The Estate Vineyard at Dixons Creek. Average vine age 28 years. Clones include MV6, 667 & a small portion of the little known clone MV4. Pinot Noir is planted on the cooler sites – the ones with southerly and eastern facing aspects.

Season

Mild dry growing season, timely spring rain. Slow ripening, terrific flavour development.

Tasting Note

Bright red fruits. Red cherry, wood spice and violets. Generous in character, plump and round in style. Supple, fine tannins.

Suggested Cuisine

Roast quail, pine mushrooms, thyme and polenta.

General Characteristics

Medium Dry / Medium bodied

Winemaking

The fruit was hand harvested and hand sorted. A combination of whole berry and whole bunch (10%) is tipped into open fermenters. 15-18 days of maceration and fermentation with wild yeast. Pressed, settled overnight and then filled to barrel by gravity. Allowed to mature for 9 months at 16°C in 225L French casks.

The wine will continue to develop complexity and interest with good cellaring for 4-6 years.

De Bortoli Wines is a third generation family wine company established by Vittorio and Giuseppina De Bortoli in 1928. The couple emigrated to Australia from Northern Italy, from mountain villages at the foothills of the Italian Alps, near the historic town of Asolo.

Their son, the energetic and dynamic Deen De Bortoli, (b 1936 – d 2003) expanded and consolidated the business created by his parents. Deen's children established De Bortoli's reputation for premium wine including icon dessert wine Noble One and the Yarra Valley wines.

Italian family values passed down from Vittorio remain core values, there is a culture of hard work, generosity of spirit and of sharing good food, good wine and good times with family and friends.
