Long sunshine hours ensure fruit ripens fully and low relative humidity results in little incidence of disease. WINEMAKING This wine is a blend of Cabernet Sauvignon and Merlot grapes. The reason this blend works so well is that the two varieties compliment each other allowing a fuller flavoured wine with an all round mouth feel.This approachable, full-flavoured wine derives from fruit sourced from our various dry and irrigated vineyards and was harvested at night. The grapes were fermented at cool temperatures for a period of 5-7 days. This allows the fruit flavours to be nurtured and entables retention of varietal characteristics. Fruit is hand-picked quite early (around 13° Baume) and placed onto 10kg drying crates. The grapes are left to dry in our temperature and humidity controlled sheds for approximately six weeks. This follows the traditional Amarone techniques, resulting in a 30% loss in bunch weight. After drying, the wine is fermented on skins for two weeks and then is left for a further three weeks before pressing. This extended time on skins actually helps to soften the wine as the small, aggressive tannins are bound up in the process leaving only larger, silky tannins in the wine. The wine is then stored in oak barrels for ten months before careful barrel selection precedes blending and bottling. (268555-18)

2017 was an incredible year in terms of weather, quantity and quality of all types of fruit. Vintage threatened to finish early, before a cool damp spell gave way to an Indian summer, which extended the season and improved the quality and flavour of subsequent wine. Vineyards Sourced from selected Cabernet Sauvignon vineyards located in the premium growing area of Barossa Valley. Winemaking Fruit was fermented on skins for seven days. In the not so distant past inland Australia once shimmered in the scorching midday sun. Vast tracts of land were covered with a sea of grey-green foliage from the many types of saltbush plants. Saltbush derives its name from the salt that the plant retains in its leaves. Much of that land is now cleared for agricultural and horticulture including vineyards.The beauty of saltbush is that the plant is incredibly salt tolerant. They live for years and survive through all seasons throughout the year and it doesn't matter whether you get 50 points of rain in January or July, they will thrive.Herds of wild herbivores would move into a stand of saltbush and defoliate the plants as they consumed the leaves, then they moved on. In more recent times saltbush sustained the herds of introduced cattle and sheep in particular. The sheep has become an Australian icon and indeed the country, for a time, rode on the sheep’s back. Images spring to mind of Australia’s historic pastoral characters such as “Saltbush Bill” come into mind and the legend of Sir Sydney Kidman. (270745-6)

This Cabernet Sauvignon was selected at vintage from our family property at Glen Devlin on the River Murray. These mature vines are an average of 40 years on limestone which provides fruit intensity and varietal expression. The 2019 Riverland vintage endured hot, dry conditions of over 35 for 48 days resulting in lower than average yields with minimal disease risk, with concentrated flavours and richness. WINEMAKING The richness of the fruit in its natural state meant that minimal intervention was required in the winery. Harvest at optimum timing capturing full fruit potential. Fermented on skins for 10 days and carefully monitored to allow a fermenting regime of 24 to 28 degrees. Seasoned, house select French oak is used in the maturation of this smooth well-balanced Cabernet. (270176-7)

Vintage

2018 vintage was labelled an amazing vintage, with superb conditions and fruit of outstanding quality was harvested. A Cold Winter delivering a good dormancy. The yields were moderate, and the slow cool ripening was very even, delivering fruit with fine tannins and strong varietal flavours. Producing grapes of outstanding quality with good colour, balanced tannins and good fruit weight. With Shiraz & Cabernet Sauvignon showing the following characteristics; deep dark colour, ripe fruit and excellent structure. Vineyards This Cabernet Sauvignon is sourced from blocks surrounding the winery where our ripe grapes slowly ripen each season. Winemaking Fruit was fermented to dryness on skins. Following pressing, clarification and blending, the wine was matured in French and American oak hogsheads for 12 months prior to bottling.He likes to know what’s going on, this little Tom of ours. He’s always into everything, come sun or showers. He wants to know what’s round the bend, and what’s beyond that path. Peeping Tom checks the vines, he tests the soil, he leaves no rock unturned. WINEMAKING TECHNIQUES

Grapes are picked on both colour and flavour development. Picked at night to enable a cold onset to fermentation. Once crushed they are then fermented for 7-10 days at around 20 degrees, in small batches using neutral yeast, to allow regional fruit expression. The ferment is then pressed using an airbag press. A soft pressing is used, so we do not extract the bitter pressing is used, tannin, producing a fruit driven style of wine. After we have pressed the wine, it is allowed to go through natural malolactic fermentation. (269054-11)

Style

Our maritime vineyard location produces elegant, fragrant, medium-bodied wines with taut, firm tannins and expressive acidity. A classic Bordeaux blend of Cabernet Sauvignon, Cabernet Franc and Petit Verdot. Vintage 2018 was a fine growing season, with warm days balanced by consistently cool nights. It was a relatively dry season with grapes ripening a touch earlier than usual. The first Cabernet Sauvignon was harvested in the middle of February and the last coming in the first week of March. Weather conditions prior to harvest were also mostly dry, ensuring perfectly healthy fruit. Source This blend comes from Vasarelli’s Currency Creek Vineyard. Our viticulturalist insists on perfectly ripe, healthy grapes, low yields and harvesting at precisely the right time. Vinification Harvested in the cool of the early morning to preserve fruit structure. Extended time on skins pre and post ferment to allow gentle extraction. (270356-2)

History

The “S” depicted on the front label represents the colours of vibrant and fertile soil found in South Australia’s Langhorne Creek wine region. Famous around the world, South Australia produces superb red wines and our Sheppards Lane Cabernet Sauvignon is no exception. Region Langhorne Creek has a cool maritime climate, notably cooler than McLaren Vale and the Barossa. This is due to a wind known as the Lake Doctor coming off Lake Alexandrina travelling across the Antarctic and Southern Ocean to the Langhorne Creek vines. Soil throughout the region is predominantly deep, alluvial sandy loams, with patches of black, self-mulching clays. Vintage The 2018 Langhorne Creek vintage was excellent. Winter had above average rainfall, which reduced as the spring months wore on. Summer was reasonably dry and hot, with a couple of downpours helping canopy maintenance. Temperatures were warmer than average, however the summer breeze provided cool nights allowing flavour development. Cabernet Sauvignon was particularly strong, with moderate yields and excellent quality. (268368-5)

Grape varieties

- 92% Cabernet Sauvignon, 5% Petit Verdot, 2% Merlot Viticulture - Trained onto two wire vertical trellises with both wires mechanically pruned back to 2 buds. The canopy is managed through reduced water to restrict its vigour and increase both colour and flavour intensity. Vinification - After night harvesting the Cabernet Sauvignon grapes were crushed separately into static fermenters and inoculated with CSM yeast. Controlled fermentation occurred over seven days, commencing at 24°C reducing to 20°C. Gentle Pump-overs occurred three to four times daily to maximise the extraction of colour whilst still retaining a soft juicy palate structure. Pump-overs were reduced to twice daily towards the end of fermentation to minimise seed tannin extraction. To avoid any harsh tannins and bitterness only free run and first pressings were used in this blend. After pressing the wines were settled before racking onto French oak for 3 months. (271633-2)

History

Swiggit & Co. was formed by a group of winemakers who believe it’s important to make delicious wine to enjoy every day. Vintage The Swiggit & Co. Cabernet is a majority blend of Langhorne Creek 80% and Fleurieu 20%.The 2018 Langhorne Creek vintage was excellent. Winter had above average rainfall, which reduced as the spring months wore on. Summer was reasonably dry and hot, with a couple of downpours helping canopy maintenance. Temperatures were warmer than average, however the summer breeze provided cool nights allowing flavour development. Cabernet Sauvignon was particularly strong, with moderate yields and excellent quality.The Fleurieu also had an excellent vintage, good rainfall and mild conditions led to near perfect ripening conditions and great fruit flavour.
