Viticulture

- Trained onto two wire vertical trellises with both wires mechanically pruned back to 2 buds. The canopy is managed through reduced water to restrict its vigour and increase both colour and flavour intensity. Vinification - After night harvesting the Merlot grapes were crushed into static fermenters and inoculated with AWRI yeast. Controlled fermentation occurred over six days, commencing at 24°C reducing to 20°C. Gentle Pump-overs occurred four times daily to maximise the extraction of colour whilst still retaining a soft juicy palate structure. Pump-overs were reduced to twice daily towards the end of fermentation to minimise seed tannin extraction. To avoid any harsh tannins and bitterness only free run and first pressings were used in this blend. After pressing the wines were settled before racking onto French oak for 3 months. (262470-3)

Vanessa Altmann from Switch Organic Wine - Top 12 finalist in Young Gun of Wine 2017Grown in Langhorne Creek, South Australia this wine shows bright fruit characters of cherry and raspberry, with soft gentle tannins. The wine has a delicious texture that finishes with a hint of earth typical of the region, and while Merlot has often been used for blending this wine reminds me of some of the best Pinot’s I’ve tasted, an elegant example of Merlot as a varietal. Picked during March 2017 the bunches were de-stemmed and crushed to allow fermentation on skins for around seven days, following pressing the wine was steeped in a small amount of Cabernet Sauvignon skins for around four days to build complexity and palate weight, while still remaining true to Merlot style. La Re´sistance! takes up the fight for the traditional French varieties of the Barossa and pitches gnarly old vine GRENACHE, SYRAH & MOURVE`DRE into defence against the invading foreign marauders. Viticulture - Grenache makes up 55% of this wine, delivering a Grenache-centric GSM, with elegant Syrah (33%) and spicy Mourve`dre (12%) adding tell-tale definition and structure. After a comprehensive search of cool climate regions, we selected a rugged rocky hilltop to plant our high altitude vineyard. The picturesque Heritage listed, Kuitpo Hills Vineyard was established in 1985, covering 16 hectares of closely planted, low yielding vines, grown in shallow dark grey/ brown loam, interspersed with quartzite and ironstone pebbles, over Kaolin yellow clay.Using compose, humates, microbes and nitrogen rich cover crops, we have embraced biological farming and sustainable practice. Winemaking

- Vine-dried grapes from our estate block 46, were fermented into concentrated flavour and richness. The fruit started to bag and pucker, created integrated fruit sugars, acid and tannins,. It was thenpassed back over already fermented Shiraz. The result is full-bodied complexity, layered with intriguing characters for a well balanced and lingering palate.1838 was the year Walter Thomson, with wife Jane, arrived in Australia and established a winemaking tradition. Faithful to his approach, our estate grown parcels are carefully tended by our vignerons to create wines of greatintensity.Double Pass Shiraz is created in the blending of two parcels of estate grown fruit. Vine dried grapes, which have richly textured and powerful complexity are fermented and then blended with already fermented estateShiraz to create the Double Pass. Ripe blackberry fruits and silky tannins are alive with richness. Best served with sauce-laden meats and dishes with abundant flavours. (262825-1)

The 2014 growing season was one of the wackiest in living memory! Following the low yielding 2013 vintage the season started well, but the first threat came from unseasonal late frosts. Summer was the hottest on record with 13 days recording a maximum of over 40ºC. During this period the devastating Eden Valley bushfire ignited on 17 January adjacent the Eden Valley Township, but thankfully (for us), the winds took it in an opposite direction. The hottest ever summer was followed by the wettest day since 1969 with more than 100 mm of rain falling on Valentine’s Day. Whilst some rain would have been welcome, too much of a good thing caused further loss of crop through splitting of fruit. Harvest was then on in earnest beginning with some Riesling blocks on 26 February and finishing earlier than usual with Cabernet and Shiraz on 6 April. A rollercoaster year that ultimately produced good fruit, but very low yields. (260473-1)
