Vintage notes

2017 was a later and cooler year in the Yarra Valley. January and February brought perfect ripening conditions, with temperatures in the mid to high 20’s, and cool nights during allowing for retention of acid and fine flavor development. Yields were 7 tonnes per hectare. Site selection The fruit was picked from various blocks with vines aged between 21 and 33 years old, grown on high north facing slopes to maximize sunshine hours. Northerly winds from Long Gully provide good air flow and favourable micro-climates across the Estate.

Port Phillip Estate Balnarring Pinot Noir 2018 (6 x 750mL), VIC.

Meticulous sustainable viticulture and sensitive minimalist winemaking produces site-expressive wines of elegance, complexity and structure.Now in its seventh year, this wine represents the exploration of our second site, located in Balnarring. This vineyard, planted to Pinot Noir and Chardonnay, was acquired in 2007 but originally established in 1997. The original plantings comprise two distinct areas of Pinot Noir and Chardonnay. A third area has been planted to Pinot Noir, exploiting the higher-density planting matrix found throughout the Pinot Noir growing regions of the Old World.This wine was fermented in a combination of large-format wooden foudre and stainless-steel tanks. The ferment, with a small amount of whole bunches, commenced spontaneously with ambient yeasts and lasted 18 days. Following fermentation, the wine was pressed and racked into French oak barriques (of which 20% were new) and underwent indigenous malolactic fermentation. The wine was racked only for bottling, with a total maturation period of 11 months. It was then bottled without fining and with minimal filtration.

The Port Phillip Estate vineyard is located on the Mornington Peninsula at Red Hill, on Eocene volcanic soils. Our wines are made from domain grown, handpicked grapes and aim to manifest terroir: the integration of our geology and soils with the macroclimate of our region, the mesoclimates of the various sites within our vineyard and the weather of the annual grape growing season. Our cultural operations in the vineyard and practices in the winery endeavour to articulate these unique characteristics diligently, respectfully and without artifice.VintageFollowing a wet Winter, budburst commenced relatively late in mid-September. The Winter rainfall set up the vineyards well for Spring with overall temperatures during Spring slightly higher than average accompanied by below average rainfall. Flowering commenced mid late November with ideal weather conditions, resulting in one of the best fruit sets in many years. The mild to warm conditions continued throughout Summer and veraison commenced in mid-January. Harvest delivered fruitful crop loads matched with very stable weather conditions, ensuring vine performance and good ripeness. Picking commenced late February and the viticultural team worked steadily until the beginning of April delivering outstanding fruit. The white wines display excellent acidity, depth and intense fruit flavours. The red wines look poised and elegant with powerful aromatics and a great balance between tannin and acid.

Holm Oak `The Wizard` Pinot Noir 2017 (6 x 750mL), TAS.

Although we take a pretty natural approach with all of our wines, the approach to making this wine was for minimal intervention. This wine is slowly evolving to include more of the new clones of Pinot that we have planted over the past 10 years. In particular, the MV6 and 115 add structure and elegance respectively to our older D5V12 clone which still makes up the base of this wine. 30% whole bunches were included in the ferments which was done in small open top fermenters. The ferments were allowed to start naturally and were then hand plunged up to 5 times a day. The wine was then basket pressed directly to barrel. Whilst we make wine specifically for the Wizard starting at pruning time the previous year we also have barrel selection tasting to ensure we select only the best barrels. We did this in January of 2018 and 20 barrels (60% new oak, 40% 1 year old) were chosen for this wine. The wine stayed in oak for a further 4 months and was bottled in May 2018.

Winemakers Notes

The 2016 Nautilus Pinot Noir is dark ruby in colour. The nose reveals lifted floral aromas, ripe wild blackberries, cherries and spices. The palate is medium bodied with good structure. Refined and balanced, this elegant wine shows good intensity and a lengthy finish. Vintage Prior to Christmas all the talk was about drought. Fruit set was good but would we have enough water to get through the season and what effect would this have on bunch size. Certainly the river was low. But of course Mother Nature intervened and a couple of timely rains in January during the critical phase when the berries size up meant that a crop that was looking average at best ended up above average in size. A key feature this year was lower acidity (by normal Marlborough standards), bright fruit flavours and a nice mineral texture across all the wines. Winemaking To make this wine, fruit from Pinot Noir clones 114, 115, 5, 667, 777 and Abel was hand harvested and de-stemmed without crushing to allow a portion of whole berries in the ferment. A small amount of whole bunch fruit was also included in some ferments (average 18% whole bunch).The grapes were fermented with indigenous yeast in open top fermenters after a 6-8 day ‘cold soak’. Careful cap management, using our pneumatic punch down device, has resulted in extraction of only the soft ripe tannins. After pressing the wine was racked directly to a mixture of new and older French oak Barriques, where it remained undisturbed until filtration and bottling in March 2017.

The fruit was crushed and destemmed into 1.5 and 2-ton fermentation tanks with about 70% of the fruit left as whole berries. As far as possible all clones were vinified separately to give expression to each clone’s unique character. We applied a cold soak period of 3–5 days followed by spontaneously started ferments. All batches received a post-soak of between 2–3 weeks with plunging done by hand to ensure a soft extraction of tannins. We then pressed of the batches and matured them in French oak barrels (25% new) for 10 months, each with its own balanced oak regime of barrel age and choice of coopers. (270800-5)

The 2017 growing season began with ideal spring conditions; warm temperatures and few frost events encouraged good canopy growth. Settled weather over flowering led to high potential crops, fruit thinning was widely employed to reduce yield and achieve optimum vine balance. Fastidious canopy management throughout the mild and sunny growing season ensured fruit developed, then ripened, at an ideal rate. The excellent weather during the ripening season was interrupted by rain events during the harvest. The single-minded quality focus of the viticulture and winemaking teams, with hour by hour assessment, led to optimum picking decisions. Our low-yielding, early-ripening vineyards with their open canopies, stood us in good stead in what was a tricky vintage across Marlborough and New Zealand.

Winemaking

Hand and Selective Machine Harvest, cold soaked for 4-6 days. Wines were fermented using indigenous yeasts. Total skin time was 16-29 days. Aged for 10 months in French oak hogsheads. This wine didn’t receive fining and was filtered prior to bottling in late March.

Vintage Conditions

The 2013/14 growing season began with one of the hottest starts on record until the end of December, with rapid even growth, a good flowering and subsequent fruit set. Then through to the end of February was cooler than average with the vineyards achieving good berry development. March was warmer than the norm and we saw full development of flavour and concentration. Each parcel harvested in optimum conditions despite some pressure from late season rain.

In the Vineyard

Fruit for the 2015 Morning Star pinot is sourced from a single block from a single vineyard in the southern Adelaide Hills. Only the best barrels from the block are selected for the Morning Star. The blend is made from 100% MV6 clone from a VSP trellis in Kuitpo. In the Winery The fruit was harvested in the early morning and destemmed only,10% of handpicked whole bunches were added to the fermenter. It was cool soaked for 2 days prior to beginning fermentation. It was fermented with minimal cap management via plunging and air sparging in open fermenters with a burgundian isolate yeast to preserve the fresh primary fruit and aromas of pinot noir and help preserve the colour. The wine was pressed off skins after 8 days of fermentation, transferred into 40% new french and 60% 2 and 3 year old french oak. Malo-lactic fermentation was completed while in oak. Left on fine lees for 12 months, the wine was then barrel selected from each parcel and blended to create the final blend. (271218-1)

This wine is from our BioGro certified organic and Demeter certified biodynamic estate vineyard located in the Bendigo sub-region of Central Otago. The vineyard was planted in 1998 after careful site selection. The soils on the beautiful north facing slope are Waenga fine sandy loam and Letts steepland with an elevation of 217 – 264 metres, on 44.55° south. Clones: 10/5, 5, 115, 667, 777 & Abel.
