The Central Otago High Country of New Zealand is over-run with rabbits. Sheep and rabbits coexisted on the land for some time but the sheep couldn't keep up with the nocturnal activity of the rabbits. In the end they were hopelessly outnumbered and driven off the land- they were last seen heading north. The owner of the Rabbit Ranch - Mr. MacGregor, tried unsuccessfully to reduce the rabbit population by selling rabbit pies. Eventually he decided to plant some vines and make a decent Pinot Noir to go with all the rabbit pie he was eating.

Planted within our Lochar stony gravels on the top terrace above the winery and our very shallow sandy loam soils of block 7, 4 and 3. The grapes were gently pressed and settled overnight before racking into a combination of fermentation vessels. Some parcels fermented in tank with selected yeasts and 26% fermented naturally in oak barrelsranging from 2280L to 228L. The wine was aged on light fluffy lees for 5 months.

Quartz Reef Pinot Noir 2016 (6 x 750mL), Central Otago, NZ.

Lot No: 0029-2475774

Hand-picked on the 23rd March and 4th April. Each clone was small batch vinified with a small percentage of whole cluster per ferment. Cold Soaked for up to 7 days before indigenous yeast fermentation kicked in. Gentleplunging each day, followed by post maceration of up to 11 days to ensure optimum fruit and tannin balance. Total time on skin; 23 days. Drained directly into selected French oak barriques (28% new) where the wine aged for 12 months during which wild malolactic fermentation occurs.The winemaking was very much in keeping with the traditional practices of the Old World. The winemaker, Rudi Bauer, has combined these techniques, and his own personal understanding, to create this wine. (260156-1)
