Winemaking

- Premium parcels of Merlot fruit were fermented in rotary and static fermenters. Followingfermentation on skins for seven to ten days, they were gently pressed. The wine was matured on French oak for 6 months before blending and bottling, the resulting wine has excellent depth of colour, richness and complexity. Vintage - The wet spring followed by a mild summer lead to a later and compressed harvest for all varieties this year. Our vineyard and winemaking teams worked tirelessly during vintage 2017 to ensureall varieties were harvested at optimal flavour development, producing elegant wines with lower alcohol levels which we are sure will delight our consumers. Viticulture

- Trained onto two wire vertical trellises with both wires mechanically pruned back to 2 buds. The canopy is managed through reduced water to restrict its vigour and increase both colour and flavour intensity. Vinification - After night harvesting the Merlot grapes were crushed into static fermenters and inoculated with AWRI yeast. Controlled fermentation occurred over six days, commencing at 24°C reducing to 20°C. Gentle Pump-overs occurred four times daily to maximise the extraction of colour whilst still retaining a soft juicy palate structure. Pump-overs were reduced to twice daily towards the end of fermentation to minimise seed tannin extraction. To avoid any harsh tannins and bitterness only free run and first pressings were used in this blend. After pressing the wines were settled before racking onto French oak for 3 months. (262470-3)

Vanessa Altmann from Switch Organic Wine - Top 12 finalist in Young Gun of Wine 2017Grown in Langhorne Creek, South Australia this wine shows bright fruit characters of cherry and raspberry, with soft gentle tannins. The wine has a delicious texture that finishes with a hint of earth typical of the region, and while Merlot has often been used for blending this wine reminds me of some of the best Pinot’s I’ve tasted, an elegant example of Merlot as a varietal. Picked during March 2017 the bunches were de-stemmed and crushed to allow fermentation on skins for around seven days, following pressing the wine was steeped in a small amount of Cabernet Sauvignon skins for around four days to build complexity and palate weight, while still remaining true to Merlot style.
