Made in a Pinot Grigio style, grapes are selected when flavour is optimal and natural acidity remains high. This parcel was harvested in the cool of the evening and immediately crushed at the winery to minimise colour pick up from the pink grape skins. Juice was cold settled then racked with light solids for fermentation. Post ferment the wine was lees stirred in tank to encourage mouthfeel and complexity.

As we scratched around for a name for the first Shiraz Viognier, an obviously interested black chook stopped in its unplanned tracks, lingering, as only chooks do, just long enough for the penny to drop. For its trouble, we immortalised that single Black Chook, rationalising that it had come from a small white egg; just as our dark, inky, black Shiraz had been transformed by a tiny amount of fragrant white Viognier.
