Fruit is hand-picked quite early (around 13° Baume) and placed onto 10kg drying crates. The grapes are left to dry in our temperature and humidity controlled sheds for approximately six weeks. This follows the traditional Amarone techniques, resulting in a 30% loss in bunch weight. After drying, the wine is fermented on skins for two weeks and then is left for a further three weeks before pressing. This extended time on skins actually helps to soften the wine as the small, aggressive tannins are bound up in the process leaving only larger, silky tannins in the wine. The wine is then stored in oak barrels for ten months before careful barrel selection precedes blending and bottling. (268555-20)

VINEYARD INFORMATION

Like the G.A.M. Shiraz, the fruit for Savitar comes from the Lopresti vineyard, and more specifically the Chinese Block, which is located at the southern end of McLaren Vale, about 4km east of the coastal town of Port Willunga. The Savitar grapes come from one tiny section of this block: a particularly unforgiving, rocky patch of soil in the north eastern corner. Here, the vines are naturally pushed very hard, producing low yields of fruit. The berries are tiny but well-structured and packed full of flavour. WINEMAKING Each parcel of fruit for Savitar is fermented on skins for fifteen days. This slightly longer time on skins ensures a tighter overall structure setting up the framework for a wine built for ageing. Following fermentation, the wine is pressed, and transferred to oak barrels where it remains on light lees for approximately 18 months before it is carefully selected for the final blend. The sixteenth bottling of the Wade Block 2 from McLaren Flat. Grown in deep sand, this is an amazing vineyard in that it is nearing 20 years old, but planted with cuttings sourced from a very old local vineyard and grown on own roots. Again, very distinctive and complex, and more than qualifies for the ‘Single Vineyard’ label. An excellent and abundant vintage for McLaren Vale. 2015 saw minimal winter rains followed by a warm dry spring meant a low disease pressure. In early February, one rain event dumped twice the monthly average over a few days. Ripening proceeded with no water stress and excellent fruit condition.

Sourced from our estate Malpas Road Vineyard, planted in 1991 on land which was originally referred to as ‘Bay of Biscay’. This is an obvious reference to the relatively infertile cracking, grey-black soil upon which our hand-tended Shiraz patch does its work. The fissures which occur as the black soil cracks apart, sever surplus root structure; a process which naturally lessens vigour and enhances ultimate grape quality. Other fruit parcels were sourced from the slightly higher elevated vines of the Penny’s Hill Vineyard. Detailed canopy management, judicious irrigation and passionate viticultural practices in both these high class vineyards contribute to this outstanding Shiraz.

Mclaren Vale Shiraz is inherently suited to the grey label style, rich, plush and powerful, yet with an approachability that provides sheer enjoyment throughout its evolution over time in bottle.Grey Label Shiraz was sourced from vineyards ranging in altitudes from about 50m near the coast to 200m where McLaren Vale merges with the Adelaide Hills, bringing complexity and layers of interest to the final wine. The region mostly spans two basins of ancient bedrock layered with sediments laid down by advances and retreats of the sea over the past 45 million years. Soil types vary from sands, yellow clays, and red and black loams through to ironstone.Individual vineyard batches were fermented in small open-top fermenters for 5 to 10 days. Plunging and gentle irrigation were used to work the cap and optimise flavour, colour and tannin extraction, providing for concentration and depth of fruit flavour, while keeping tannins plush, hallmarks of the Grey Label style. Select batches completed fermentation in barrel, contributing mid-palate texture, while others finished fermentation on skins, providing structural length and focus.
