Overview

Certified organic grapes were hand-picked, destemmed and fermented with wild yeast. The ferment was plunged by hand twice daily and remained on skins for 3 weeks prior to pressing. Aged in older French oak

barriques for 11 months, the wine was then assembled from select parcels, before being lightly filtered and bottled.

Winery Tasting Notes

A classic Pinot Noir displaying a complex nose of red berried fruits, reminiscent of cherries and raspberries. This medium-bodied red, has a supple palate and silky tannins, whilst the natural fermentation adds complexity. The finish is crisp and dry. Delicious on its’ own, or pairs well with wild game and roast vegetables.
