Viticulture

- Trained onto two wire vertical trellises with both wires mechanically pruned back to 2 buds. The canopy is managed through reduced water to restrict its vigour and increase both colour and flavour intensity. Vinification - After night harvesting the Merlot grapes were crushed into static fermenters and inoculated with AWRI yeast. Controlled fermentation occurred over six days, commencing at 24°C reducing to 20°C. Gentle Pump-overs occurred four times daily to maximise the extraction of colour whilst still retaining a soft juicy palate structure. Pump-overs were reduced to twice daily towards the end of fermentation to minimise seed tannin extraction. To avoid any harsh tannins and bitterness only free run and first pressings were used in this blend. After pressing the wines were settled before racking onto French oak for 3 months. (270195-3)

Our wines represent decades of experience, blending the fruit of our old vine gardens with the finest traditions of artisan winemaking.Dandelion Vineyards are proven plantings that have stood the test of time. Our wish is to nurture the unique character of these vineyards and express their terroir in our wines. Capturing variety, vintage and vineyard requires an enlightened approach and although our growers see the Devil in every weed, we encourage the humble Dandelion amongst the vines as they suppress winter weeds, provide mulch in summer, and proffer their Wishing Clocks in spring to blow off to make our wish come true.Sourced from our old vine Barossa vineyard, these ancient, gnarled vines are not only surviving but thriving on their own roots in some of the oldest soils on the planet. In March we hand harvested whole bunches of flavour ripe Merlot to be gently crushed and naturally fermented in open fermenters for eight days, hand plunged twice a day, before careful basket pressing into older French and American Oak Barriques to finish fermentation. After 18 months maturation and a racking in the same oak, we bottled without filtration or fining to capture the essence of the vineyard and although ready to drink this Damsel will reward cellaring and decanting.

WINEMAKING

Premium parcels of Merlot fruit were fermented in rotary and static fermenters. Following fermentation on skins for seven to ten days, they were gently pressed. The wine was matured in French oak for 6 months before blending and bottling, the resulting wine has excellent depth of colour, richness and complexity. VINTAGE A mild spring followed by a classic warm and dry summer lead to outstanding quality across all varieties in Vintage 2018. These mild and dry conditions, whilst shaping exceptional fruit, saw a slight reduction in volume crushed than in previous years. Our vineyard and winemaking teams have worked passionately throughout Vintage 2018 to craft amazing wines with great colour, and flavour intensity that will enrich life’s everyday moments. WINEMAKING

Merlot grapes from selected vineyards were harvested at optimum maturity to maximise varietal fruit flavours and supple tannins. Fruit was fermented and left on skins in static and rotary fermenters for seven days to maximise colour and flavour extraction.After primary fermentation the wines were soft pressed and underwent malolactic fermentation before being aged in French oak for six months before being blended and filtered prior to bottling. VINTAGE The vintage 2019 growing season was one of the driest on record. Controlled winter watering and careful monitoring of vine stress levels was key to a successful crop. Temperatures tended to be cooler in spring and early summer which caused a slower start to the season, as temperatures began to rise in late Jan early Feb ripening moved along a little quicker and the team were grateful the vines had sufficient canopies to protect the fruit through to maturity. The reds from this vintage show excellent depth of colour and fabulous tannins, whilst the whites display a rich array of aromatics and bright fresh fruit flavours. (271214-3)
