Windy Peak wines are made at De Bortoli's Dixon's Creek winery from carefully selected fruit grown in the Yarra Valley, King Valley and other regions. The wines are generous in flavour with fine grained texture, perfect for bringing out the best in food. Fruit is sourced from carefully selected parcels of Shiraz grown on the red volcanic soils of Northern Heathcote. Fruit is harvested at 14.0-14.5 baume to achieve a balance of fruit ripeness and balanced acidity. Grapes are destemmed and crushed into both static and rotary fermenters. The resultant wine is then fermented for up to two weeks on skins prior to pressing and racking. A third of the blend is matured for 5 months in older casks and the remainder stays in tank for freshness and brightness.

Vintage Conditions

The growing season was one of the wettest on record, replenishing the soil moisture content and setting the vines up very well. The wet conditions were capped off by a cooler than average spring and early summer. Temperatures normalized at the start of February, with the ensuing long, cool ripening period resulting in lovely fruit flavours and natural acidity. Viticulture/ Winemaking Our Smith’s vineyard is home to some of the most exciting clones of Merlot in Australia; the Argentinean sourced 8R and Italian Q45-14. Planted in 2003 we are starting to see the fruit mature beautifully. The use of these clones combined with carefully considered viticulture and winemaking practices are the foundation of this special wine. A large portion of this wine is created by fermenting “berries in the barrel”. Three tonnes of handpicked Merlot was destemmed into French barriques without crushing the berries. Whole berry fermentation minimises the tannin extraction and creates a style of Merlot that is powerful yet generous and flavoursome without harsh tannins.Ancient and secluded, Wrattonbully is one of Australia’s most exciting viticultural discoveries of recent times. Blessed with the celebrated soil profile of terra rossa over limestone, the region is rapidly establishing a high class reputation for wines of depth and elegance. Viticulture and Winemaking

The 2018 vintage will be remembered as one that broke all kinds of records. Firstly it was one of the earliest bud bursts in our experience with vines pushing in late September. Early season growth was nothing short of stratospheric with the plants almost visibly growing up into the trellis at a rate we’d never seen before. By mid summer we were looking down the barrel of both the hottest, driest & earliest grape growing season on record. Harvest began with hiss & a roar in early-March, nearly a month before some seasons, in fact our Central Otago fruit was some of the first in the winery beating Marlborough Sauvignon Blanc by weeks. The wine was hand picked, wild fermented with 30% whole bunches. We then cold soaked the bunches 5-7 days prior to wild fermentation starting, hand plunged with a maximum fermentation temperature of 32c. Drained and gently pressed off skins, the juice was left to settled for 24hrs then racked off heavy solids to barrels and aged for 12 months in range of new and old French oak. (271267-7)

VINTAGE: What a long, and strange vintage 2017 was. Every vintage is different; lessons learned from the previous year don’t always help the following year.2017 vintage started late, two to three weeks later than the preceding couple of years. The reason for this was the mild, cool spring weather experienced all across the southern part of the state. During the middle and latter part of March the South-West region including Margaret River experienced a very unusual amount of rain and very cool weather, ripening over this period was very slow. The first suggestions of worry started to appear in growers eyes. Of recent history Margaret River has experienced very dry conditions in March and early April with the season breaking mid to late April, not a problem with all the grapes picked. But this year the concern was that if the season broke in mid April all the red grapes would be still on the vine. However anyone that lived though the late April and early May in the South-West of Western Australia will testify that never had we had a better, warmer early autumn. It was simply perfect; cool crisp mornings and evenings but beautiful warm and sunny days; not too hot, textbook conditions for great ripening especially for the red varietiesThe Hay Shed Hill Vineyard Series showcase the character of the fruit grown on this classic vineyard site with distinctive and expressive wines. Viticulture and Winemaking

The 2018 vintage will be remembered as one of the warmest on record, with continual hot days throughout February and March and rain coming just before and during harvest. A very unusual harvest, as the Clutha Pinot Noir is normally the last to be picked, this year, due to unseasonably warm conditions the fruit was the first of the vines. We picked the grapes when the flavours were at optimum, to ensure we preserved the fruit flavours in the wine. We used a select de-stemmer harvester to softly handle the fruit. Once pressed off skins, the juice was then fermented at low temperatures in stainless steel tanks with selected yeast strains to preserve the inherent delicate fruit flavours. Following fermentation, the wine was aged on light yeast lees to increase palate weight and complexity before it was bottled for enjoyment. (271267-4)

The Winter rainfall set up the vineyards well for Spring with overall temperatures during Spring slightly higher than average accompanied by below average rainfall. Flowering commenced mid late November with ideal weather conditions, resulting in one of the best fruit sets in many years. The mild to warm conditions continued throughout Summer and veraison commenced in mid-January. Harvest delivered fruitful crop loads matched with very stable weather conditions, ensuring vine performance and good ripeness. Picking commenced late February and the viticultural team worked steadily until the beginning of April delivering outstanding fruit. The white wines display excellent acidity, depth and intense fruit flavours. The red wines look poised and elegant with powerful aromatics and a great balance between tannin and acid.
