Penfolds `Bin 707` Cabernet Sauvignon 2016 (1 x 750mL), SA.
Penfolds `Bin 707` Cabernet Sauvignon 2016 (1 x 750mL), SA.

Bin 707 perfectly reflects the Penfolds ‘House Style’ through a cabernet sauvignon lens: intensely-flavoured fruit; completion of fermentation and maturation in new oak; expressing a Penfolds understanding of multi-vineyard, multi-region fruit sourcing. Bin 707 was first vintaged in 1964.Full-bodied and with proven cellaring potential, Bin 707 retains a secure place among the ranks of Australia’s finest cabernets.“Penfolds ‘Grange of cabernet’. Again. Arguably not classically cabernet, certainly classic 707.”“Needs time to unravel – much more to be revealed. As it reluctantly unfurls we’re now cognisant that it’s barely the start of this wine’s journey..”“Sadly, nowadays ever so much harder to find on shelf. Make more? If only …”.“Decanting mandatory. Decanter optional. Timing critical.”- Peter Gago, Penfolds Chief Winemaker

Penfolds `Bin 95 Grange` shiraz 2015 (1x 750mL) SA

Vintage Conditions

Across South Australia’s premium growing regions, winter and early spring rainfall were close to the long-term average. From August, conditions became significantly drier with only a few light spring showers recorded. Record low rainfall was recorded from September to March stretching water supplies. Warm and dry conditions encouraged early flowering and fruit-set, with rapid canopy growth. Early summer temperatures dropped below average with no major heat waves recorded. Once harvest commenced, it progressed rapidly with most blocks of shiraz picked earlier than previous years. Although the prevailing conditions resulted in lower than anticipated yields, the quality of fruit was exceptional. A strong Penfolds vintage.

Henschke `Mount Edelstone` Shiraz 1993 (1x 750ml), Cork

Lot No: 0022-2477058

The Mount Edelstone vineyard, situated in the Eden Valley, was planted in 1912 by Ronald Angas, a descendant of George Fife Angas, who founded South Australia. Unusual for its time, the vineyard was planted solely to shiraz in ancient 540 million-year-old soils which are deep red-brown clay-loam to clay, resulting in low yields from dry-grown ungrafted vines. The name Mount Edelstone is a translation from the German ‘Edelstein’, meaning gemstone and was first bottled as a single-vineyard wine in 1952. (265027-23)

Rockford `Basket Press` Shiraz 1995 (1 x 1.5L Magnum), Barossa Valley. Cork

"Robert O’Callaghan is the very modest owner and winemaker of Rockford Wines in the Barossa Valley. One of the most respected boutique wineries in Australia, Rockford produces the Basket Press Shiraz (first vintage 1984) and the Black Shiraz, a sparkling red that is almost black in colour. In the l970s when wineries were updating their equipment, Robert bought and restored buildings from the 1850's and old winemaking machinery so that he could make his wines using both traditional winemaking techniques and equipment - his only concession to the latter half of the twentieth century is refrigeration and some new forms of yeast. The Shiraz fruit is sourced from local growers – many of the best dry-grown old vine Shiraz vineyards in the Barossa – including around Kalimna, Ebenezer, the Eden Valley and Central Barossa. The vines are between 60 and 136 years old giving fruit of tremendous colour, power and richness."

Penfolds `ST Henri` shiraz 2008 (1x 1.5L Magnum), SA . cork closure.

Lot No: 0064-2477075

St Henri is a time-honoured and alternative expression of Shiraz, and an intriguing counterpoint to Grange. It is unusual among high quality Australian red wines as it does not rely on any new oak. It was created in the early 1950s (first commercial vintage 1957) and gained a new lease of life in the 1990s as its quality and distinctive style became better understood. Proudly, a wine style that hasn’t succumbed to the dictates of fashion or commerce. St Henri is rich and plush when young, gaining soft, earthy, mocha-like characters as it ages. It is matured in old, 1460 litre vats that allow the wine to develop, imparting minimal, if any oak character. Although a small proportion of Cabernet is sometimes used to improve structure, the focal point for St Henri remains Shiraz. (264796-47)

Lot No: 0077-2477075

Magill Estate Shiraz is a single-vineyard wine made in the century old vintage cellars where Max Schubert created Grange. The grapes are hand-picked, crushed and fermented in small batches in wax lined open fermenters. Following a gentle pressing in a basket press, fermentation is completed in French and American oak barrels where the wine matures for 16 months in cool underground cellars at the Estate. It is then bottled unfined and unfiltered to retain the distinctive character of Magill Estate Shiraz. It is a truly handcrafted wine. As an estate grown wine the quantity made will always be restricted to a small amount of individually numbered bottles. (265689-17)

Vintage Conditions

A consistent theme across South Australia was the healthy and above-average winter rainfall. This not only fuelled strong canopy framework but resulted in welcomed soil water reserves, safeguarding vines across the months that followed. Unswerving from the trend of the 2000s was an earlier budburst, flowering and harvest across Barossa Valley, McLaren Vale and the south east. Whilst not without challenges from September hail and strong spring winds, Shiraz experienced relatively even set. A November hot spell and replenishing rain pushed the vines ahead in maturity. December temperatures were cooler than November, offering vines ideal growing conditions through to veraison in early January. Mild and dry ripening conditions were complimented by cool nights, with healthy vines yielding fruit that exhibited optimum flavour, and colour development, varietal typicity and vibrancy. Lot No: 0074-2477075

Vintage Conditions

Adequate winter rains across most parts of South Australia gave good soil moisture levels for budburst, which was followed by a dry and warm spring. Climatic conditions favoured flowering and set with mild and calm weather, however there was some shatter in Shiraz across parts of the state. Minimal frost and disease pressures allowed for excellent vine canopy development. November and December conditions were mild to average, providing good conditions for even ripening. Harvest also continued over a long period optimising colour, flavour and tannin development. The long and late South East harvest was particularly conducive to excellent flavour development in Cabernet. 2009 proved to be a slightly later vintage compared to the previousyears. Some healthy early to mid December Summer rainfall, followed by conditions drying up very quickly and continuing until the end of February. Early heat accompanied veraison but even ripening followed for those vines that had been through veraison and had adequate canopy. Temperatures cooled off towards March. (265689-19)

Unravelling aromatics unfurl with air – blue fruit notes entwined with barrel ferment and maturation elements; nothing singular, always in tandem. Sweet soy, cola and quince paste high notes escape from an ethereal layer (aniseed, fennel and fresh treacle ginger pudding) wafting above. Dark and liqueur chocolate, laced with Moroccan spices. An underlying tar/graphite blackness is lifted by derived fruit/quince pie flavours – a few years earlier they may have been more brashly varietal and elemental. Pronounced tannins sweep across the palate, although they are certainly part of the wine, never obtrusive. Long, layered and compelling, this wine is at the spicier end of the Grange spectrum.
