A single site of exceptional Pinot Noir was chosen to create this wine, hand harvested and very gently whole bunch pressed. Only the very finest of the juice was taken for 100% barrel fermentation in aged French oak, where the wine was matured for 9 months as the wine underwent malolactic fermentation to create the exceptional texture and creaminess we see today. Only the best barrels were then selected to create the final blend, and the complete wine was bottled, underwent secondary fermentation in bottle and aged on lees for 10 years delivering beauty and complexity.
