Winemaking

- Premium parcels of Merlot fruit were fermented in rotary and static fermenters. Followingfermentation on skins for seven to ten days, they were gently pressed. The wine was matured on French oak for 6 months before blending and bottling, the resulting wine has excellent depth of colour, richness and complexity. Vintage - The wet spring followed by a mild summer lead to a later and compressed harvest for all varieties this year. Our vineyard and winemaking teams worked tirelessly during vintage 2017 to ensureall varieties were harvested at optimal flavour development, producing elegant wines with lower alcohol levels which we are sure will delight our consumers. Vintage Conditions

The growing season was one of the wettest on record, replenishing the soil moisture content and setting the vines up very well. The wet conditions were capped off by a cooler than average spring and early summer. Temperatures normalized at the start of February, with the ensuing long, cool ripening period resulting in lovely fruit flavours and natural acidity. Viticulture/ Winemaking Our Smith’s vineyard is home to some of the most exciting clones of Merlot in Australia; the Argentinean sourced 8R and Italian Q45-14. Planted in 2003 we are starting to see the fruit mature beautifully. The use of these clones combined with carefully considered viticulture and winemaking practices are the foundation of this special wine. A large portion of this wine is created by fermenting “berries in the barrel”. Three tonnes of handpicked Merlot was destemmed into French barriques without crushing the berries. Whole berry fermentation minimises the tannin extraction and creates a style of Merlot that is powerful yet generous and flavoursome without harsh tannins.Ancient and secluded, Wrattonbully is one of Australia’s most exciting viticultural discoveries of recent times. Blessed with the celebrated soil profile of terra rossa over limestone, the region is rapidly establishing a high class reputation for wines of depth and elegance. Soft, yet full of flavour, rich and elegant. Wrattonbully Merlot captivates with its flavour, intensity and opulence. Merlot is a dark blue-coloured wine grape variety, that is used as both a blending grape and for varietal wines. The name Merlot is thought to be a diminutive of merle, the French name for the blackbird, probably a reference to the colour of the grape. Its softness and "fleshiness", combined with its earlier ripening, makes Merlot a popular grape for blending with the sterner, later-ripening Cabernet Sauvignon, which tends to be higher in tannin. The grapes are selected from small vineyards spread in the Barolo region. The vines are between 7 and 40 years old, planted in a clay-limestone soil. Giesen Merlot 2015 (6 x 750mL) Hawkes Bay New Zealand

Winemaking

Fruit harvested from four vineyards, picked at optimum ripeness. Short pre-ferment maceration for colour and flavour extraction followed by a five to seven day ferment period. The wine was gently pressed offf the skins 2 days after ferment was complete, then inoculated for Malolactic Fermentation. The wine was rested on oak to add broadness and body to the wine. Minimal finings were used, before a gentle filtration.

Vintage Conditions

Hawke’s Bay experienced an excellent flowering season, with only moderate frost risk to marginal vineyards. The following summer was hot and dry. Three rain events just before harvest affected the harvest minimally, as they were followed by periods of high wind to dry the conditions out. The fruit showed opulence and balance when it was picked at optimum ripeness.
