Parcels of fruit from selected vineyards were fermented in temperature controlled stainless steel for upto ten days to maximise colour and flavour extraction. After primary fermentation the wines were soft pressed and

underwent malolactic fermentation. Aged on French oak for a further six months before being blended and filtered prior to bottling.

The mild weather conditions during the lead up to harvest together with warm January temperatures were the perfect conditions for optimal flavour development across the white varieties. The odd burst of extreme heat resulted in an early start to vintage but as the harvest progressed these conditions moderated, extending the ripening period for the reds ensuring they too reached maturity with an ideal balance of sugar, acid, colour and flavour.

Winery Profile

Brand Profile Image

After nearly three decades of growing grapes for some of Australia’s best known wine brands, the Zilzie winery was built in 1999 with the first vintage released under the Zilzie name in 2000.

The increasingly popular and distinctive Selection 23 range was introduced in 2004, while 2008 saw the re-release of our Bulloak range.

2009 has seen the culmination of many years dedication to selective vineyard sourcing deliver the “REGIONAL COLLECTION” of Zilzie wines. We’ve combed Australia’s best known wine regions, specifically targeting the varieties they excel at, for exceptional grape parcels to produce these wines.

We’ve come a long way in 10 years, with our winery tripling in capacity, and our range growing from the humble beginnings of four varieties, to now include consumer favourites such as Pinot Grigio, Moscato and Rosé.

It’s not all about size, Zilzie is also recognised for its exceptional quality, having won 27 trophies in its short history and is the only winery from our region rated 4.5 stars by James Halliday in his 2009 Wine Companion.
