Winemaking

- Premium parcels of Merlot fruit were fermented in rotary and static fermenters. Followingfermentation on skins for seven to ten days, they were gently pressed. The wine was matured on French oak for 6 months before blending and bottling, the resulting wine has excellent depth of colour, richness and complexity. Vintage - The wet spring followed by a mild summer lead to a later and compressed harvest for all varieties this year. Our vineyard and winemaking teams worked tirelessly during vintage 2017 to ensureall varieties were harvested at optimal flavour development, producing elegant wines with lower alcohol levels which we are sure will delight our consumers. Viticulture

- Trained onto two wire vertical trellises with both wires mechanically pruned back to 2 buds. The canopy is managed through reduced water to restrict its vigour and increase both colour and flavour intensity. Vinification - After night harvesting the Merlot grapes were crushed into static fermenters and inoculated with AWRI yeast. Controlled fermentation occurred over six days, commencing at 24°C reducing to 20°C. Gentle Pump-overs occurred four times daily to maximise the extraction of colour whilst still retaining a soft juicy palate structure. Pump-overs were reduced to twice daily towards the end of fermentation to minimise seed tannin extraction. To avoid any harsh tannins and bitterness only free run and first pressings were used in this blend. After pressing the wines were settled before racking onto French oak for 3 months. (264168-3)

Vanessa Altmann from Switch Organic Wine - Top 12 finalist in Young Gun of Wine 2017Grown in Langhorne Creek, South Australia this wine shows bright fruit characters of cherry and raspberry, with soft gentle tannins. The wine has a delicious texture that finishes with a hint of earth typical of the region, and while Merlot has often been used for blending this wine reminds me of some of the best Pinot’s I’ve tasted, an elegant example of Merlot as a varietal. Picked during March 2017 the bunches were de-stemmed and crushed to allow fermentation on skins for around seven days, following pressing the wine was steeped in a small amount of Cabernet Sauvignon skins for around four days to build complexity and palate weight, while still remaining true to Merlot style. Grenache makes up 55% of this wine, delivering a Grenache-centric GSM, with elegant Syrah (33%) and spicy Mourvèdre (12%) adding tell-tale definition and structure. The majority of the Grenache is from an old cool Williamstown vineyard, on the border of the Adelaide Hills, which is blended with Grenache from a special Krondorf Road parcel. Early harvest Syrah is from a 69 year old Ebenezer vineyard and from the Heinrich vineyard in the Lyndoch foothills, which unites with the lovely blue-fruit characters of Syrah from a small Northern Eden Valley vineyard on the outskirts of Angaston. The remainder of the blend is powerful, spicy Mourvèdre. This is definitely a Grenache-driven GSM! Subtle seasoned oak and caramel lead to a deep-fruited, dark cherry and strawberry palate with supple fine-grain tannin. Regions

The King Valley is one of Australia’s most exciting and emerging wine regions. Home to the most picturesque and unspoilt valley in Australia, King Valley benefits from a cool climate with extremely varied terrain, that ranges from snow-capped Alps to sun baked fields. The Season The 2016 growing season was basically a dry, warm vintage. Yields were moderate with strong agreement on the vibrant aromas and intense flavours in white varieties. Time will define the standouts of the vintage, but the early indication is that the Rosato has great intensity of aromas and flavours complemented by a crunchy acid core. Winemaking The fruit for the 2016 Rosato was picked in early March at 12.0° baumé. The grapes were picked in the early morning, destemmed and then crushed to press. They were left for three hours on skins in the press to extract colour and tannin before being pressed off skins. Once in tank, fermentation with some solids at 12.0°C ferment temperature was completed slowly over 6 weeks. This allowed retainment of fresh aromas and flavours while providing texture and mouthfeel. The wine was left on yeast lees with weekly stirring to protect the freshness of the wine and adding complexity. The wine was bottled under screw cap. (264317-3)

Situated on the banks of the Murray River, the Oxford Landing vineyard produces grapes perfect for fresh and varietal wines. The Oxford Landing Merlot vines have been strategically planted on well drained sites to produce vines with low vigour. Careful irrigation control and management of the vineyard promotes well balanced vine canopies, thereby maximising fruit quality. Winemaking/Viticulture Fermentation was carried out in a combination of static and rotary fermenters under warm temperature conditions for a period of 6 days. This creates balance between extracting the appropriate tannins for wine structure, and retaining fruit drive and aromatics in the final blend. The wine is stored at 6°C post fermentation to retain natural colour and aromatics of the variety.Winemaker’s Comments Growing conditions remained warm and dry and along with controlled irrigation of the vines, this has allowed the healthy crop of grapes to ripen slowly and evenly. The Merlot harvest commenced in the last week of February, which is right on average, and proceeded for the next month in almost perfect conditions.

Vintage Conditions

The growing season was one of the wettest on record, replenishing the soil moisture content and setting the vines up very well. The wet conditions were capped off by a cooler than average spring and early summer. Temperatures normalized at the start of February, with the ensuing long, cool ripening period resulting in lovely fruit flavours and natural acidity. Viticulture/ Winemaking Our Smith’s vineyard is home to some of the most exciting clones of Merlot in Australia; the Argentinean sourced 8R and Italian Q45-14. Planted in 2003 we are starting to see the fruit mature beautifully. The use of these clones combined with carefully considered viticulture and winemaking practices are the foundation of this special wine. A large portion of this wine is created by fermenting “berries in the barrel”. Three tonnes of handpicked Merlot was destemmed into French barriques without crushing the berries. Whole berry fermentation minimises the tannin extraction and creates a style of Merlot that is powerful yet generous and flavoursome without harsh tannins.Ancient and secluded, Wrattonbully is one of Australia’s most exciting viticultural discoveries of recent times. The Orvieto DOC appellation received official recognition in the 1971 and, over the past forty years, has experienced an extraordinary growth both in terms of volume of production and of overall quality levels. Winemaker Comments

Firstly, the fruit is sourced from two blocks in the Barossa Valley. Tony Brooks’ Gomersal vineyard, planted on rich, red brown earth over limestone gives the wine depth and length. Kevin Burgemeister’s Penrice vineyard sits on brown, sandy loam giving the wine perfume and freshness. The second region is the Riverland, this adds brightness and vibrancy to the wine. Finally our Wrattonbully vineyards, from Terra Rossa country, red sandy loam over limestone, gives the wine a powerful depth of flavour coupled with a mineral texture.Once picked, the grapes are crushed and left in contact with their skins for between one and three hours to obtain the desired colour. The juice is then run off the skins into a stainless steel tank to undergo wild fermentation.At Yalumba we believe that one good wine leads to another. Bodega Catena have long believed that every wine begins in the vineyard, pioneering a research project into the microclimates of Mendoza. Through the planting of select clones on various blocks, Bodega Catena were able to identify the ideal locations. Sites which are just a few kilometers apart can have vast differences in altitude and possess markedly different microclimates. The same varietal and even the same clone, can exhibit distinct aromatic and flavour profiles. All vines are all managed by hand and are trained to produce extremely low yields. This wines are made in very limited quantities, fruit is micro fermented in new French oak barriques and treated to an extended ageing in new French oak.

Vinification

Whole bunch pressing, wild ferment in new French oak have come together in spectacular fashion. The wine was fermented in 30% new French oak and the balance older, from a variety of cooperages. Winemakers Comments The Indigo property has different soils, aspect, clones and vine age, but it is another great example of what this region can do for Chardonnay. We have minimum winemaker input to let the regional characteristics shine through.Sufficient winter rainfall in 2017 saw the vines off to a good bud burst and then 55mm of rain in early December was very welcome. Particularly as temperatures had stared to climb with highs of 34C and then 35C in December being reached. January 2018 saw a top temperature of 40.7C tempered with a much needed 70mm of rain towards the of January. Harvest progressed under clear blue skies.

The King Valley is one of Australia’s most exciting, emerging wine regions. It is located in North East Victoria – approximately three hours North of Melbourne and seven hours South of Sydney. Home to the most picturesque and unspoilt valley in Australia, King Valley benefits from a cool climate with extremely varied terrain, that ranges from snow-capped Alps to sun baked fields.The growing season was a return to gentle, mild and cool conditions. Cool nights and mild days extended the growing season while retaining natural acidity. The fruit quantity was balanced and fruit quality was exceptional,producing vibrant aromas and intense flavours in the white varieties. Overall, a classic vintage producing excellent white and sparkling wines.The fruit for the 2017 Valley Blend was picked between 9th March and the 30th March at low baumé ripeness. The grapes were picked in the early morning, pressed off skins into tank for fermentation with high solids to provide complexity and texture while still retaining fresh flavours. Once in tank, fermentation with high solids content at a 14.0°C ferment temperature was completed slowly over 4 weeks. This allowed retainment of fresh aromas and flavours while providing creamy texture and mouthfeel. The wine was left on yeast lees with weekly stirring to protect the freshness of the wine and adding further layers of textural complexity. The wine was bottled under screw cap. (264317-1)

Vinification

- Due to the longer, slow ripening season in 2017, parcels of Chardonnay and Semillon grapes were harvested early for citrusy characters, and some riper patches displaying more intense stone fruit characters were harvested later in the season. Several different yeast strains were used to ferment different parcels of fruit which contributed to a variety of fruit and savoury nuances. One parcel was fermented with wild yeast and underwent malolactic fermentation, contributing to some subtle nutty flavours in the final blend. (262725-1)
