Winemaking

Following pressing the juice was clarified keeping some juice solids then fermented at cooler temperatures to retain aromatics. Post ferment the wine was left on its yeast lees and stirred fortnightly for 6 months resulting in the creamy, soft mouthfeel of the wine. Once this process was complete, the wine was blended, then clarified & stabilised for bottling.Our range of wines are crafted from 5 different grape varieties that blend together in perfect harmony, much like the close and lifelong interaction between you and your closest five friends. The Five Friends relationship between our Semillon, Sauvignon Blanc, Chardonnay, Cabernet and Shiraz grapes is formed in the cool climate and abundant sunshine of our Vineyard Estate from vines that yield the ideal blend of generous flavour and supple texture. Viticulture

- Trained onto two wire vertical trellises with both wires mechanically pruned back to 2 buds. The canopy is managed through reduced water to restrict its vigour and increase flavour intensity. Vinification - After night harvesting (in order to retain freshness and varietal flavour) the grapes were crushed into airbag presses and gently pressed in top two fractions, free run and –pressings. Both fractions are fined to minimise any phenolic bitterness before being clarified. The free run is then inoculated with an aromatic yeast strain designed to enhance the varietal characters of the fruit as well as build texture in to the wine during fermentation. Controlled fermentation occurred over 10-12 days, commencing at 16°C and increasing toward the end of ferment to approximately 20°C. Post ferment the wine is stirred on lees to create texture and mid palate mouth feel. Once the palate of the wine is balanced between fresh acidity and texture the wine is clarified. Post clarification the wine was aged on French oak alternatives before being stabilised. The wine is then filtered and bottled. (265704-4)

The moderate summer and temperate autumn were ideal for producing quality Chardonnay fruit.We selected fruit from our Homestead and Johnston Road blocks, plus fourth generation growers on McMurtrie Road and Badgers Road near Kuitpo in the Adelaide Hills. The cool climate Adelaide Hills Fruit complemented the richer McLaren Vale component. Each vineyard was picked at differing Baume levels to guarantee a spectrum of flavours.A portion of each vineyard was barrel fermented in new Tonnellerie Quintessence French Oak, using 7 different yeast strains, including Wild Yeast. The fruit for this wine was grown especially for Tertini Wines in the Tumbarumba region of New South Wales. The vineyard is situated at an altitude of 650m and has basalt volcanic soils. This vineyard has a long slow ripening period from its cool nights to ensure our fruit is grown with the richness, aromatic development and balance that this region is renowned for. Vintage & Winemaking Notes - An early budburst and early strong growth was followed by warm temperatures through late Spring and early Summer resulting in an excellent flowering and fruit set. A wetter than usual Spring/Summer led onto a dry Autumn which was ideal to keep disease pressures low as the fruit ripened. Vineyard

The grapes for this wine were sourced from Angove’s own organically certified Nanya vineyard at Paringa and certified growers in McLaren Vale.Despite a relatively dry winter, budburst was even and the timing was about on par with previous years; however, the dry soil caused many growers to water the vines earlier than normal. With dry conditions comes lack of disease pressure allowing our vineyard team to minimise the use of any mildew sprays. Dry conditions continued into January, with above average temperatures and a four day stretch in mid-January of above 40 degrees. With good canopies and careful irrigation this did not do any damage to the fruit unlike previous years. Winemaking Picked in the cool of dawn the grapes as cold as possible the grapes were transported to the winery and pressed using modern membrane tank presses. The juice was then cold settled and carefully racked to cooled fermentation tanks where it was inoculated with selected yeasts. Temperature controlled fermentation was followed by a short period on oak prior to blending and bottling. (267711-1)

The fruit was pressed into stainless steel tanks. A combination of tank and barrel ferments using a range of yeast strains including PDM, VL1 and Maurivin “Fusion”. This single vineyard has become one of Australia’s most respected cool climate Sauvignon Blanc and Chardonnay producers. Our parcels of fruit receive high input viticulture, hand-pruning, shoot thinning, leaf plucking, bunch thinning, multiple wire-lifts, low cropping levels and hand picking. The Vineyard is under the ownership of Matthew Hill-Smith and his daughter Christobel, representing seven generations of continuous Hill-Smith family winemaking since 1849. C3 refers to the three clones of chardonnay used in this blend, Bernard 95, Mendoza and Bernard 76. Handpicked and chilled overnight before whole bunch pressing. The parcels are then fermented with frequent yeast lees stirring in a mixture of old and new French barrels for approximately 11 months. Controlled winter watering and careful monitoring of vine stress levels was key to a successful crop. Temperatures tended to be cooler in Spring and early Summer which caused a slower start to the season, as temperatures began to rise in late Jan early Feb ripening moved along a little quicker and the team were grateful the vines had sufficient canopies to protect the fruit through to maturity. The reds from this vintage show excellent depth of colour and fabulous tannins, whilst the whites display a rich array of aromatics and bright fresh fruit flavours.The Fibonacci sequence reflects the growth spirals found in nature, just like the new tendrils on a grape vine that unravel each spring. The notion being ‘what you start with determines the end result’ which is of course the foundation of all great wines. Vintage Conditions

Good rain throughout winter and also in December. The trend for cooler summers continued with no maximum temperatures over 40 degrees. Reasonable rains during vintage which came in storms rather than daily misty showers which can cause problems with the grapes. Vineyard This year’s Vat 47 comes entirely from our Short Flat Vineyard, which has ideal sandy loam soils. The oldest blocks were planted in the late 1960s. Winemakers Notes The fruit was handpicked before immediately being 100% basket pressed. The juice was cold settled for two days before fermentation was initiated in stainless steel tanks, then the fermenting juice was transferred to French Oak barriques (20% new). The wine stayed in these barriques until October before it was blended and coarse filtered into bottle.

A cool fermentation (15 to 18 degrees) is undertaken in stainless steel tanks before maturation on lees for four months. A portion of the Adelaide Hills fruit is aged in two and three year old French oak to increase complexity and mouthfeel. Vintage Careful vineyard management is always required at the best of times but particularly in 2018 as early November frosts caused a reduction in yield across much of South Australia. The timing and result was okay from a ripening perspective and with a consistent and even temperature of the subsequent few months the fruit that remained developed beautifully with great bright flavours and fine, fresh acidity. Indeed 2018 is looking very good across all of the State of South Australia.

Vineyard

Sourced from three sites on the Forest Hill Vineyard. Block 8 and Block 9 planted in 1985 and Highbury Fields. Combination of Gin Gin clone and Bernard 76, 95 and 96. Winemaking Mostly hand-picked, chilled further before some parcels are hand sorted, whole-bunch pressed (Block 8 and Bernard clones) and others crushed before pressing into French oak barriques, hogsheads and puncheons (20% new & retaining high juice solids). Fermentation takes place at cool temperatures with 100% natural yeast. Light Batonage post primary fermentation with partial (minor) malo-lactic fermentation. After 9 months barrel maturation to achieve balance, the wine is bottled. Vintage Notes The 2018 growing season began early and with strong vigor spurred on by very good soil moisture from winter rains. The last major rain event was in September with 137mm falling. Summer was dry although with moderate day time temperatures and very few days exceeding 30°C. Little disease pressure and cool night time temperatures helped maintain natural acidity. Harvest dates were early across most varieties.
