Winery Tasting Notes

Highbury Fields Block 6, elevated hill site at ~240m.

Forest Hill, Mount Barker in the Great Southern Region. Extension of Forest Hill Vineyard. Ironstone gravel loams over clay.

Our Sauvignon Blanc was harvested during the cool hours of the nigh. Short period of skin contact in the press before being gently pressed, chilled and cold settled. A parcel of the free run juice was kept chilled on juice lees (very high solids) for stabulation prior to ferment. Cool fermentation in stainless steel tanks with cultured yeast. The wine was racked off yeast lees after a short period of lees contact and filtered before bottling.

The 2019 growing season in Mount Barker was dry but mild. It began with one of the driest winters on record and continued through to harvest with the exception of some good rainfall in August (169mm) and an important 48mm in November. Summer was again dry although with moderate day time temperatures and few days exceeding 30°C. Some welcome rain in March (24mm) helped maintain ripening in our red varieties. The mild temperatures meant harvest dates were generally a little later across most varieties especially the whites.

Bright straw with green hues. Lifted aromas of citrus juice, gooseberry & guava. textured palate with fresh citrus and subtle tropical flavours.
