- The vineyard is situated at over 200m (650 ft) above sea level on a cool site facing the Pyrenees. The cool nights and warm summers provide the perfect temperature range for ensuring a healthy maturation of the Chardonnay grape. Winemaking - The grapes are picked at night to preserve the grapes’ quality potential. After de-stemming, we collect the first press juice to obtain the best acid/fat balance. After a light settling, the wine ferments at 17/18 °C for around twenty days and will be aged on the fine lees from its fermentation for two months. Maturation - 100% stainless steel vat with bâtonnage (stirring of the lees). Soil - Clay-limestone soil made up of fine gravel. Serving - Wine to be drunk in the next 3 years. In 2001, the vagaries of the weather would have some consequences on the vineyard. It rained a lot during theWintery and in September, we had some sudden drop to temperatures. The consequences were a high concentration of acidity and sugar with a record level of alcohol. The Cabernet Sauvignon had a big potential despite a low extractability. The weather forecasts were not very enthusiastic three days prior the presumed date of the harvest but finally they took place under a sunny weather.The Merlot were very aromatic with a high concentration of alcohol. As for the Cabernet Sauvignon, the concentration in tannins was exceptional. The level of malic acid was high despite a very good maturation. The wines from the press were of high quality which had not been the case for many years. - Chardonnay, Pinor Noir Twice Fermented using the Charmat Method.Definition - What does Charmat Method mean? The process involves allowed primary fermentation to run its course, after which, the winemaker induces a secondary fermentation with a mixture of yeast and sugar and seals the wine in a stainless-steel tank to trap the CO2 inside (which makes the bubbles). How long the CO2 is trapped in the wine dictates how bubbly the final product will be – frizzante (slightly bubbly) is left for 20 days to three months; Cuvée and Prestige wines are left for up to six months. Once second fermentation is complete, the wine is filtered and fined to remove the lees and sediment. Another mixture of sugar and wine is added to preserve the bubbles; this final mixture dictates if the wine is called Brut, Demi-Sec or Sec. Finally, the Champagne is ready to be bottled under pressure. Sire De Baupre is one of the most popular wines of it’s kind from France, also this wine has been getting more popular over the past year.in the less expensive category for French Sparkling wines.
