceration before pressing into barrels. A relatively higher pH is tolerated for the Tempranillo as we anticipate the natural acidity of the Grenache and Graciano will offset this in the ultimate blend. Barrels are mostly used French and American hogsheads (300L), where they mature separately for about 7 months only, before bottling. (255940-4)

Vanessa Altmann from Switch Organic Wine - Top 12 finalist in Young Gun of Wine 2017Grown in Langhorne Creek, South Australia this wine shows bright fruit characters of cherry and raspberry, with soft gentle tannins. The wine has a delicious texture that finishes with a hint of earth typical of the region, and while Merlot has often been used for blending this wine reminds me of some of the best Pinot’s I’ve tasted, an elegant example of Merlot as a varietal. Picked during March 2017 the bunches were de-stemmed and crushed to allow fermentation on skins for around seven days, following pressing the wine was steeped in a small amount of Cabernet Sauvignon skins for around four days to build complexity and palate weight, while still remaining true to Merlot style. Vintage Conditions

The growing season was one of the wettest on record, replenishing the soil moisture content and setting the vines up very well. The wet conditions were capped off by a cooler than average spring and early summer. Temperatures normalized at the start of February, with the ensuing long, cool ripening period resulting in lovely fruit flavours and natural acidity. Viticulture/ Winemaking Our Smith’s vineyard is home to some of the most exciting clones of Merlot in Australia; the Argentinean sourced 8R and Italian Q45-14. Planted in 2003 we are starting to see the fruit mature beautifully. The use of these clones combined with carefully considered viticulture and winemaking practices are the foundation of this special wine. A large portion of this wine is created by fermenting “berries in the barrel”. Three tonnes of handpicked Merlot was destemmed into French barriques without crushing the berries. Whole berry fermentation minimises the tannin extraction and creates a style of Merlot that is powerful yet generous and flavoursome without harsh tannins.Ancient and secluded, Wrattonbully is one of Australia’s most exciting viticultural discoveries of recent times. Blessed with the celebrated soil profile of terra rossa over limestone, the region is rapidly establishing a high class reputation for wines of depth and elegance. Red Claw Shiraz 2014 (6 x 750mL), Heathcote, VIC.

Good soaking rains during winter and early spring provided ample soil moisture for the start of the growing season. Spring was relatively cool with below average temperatures for the months of October and November. A heavy downpour of rain during flowering led to reduced berry number per bunch in the Grenache particularly, leading to lower yields but intense flavours. However, the rain and cool weather was short lived, with a return to below average rain from October to February and above average temperatures in December through to March. The prolonged warmer temperatures resulted in a significantly slower veraison this season, but the vines coped well under the conditions and welcomed some cooler weather late in the ripening period. Berry sizes were smaller across the vineyard and show promising fruit concentration. As always, the vineyard was entirely hand picked with each parcel of fruit carefully selected.
