Overview

The making of quality fortifieds is a great McWilliams winemaking tradition. The warm and dry conditions of Australia are ideal for making fortified wine; enabling all the varieties to ripen superbly and produce great richness of flavour.

Vinification and Maturation - Grapes were picked in February - March. The juice was then separated from the skins and fermented for several days until the desired residual sugar content was reached. A very neutral fortifying spirit was added to arrest fermentation. Majority of the wine was stored in small old oak for an average of nine months prior to blending with small amounts of Muscat Gordo Blanco for floral lift. The wine was then stabilized, filtered and bottled.
