The Habitat Brut Cuvee This lively sparkler has lifted lemon and lime aromas. Green apples and citrus flavours are enhanced by zingy acidity and fine bubbles. Light and fresh, this wine finishes with just a hint of yeast. It is the ideal aperitif.Th e first juice of the vintage is reserved for the Habitat brut cuvée. Current release Habitat brut is always a cuvée of older and younger vintage wines so as to optimise both freshness and complexity

The Cumulus Estate Approach

In a world of virtual winemaking, Cumulus takes it back to the real deal, with a bud-to-bottle philosophy that gives us complete control over our distinctive high elevation style.

All our fruit is estate grown and watched over by people who know the individual personality of each section of hillside. Picking each block is timed to the hour. When you're dealing with fruit of this quality, yesterday was too early, tomorrow is too late. Whites are picked at night to keep the juice cold, so they don't start fermenting too early. Transport can damage fruit. No long, hot rides for our grapes. They're in our state of the art winery within an hour.

Our winemaking style is very much based on letting the fruit do the talking. Our characters are made in the vineyard, and we obsessively protect their quality at every step through the winemaking process. Nothing gets outsourced. The result is wine of an uncommon level of finesse, an approach that has met with acclaim by wine lovers across the world.

The Cumulus Estate

The 508-hectare Cumulus Wines Estate, named after the cumulus clouds so prevalent in the region, is at Molong near Orange. The Estate's surroundings are breathtakingly beautiful, surrounded by the rolling volcanic hills and lush farming land that give our fruit its elegance.

Estate grown wines demand that the fruit is treated with a maximum of respect and protection, and that's what we do at our ultra-modern winery at nearby Cudal. It's a benchmark example of winery design and engineering.

Its integrated features include minimal handling, precise temperature control and gentle extraction, giving our winemakers maximum quality control at every stage of the process. It has a 10,000 tonne vintage capacity, state-of-the-art fermentation and maturation capabilities.

It also has 8 million litres of wine storage capacity, mostly in a striking underground barrel hall carved into the area's volcanic stone. The barrel hall is also the setting for some spectacular tasting dinners.
