Overview

Grape Variety: 100% Sauvignon Blanc

Tasting Notes: On the nose exhibits intense and powerful herbaceous aromas with a lime edge. The palate is vibrant and lovely; the pungent fruit is complemented by juicy crisp acidity, finishing with fantastic intensity and length.

Vineyard: Cipreses Vineyard, Lo Abarca – San Antonio Valley, Chile

Age of the Vineyard: Vines were planted in 1999/beginning of 2000

Time of Harvest: Third week of April

Altitude: 60 and 120 metres above sea level l

Harvest Method: Handpicked grapes by soil profile. They try to harvest when the berries are crunchy and not too ripe.

Winemaking: Grapes are manually sorted by hand, leaving behind unwanted green materials. The must is cold macerated for 24 hours then gently pressed for 3 hours. The juice is chilled down to 5°C and then racked off the lees. It ferments at 12°-14°C with Anchor yeast for 3 weeks in stainless steel vats. 7% of the blend has been aged on French Oak with the lees for 7 months. No acid addition or fining products.
