Winemaking

- Premium parcels of Merlot fruit were fermented in rotary and static fermenters. Followingfermentation on skins for seven to ten days, they were gently pressed. The wine was matured on French oak for 6 months before blending and bottling, the resulting wine has excellent depth of colour, richness and complexity. Vintage - The wet spring followed by a mild summer lead to a later and compressed harvest for all varieties this year. Our vineyard and winemaking teams worked tirelessly during vintage 2017 to ensureall varieties were harvested at optimal flavour development, producing elegant wines with lower alcohol levels which we are sure will delight our consumers. Windy Peak wines are made at De Bortoli's Dixon's Creek winery from carefully selected fruit grown in the Yarra Valley, King Valley and other regions. The wines are generous in flavour with fine grained texture, perfect for bringing out the best in food. Fruit is sourced from carefully selected parcels of Shiraz grown on the red volcanic soils of Northern Heathcote. Fruit is harvested at 14.0-14.5 baume to achieve a balance of fruit ripeness and balanced acidity. Grapes are destemmed and crushed into both static and rotary fermenters. The resultant wine is then fermented for up to two weeks on skins prior to pressing and racking. A third of the blend is matured for 5 months in older casks and the remainder stays in tank for freshness and brightness.

The Northern Exposure Grenache is sourced from dry grown vineyard planted over 50 years ago on Terra Rosa soil, just north of the McLaren Vale township. The block`s northern exposure ensures optimal ripeness and pristine definition of varietal fruits.Once fully and evenly ripe these grapes are harvested by hand and then gently crushed. A short cold maceration helps extract fruits and tannin. Then the fermentation is allowed to get hot to extract richness and complexity. A vinous rematch of the famous 1811 BATTLE AT BARROSA RIDGE where Spain and France collided. La Re´sistance! takes up the fight for the traditional French varieties of the Barossa and pitches gnarly old vine GRENACHE, SYRAH & MOURVE`DRE into defence against the invading foreign marauders. Viticulture - Grenache makes up 55% of this wine, delivering a Grenache-centric GSM, with elegant Syrah (33%) and spicy Mourve`dre (12%) adding tell-tale definition and structure. The majority of the Grenache is from an old cool Williamstown vineyard, on the border of the Adelaide Hills, which is blended with Grenache from a special Krondorf Road parcel. Early harvest Syrah is from a 69 year old Ebenezer vineyard and from the Heinrich vineyard in the Lyndoch foothills, which unites with the lovely blue-fruit characters of Syrah from a small Northern Eden Valley vineyard on the outskirts of Angaston. Vanessa Altmann from Switch Organic Wine - Top 12 finalist in Young Gun of Wine 2017Grown in Langhorne Creek, South Australia this wine shows bright fruit characters of cherry and raspberry, with soft gentle tannins. The wine has a delicious texture that finishes with a hint of earth typical of the region, and while Merlot has often been used for blending this wine reminds me of some of the best Pinot’s I’ve tasted, an elegant example of Merlot as a varietal. Picked during March 2017 the bunches were de-stemmed and crushed to allow fermentation on skins for around seven days, following pressing the wine was steeped in a small amount of Cabernet Sauvignon skins for around four days to build complexity and palate weight, while still remaining true to Merlot style. The fissures which occur as the black soil cracks apart, sever surplus root structure; a process which naturally lessens vigour and enhances ultimate grape quality. Other fruit parcels were sourced from the slightly higher elevated vines of the Penny’s Hill Vineyard. Vintage Conditions

The growing season was one of the wettest on record, replenishing the soil moisture content and setting the vines up very well. The wet conditions were capped off by a cooler than average spring and early summer. Temperatures normalized at the start of February, with the ensuing long, cool ripening period resulting in lovely fruit flavours and natural acidity. Viticulture/ Winemaking Our Smith’s vineyard is home to some of the most exciting clones of Merlot in Australia; the Argentinean sourced 8R and Italian Q45-14. Planted in 2003 we are starting to see the fruit mature beautifully. The use of these clones combined with carefully considered viticulture and winemaking practices are the foundation of this special wine. A large portion of this wine is created by fermenting “berries in the barrel”. Three tonnes of handpicked Merlot was destemmed into French barriques without crushing the berries. Whole berry fermentation minimises the tannin extraction and creates a style of Merlot that is powerful yet generous and flavoursome without harsh tannins.Ancient and secluded, Wrattonbully is one of Australia’s most exciting viticultural discoveries of recent times. Blessed with the celebrated soil profile of terra rossa over limestone, the region is rapidly establishing a high class reputation for wines of depth and elegance. VINTAGE: What a long, and strange vintage 2017 was. Every vintage is different; lessons learned from the previous year don’t always help the following year.2017 vintage started late, two to three weeks later than the preceding couple of years. The reason for this was the mild, cool spring weather experienced all across the southern part of the state. During the middle and latter part of March the South-West region including Margaret River experienced a very unusual amount of rain and very cool weather, ripening over this period was very slow. The first suggestions of worry started to appear in growers eyes. Of recent history Margaret River has experienced very dry conditions in March and early April with the season breaking mid to late April, not a problem with all the grapes picked. But this year the concern was that if the season broke in mid April all the red grapes would be still on the vine. However anyone that lived though the late April and early May in the South-West of Western Australia will testify that never had we had a better, warmer early autumn. It was simply perfect; cool crisp mornings and evenings but beautiful warm and sunny days; not too hot, textbook conditions for great ripening especially for the red varietiesThe Hay Shed Hill Vineyard Series showcase the character of the fruit grown on this classic vineyard site with distinctive and expressive wines. 2017 was a later and cooler year in the Yarra Valley. January and February brought perfect ripening conditions, with temperatures in the mid to high 20’s, and cool nights during allowing for retention of acid and fine flavor development. Yields were 7 tonnes per hectare. Site selection The fruit was picked from various blocks with vines aged between 21 and 33 years old, grown on high north facing slopes to maximize sunshine hours. Northerly winds from Long Gully provide good air flow and favourable micro-climates across the Estate.
