Quartier means neighbourhood in French and the Quartier varietals are a celebration of diverse terroirs on the Mornington Peninsula. The fruit for this wine is sourced from a neighbouring vineyard in Balnarring.The fruit was whole bunch pressed and fermentation commenced spontaneously with ambient yeasts in entirely old French oak barriques. Once dry, the wine was left sur lie for several months prior to bottling. The wine was bottled without fining and with minimal filtration.

Illusory is the word.It is dry and yet the nose is generous, the palate is plump and rich. Elegant, sculptured and sophisticated. I’ve just had a glass with a slice of white vein sheep cheese from our neighbours in Neudorf Road – Thorvald. The wine supports and caresses the little salty, mould notes. It is a simple match but brilliant.Wild yeast ferment offers fleshiness and total drinkability. We do feel Pinot Gris can be overlooked because of an undefined snobbishness. It is a fine wine and revered in Alsace.Earlier this year the Neudorf Moutere Pinot Gris 2017 was one of only four Pinot Gris selected for the Fine Wines of New Zealand with the six Master of Wines commenting: “Distinctive and delicious wine with a focussed and immediate varietal core of aromas of lemon, lanolin and a mineral flint note. On the palate even, balanced, lengthy and pristine.”Interesting they used the word lanolin – a note often found in sheep’s cheese. It all makes sense.

Darren De Bortoli created Noble One at our family winery in 1982, to this day it is still one of the most awardedwines in history. More than three decades after this pioneering Botrytis Semillon took the world by storm,internationally acclaimed Noble One remains the benchmark of Australian ‘Botrytis’ dessert winemaking.Vineyards include the Chauncy block of Semillon, which was the last vineyard of Semillon for Botrytis that Deen De Bortoli planted before his passing. Also the Cercone block of Botrytis Semillon, which is one of the original blocks used for Noble One.Harvest took place in May following an excellent growing season with rain during Summer initiating the Botrytis in the vineyard but a dry March allowed the fruit to hold status quo in Botrytis development. Showers during April along with some foggy mornings provided ideal conditions for the Botrytis infection to escalate until the combination of flavour and sweetness were most favourable for harvest to begin.

Viticulture and Winemaking

The 2018 vintage will be remembered as one of the trickiest on record, with cool days in February and March and rain coming just before and during harvest. Sugar levels were down in the grapes which prolonged the ripening season and pushed harvest dates back by about seven days compared to normal. Fortunately, Toi Toi dodged the rain showers and harvested our grapes in the cool of the early morning, in very good conditions. We picked the grapes when the flavours were at optimum, to ensure we preserved the fruit flavours in the wine. We used a select de-stemmer harvester to softly handle the fruit. Once pressed off skins, the juice was then fermented at low temperatures in stainless steel tanks with selected yeast strains to preserve the inherent delicate fruit flavours. Following fermentation, the wine was aged on light yeast lees to increase palate weight and complexity before it was bottled for enjoyment.
