The fruit was harvested at 12.0 Be to retain high natural acidity, with the fruit was showing strong citrus and grapefruit characters, as well as some floral notes. The fruit wasx pressed to tank and allowed to settle for 24 hours and then racked to barrel (30% new French oak and 70% 1-4 year old). The wine underwent 100% natural fermentation, and 30% malolactic fermentation. The wine was matured in oak for 9 months prior to bottling.

Rebecca and Tim Duffy are well-loved Tasmanian vignerons, a dynamic duo of winemaker-viticulturist respectively. This wine sees wild fermentation for the estate chardonnay grapes, and settles into 20% new oak for its life pre-bottling. Always a solid offering from this outfit.

Easy to like this chardonnay. Shows some pulpy grapefruity tang amongst richer melon, ripe stone fruit and nougat oak characters. Lots of touchstones for those seeking ‘chardonnay 101’, with generosity yet freshness hand in hand. The oak does tend to lead the wine here, but the finish is refreshing despite the slippery cloying mid palate. A good drink, and was poured around to a bunch of friends after revealed from a tasting, with nobody leaving a glass with remnants.

Winery Tasting Notes

This is a refined and elegant cool climate Chardonnay. The nose displays aromas of citrus fruit, apricot kernel and white peach with spicy integrated oak, whilst the palate is fine and minerally.

Goes well with pork

The rich lusciousness of this Chardonnay matches really well with full flavoured pork, and there is enough acidity in the wine to cleans the palate after eating that delicious crackling!

Holm Oak is the labour of love of dynamic duo, Bec Duffy and her husband Tim Duffy. Since 2006 they have followed their dream of crafting delicious expressions of cool-climate Tasmanian wines. Bec is the winemaker and Tim is viticulturist. Their complementary skills provide a vision to produce delicious wines that reflect their home, Tasmania’s pristine Tamar Valley, and their own personalities – honest, down to earth, genuine and authentic.

Rebecca Duffy - Winemaker

Rebecca is a qualified winemaker with 20 years of experience including vintages in McLaren Vale, Coonawarra, Napa Valley and Western Australia. Prior to launching Holm Oak, she most recently worked as senior winemaker at Capel Vale Wines in WA. 

Tim Duffy - Viticulturalist

Tim is a third-generation grape grower and an agronomist with extensive viticultural experience. He was born and bred in Nyah, near Swan Hill in Victoria, and his family have a long and successful viticultural history.
